娘娘的飯堂如大笨象的級數

作為一個繁忙的中環人,平常放工最早都要8/9點;放工食飯,我一個月會來「阿不」好幾次。我覺得自己唔算嘴叼,不過平常工作忙碌,有時間和機會特別上館子來祭五臟廟,當然會找好味道的館子吃飯。更當然要好食,我才會成為「他」經常的回頭客。我亦有帶過不下十多個不同的朋友,分別來吃午飯晚飯。她們全部的反應都跟我一樣,吃到停不了和沒有太多空間說話,食完再說的多的是,然後鼓掌或讚嘆:廚師的功力有多厲害多深厚,才能征服這些嘴叼的太太小姐朋友啊⋯⋯除非是上班日子的閒日午飯,否則我甚少叫套餐,午飯套餐的小碟烚菜,我經常無空食。亦不會因為無左而感覺落空。我會慳返啖氣。點解?因為老闆和廚房裡的大廚他們的手藝和經驗令我讚嘆,他們的餸菜:鑊氣夠,配搭適宜,簡單但好味道,厲害。我試過不同的多款菜式:甜酸珊瑚魚,生炒骨,黃金蝦,蝦子海參豆腐,鮑魚燜雞,三杯玉米雞,煎肉餅,柚子蝦球,欖角骨,三蔥爆石斑,碟碟都鑊氣滿滿,令人超級大飽口福,平常忙著吃主菜的料理,哪裡還有空間理會哪烚菜啊。不竟這裡不是酒樓,我對這裡的點心沒有太大期望,但我有位好朋友對「阿不」的點心料理感覺有驚喜,她可是位十分愛好吃點心的吃貨。但我卻十分喜歡「阿不」的各款小菜,各位要自己親身來試一試才會明白,甚麼是廚師的經驗、手藝和鑊氣 - 共冶一爐,令一個普通菜式變得不平凡;食物質素高,價錢相宜。而不只是靠賣相,用餐環境/情調,或評估服務素質來衡量這家館子的高低。「阿不」老闆用的食材也不是一般其他餐廳的普通級數。我曾經在大牌五星級酒店 (洲際/麗晶)工作過好幾年的餐飲部行政人員。 一般餐廳和酒店的  food cost 都不會太高比例,平常絕對會少過15%。但「阿不」的老闆唔同。我敢講,夠膽用䱽魚切件用來炒餸,那條魚一定要超級新鮮。你看到今晚我選的這碟萵筍炒䱽魚件,完全完整無缺的魚塊,說明這條魚有多新鮮啊。另外有一次我來吃晚飯,看到鄰槕的食客,是比我更中年更中產的高級食客,因為我看到在座有位老太太的衣著好高雅好講究,他們槕上有碟「幾倆牛肉配白蔥熟油」。平日盡量少吃牛如我,都幾乎想破戒。吶牛肉的新鮮和揉嫩的程度,實在令人垂延三尺。那檯食客當然讚不絕口,然後很快就把整碟牛肉清碟,當然也都超額完成那碟黑松露虎蝦炒蛋的任務。有食神可以品常美食是福氣,遇到有豐富經驗的老廚師更是難能可貴的緣份。我知道廚房裡的師傅個個都一把年紀,是屬於經驗老到,買少見少的級別。我會好好珍惜 在「阿不」品嚐到老闆和大廚師們的幸福美味日子。所以我才寫這篇文章,希望大家可以自己親自來品嚐一下。味覺可是一個非常個人主觀的課題啊!!! 煩請不要打臉啊 !😂真心感謝「阿不」的老闆和大廚們,在熱辣辣的廚房裡,努力砲製讓我們食客有口福的美味佳餚。你們出品的餸菜都很美味 ,令食客如我感到幸福,所以才會不斷回來,「阿不」的美味料理快留給我有家的味道。謝謝老闆!最後「食得是福」新一年 祈願大家 身體健康 日日有食神!🙏🙏🙏…Read More

This place I have visited for few years since I have known them, from Tsim Sha Tsui to Jordon. They provided reasonable price, fresh & quality seafood. We have ordered steam scallop, steam razor clam, shrimps with golden eggs (my favorite), cold cut lobster (my son’s favorite) & fresh oysters from west Africa & French - this is something you cannot miss. We have also ordered baked pork chop in tomato sauce with rice & baked lobster with e-fu noodles. We all enjoyed it so much!
