今天上午大約十二時,我們來到百匯軒飲茶,無論哪方面的水準都大大提高。先說環境,非常光猛,而衛生方面亦很乾淨。我們點了下列的點心,每個都很有水準。白灼西生菜:生菜非常新鮮,精瑩剔透,吃下去很爽。百匯軒蝦餃皇:皮的厚度剛剛好,裏面的蝦在皮下若隱若現,吃下發現那蝦是原隻的巨大蝦球,非常好。鮮蝦菜苗餃:裏面的菜苗非常多,有著盆滿缽滿的感覺,加上精美的蝦球,簡直是完美的配搭。子薑牛肉球:很多酒樓的牛肉球都是用腐皮、冬菇或菜來做襯托,但是子薑真的少見,很有創意。子薑的酸甜跟牛肉的鮮渾在一體,感覺良好。黑松露野菌餃:濃郁的黑松露和野菌味,極之滿足,薄薄的皮裏蘊藏著大大小小的野菌,口感非常好。金珠鹹水角:一咬下去,卜卜聲四起,皮脆到不得了,裏面的餡非常豐富。鮮肉片皮蛋粥:粥感很綿,皮蛋多,肉片也挺大塊的,驚喜的是,裏面有些生菜!海皇雜錦窩麵:麵的幼度非常好,料足,湯多,一個字說完,惦!薑汁千層糕:一上檯,濃厚的薑味立刻升上來,滿足各位的嗅覺,彈牙的表面,薑汁滾落喉嚨,驅風,為這頓飯畫上完美的句號。…Read More

今天趁著一年最後一日,到灣仔合和中心的薈軒飲茶。這裏亦有部份食物令我驚喜。先講環境,由於樓底矮的關係,令到四周變得非常嘈吵,環境很擠迫,可惜這是不可能改變的。服務都良好,但是效率可再快一點。首先來的是白灼美國西生菜,生菜很清淡,而且熱,好。接著來的是皮蛋瘦肉粥,感覺很綿,非常濃厚的皮蛋香抒發出來,而且挺大碗,非常足夠。第三個要來的是香麻叉燒酥,那個皮都略脆的,伴著菠蘿的點綴,簡直完美。然後到這個薈軒招牌蝦餃皇,它說是皇,我預算它一定有一定的分量的,皮的厚度都很適中,蝦大大的,彈牙的,都算好,但它有部分的散的,下次可再做好點的。接著,馬拉糕,質地鬆軟,甜度適中,老少皆宜。鮮蝦菜苗餃,我覺得蝦和菜苗都是主角,但它卻忽略了菜苗,那是不行的。菜苗餃吃完,就到一碟蜆芥炸鯪魚球,皮脆,肉鮮,伴著蜆芥,造成完美配搭,若蜆多一點就更攀高一個層次。鵝肝醬鹹水角,我覺得這道菜挺有創意的,當然水準一般,脆,料多,都可以的。蒜蓉蒸鮮魷魚,略辣,但辣得來與蒜蓉配合,加上伴著粉絲,都是好的。輪到這個齋鹵味,酸度恰好,款式可再多一點。臘味糯米飯,這道菜其實是很考技巧,可惜它沒有,飯有點兒濕,完全不乾身,又沒有臘味的味道,太軟身,簡直是不合格,有待改進。其次就是燒汁木魚花茄子,都沒有燒汁的,怎可能的?最離譜的就那個芝麻糊,隨了沒有芝麻和甜味,吃下去時更是稀的,像喝水一樣,簡直遭塌了整頓飯,希望它可以自我檢討一下。整體來說都可再改善的,加油!…Read More

一行十幾人在平安夜到碗屋吃日本料理真是個好選擇。首先是幾碟的,三文魚、希靈魚、北寄貝、吞拿魚、甜蝦等都應有盡有,鮮甜又厚切,簡直令我回味無窮。接著來的就是福岡汁煮鮑魚,望著剛來的鮑魚,垂涎欲滴。吃下去時鮑汁和鮑魚一起湧入口中,鮮甜多汁,成功!燒銀鱈魚,聽來好像很容易煮,其實很難烹調得既嫩滑和新鮮的,而碗屋則做到了。串燒雞翼、串燒雞軟骨都能帶出它們濃厚的香味,好!到薄燒牛肉,鬆軟的牛肉加上適量的蔥和濃郁的肉汁在口中回盪,形成一種特別的感覺。然後到焗蠔,蠔炸起來雖然乾身,但內裏的蠔依然有著它的精華。我們亦點了海膽手卷,紫菜脆卜卜的,暖暖的飯和海膽溶為一體,簡直是成功中的成功。最後,一個富有芝麻味的黑芝麻雪糕作為這頓飯的完美句號。這頓事實上使我樂透,不同種類和美味的日式料理,真的可以是全港首冠。大家不防試下,一定使你愛上它。…Read More

昨天一家三口到錦江軒吃晚飯,又有一些的新驚喜。總括來說。味道是好的,當然可再改進。環境都挺好的,服務方面其實人是不足夠的。而衛生方面是清潔的。首先我們點了一碟松子苔條肉鬆炒飯,飯不太乾又不太濕,質地良好。然後就是一碟上海炒粗麵,那碟粗炒裏有冬菇絲,椰菜絲等,讓我吃完後回味無窮。重頭戲來了,就是招牌上海小籠包,濃郁的湯和肉在厚度適中的皮裏盪漾著,點一點鎮江醋吃下去時湯和醋爆發出來。爆發的強度就如美國黃石國家公園下的超級火山爆發岩漿的強度,讓它們混在一體,真厲害。後來吃下的北京水餃和鍋貼都有著同樣的效果,惦!還有吃了一碗的鱔糊湯拉麵,湯是清湯,與鱔糊濃郁的醬汁簡直就是天作之合,非常好。最後吃了家常餅,它很乾身,也帶有點脆,又不會很油膩,如可再加點蔥那就更錦上添花了。…Read More

利寶閣,對我來說是最惦的酒樓,一家又來飲茶,發現有部份食物進步了,但失望的是,有部份食物退步了。首先,是個娥姐蒸粉果,那塊粉皮薄得來,蒸得剛剛好,不會黏在一起。接著是醬煎腸粉,來的時候那石鍋和內裏的腸粉在卜卜地響,震撼了整間酒樓,吃下去時腸粉在我的嘴裏翻滾,漸漸滲透出醬的味道,再加上適量的甜醬和麻醬,簡直是一流。再來的是晶瑩鮮蝦蛟,又是那塊皮,晶瑩剔透,不愧有晶瑩鮮蝦蛟之稱,蝦和皮一起在我口中,那種感覺我都不知道怎樣形容。雞火海皇粒炒飯,飯、炒蛋絲、海鮮粒、雞粒一同呈現在眼前,吃完後鍋氣還留在我的嘴裏,而且飯亦炒得夠水份,不會乾澀澀的。最後,甜品,退步了,香芒忌廉卷,裏面的餡都好,但是外面的芒果皮差不多咬不下去了!除此之外,蓮蓉煎堆仔,那個殼子像塊鐵板一樣,找筷子也不能弄破它,還有殼子的顏色,簡直是別具一格的古銅色,為甚麼呢?不過,我希望下一次去可以有改進,你得的!…Read More
