鮨文既名氣一直都有聽講,難得老婆話請食飯又想食 Omakase,話訂左試下鮨文既lunch,心中都有唔少既期待。 環境就係傳統壽司舖。我地分別叫左兩個唔同既餐,我既$980 同老婆既$1380,下圖係$980既餐。但因為只限12張相,所以未能提供所有相片。 茶碗蒸 3/5味道偏淡,元貝就幾香,但整體就比較普通左少少,個人覺得做唔到打開味蕾或者留有深刻既第一印象。蠔配柚子汁青蔥 (4/5)細佬見識少,又係聽得多但第一次食「令和の怪物」,師父話呢隻係養殖既。 味道鮮甜,肉質生蠔黎講幾爽實,完全無腥味,加埋柚子汁令到成件事同胃口都提升左。帶子 4/5新鮮帶子,拎左去做天婦羅,但師父手勢好好,做到表面脆,內裏都仲係9成生,因為肉質新鮮,所以仲食到一絲絲嘅肉,鮮甜好食👍🏻櫻煮八爪魚 4/5因為老婆嗰個餐係食白子,師傅問我哋想唔想試吓食八爪魚,所以就轉左我呢份做八爪魚,肉質非常軟熟入味,完全唔會好似咬緊一舊香口膠🤣老婆話未食過咁好食嘅八爪魚。鮟鱇魚肝 with 柚子汁 4/5Creamy,味道唔會話10分濃郁,但又唔似平時食魚肝咁樣 有種甘甘地嘅苦味。加咗師傅特製嘅柚子汁,成個餸菜都幾開胃。黎都第一件壽司,春子魚無咩味,不論鮮味定係魚味都冇🤣 但因為表面有燒過,所以有一浸炙燒既香味,但除此之外就咩味都冇。深海池魚 4/5 碳火燒過 ,魚肉緊致爽口既,有碳燒嘅香味,但同樣魚味同鮮味唔太食到象拔蚌刺身 4/5 鮮甜,爽口,好食。入口有明顯嘅甜味,象拔蚌本身嘅味道都好突出三文魚子 4.5/5 三文魚子師傅用咗特製嘅醬汁醃製左,所以會有種恰到好處嘅甜味,好食,紫菜都幾出色,識嘅時候師傅教落雙手兩隻手指拎起好似飲酒咁樣放落口。 每一粒嘅魚子都似爆珠咁樣,好好食。大拖(養)4.5/5魚油無需講,好食既。老婆嗰餐係最貴嗰個,所以佢嗰嚿大拖羅係天然嘅吞拿魚,師傅話天然嘅大約貴過養殖嘅四倍價錢。我就冇食過啦。老婆就咁話好食😅鯖魚(4.5/5)鯖魚配上一片白昆布,我個人十分鍾意食鯖魚,魚味濃,所以我覺得好好食。穴子 4/5肉質細緻,火炙過再加上師傅嘅特製醬汁,香甜交接,我呢個唔食鰻魚嘅人都覺得幾好食👍🏻甜蝦 (4/5)新鮮大隻嘅甜蝦喺你面前剝殼,蝦膏嘅部份師傅加咗少少海膽,令到佢鮮上加鮮,再用火炙方法逼曬啲香味出黎。 👍🏻湯 4/5鮮甜,味濃,入面有菇、魚肉、元貝。大幾分到3杯清酒杯,師父提議先飲一杯原味,之後可以落青檸, 我就推薦原味青檸唔太夾咁。海膽(4.5/5)呢個海膽山,澎湃、新鮮、好食。 師傅加海膽絕不手軟,冇任何腥臭味同明礬味,望返張相都好想再食多次。 如果有人係當日生日 而又有提早同餐廳講,師傅就會做一個迷你嘅海膽蛋糕,所以生日嘅朋友記得同餐廳講啦🙈 手卷(4/5)最後手卷作結,聽唔切師傅話入邊有咩材料,依稀記得佢有講到牛蒡🤣🤣 入邊仲有不知名嘅刺身,但係幾好食嘅,成個配搭口感同味道都幾好👍🏻👍🏻 甜品:自家雪糕/生果 跟餐決定 總結:整體質素幾好,對得住個價錢同名氣,聽聞黃埔呢間分店好食啲,但食完黃埔行下街都幾好,呢頭好多野買🤣。 會回頭幫襯👍🏻👍🏻👍🏻…Read More

環境唔錯既居酒屋

住左屯門3年,係就黎搬屋之前同老婆幫襯一直想幫襯既「秋香」。 可能期望太大,落差都比較大,今次係幾失望既。內部裝修幾靚,好多星爺套「唐伯虎點秋香」既經典對白,個人幾鐘意佢個環境,香港黎講幾好feel👍🏻👍🏻吉列生蠔 8/10即叫即整,生蠔size都幾大隻,一咬開熱辣辣,好多汁,食果時要小心,呢個好好味👍🏻👍🏻👍🏻威士忌燒生蠔(6/10)職員話係半熟生蠔,但我就覺似只係加熱個殼🤣🤣 上面加上蔥花同偽魚子既野。上檯後,職員拎左支噴噴,向生蠔噴上幾下威士忌,但可能我落得多咗少少檸檬汁,完全食唔到威士忌嘅香味。 但好彩本身蠔嘅質素尚算唔錯,大隻厚身,有蠔味。 但我寧願直接係上生蠔,加熱個蠔殼有少少無謂😅串燒(菠蘿、雞肉、七里香、牛舌心、厚燒豚肉) (4/10)全晚最期待,同時最失望😞-菠蘿:我無食,老婆話唔錯,幾甜同好汁雞肉:比較乾,雞肉粒比較細,所以都無咩口感-七里香:乾,無味😅-牛舌心:我本人好鐘意食牛舌心,但可惜今次燒得比較乾,牛味淡,偏韌但未到咬唔到既。調味都較淡-厚燒豚肉:係真係好厚身,因為有肥膏所以相比下叫做無咁乾,但調味都係偏淡,食材本身既味道都偏淡。燒茄子(6/10)正常水平,但相比下蒜蓉同孜然味會更岩我🤣加埋啤酒,梅酒,烏龍燒灼 埋單~$1000 人均$500。 偏貴,但同食物質素未能成正比居酒屋當然酒水重要,但串燒都絕對係靈魂既存在,希望可以改變下串燒質素同加多少少酒類既選擇。 加油。…Read More

一嚐懷石料理X omakase

今日同老婆去左食夢,一間懷石料理配上Omakase, 如果要直接講結論就係:視覺>味覺。 佢唔係唔好食,但俾唔到我會想回頭要食既感覺。 但如果字食過既,一試都無妨,食物好igable。我揀左「夢」set,太太揀左「紫」set,兩個分別除左「夢」有和牛,「紫」無,「夢」無壽司五貫,「紫」有外。 主要「夢」會提供啲相對比較貴少少刺身。 -牛油皮包住三重縣栗子蓉。一入口係幾濃嘅牛油味,之後就會食到溫暖嘅栗子蓉,有栗子香味同埋都幾甜。 八寸擺盤好靚,入面既食身會因季節/來貨而改變。而我無記低🤣🤣🤣🤣 所以未能介紹。但全部既味道都唔錯,包含曬冷熱咸甜,幫大家打開味蕾,開始今晚盛宴。右口魚刺身用鹽板方式上碟,肉質緊至,魚味濃,魚油都豐富。青檸可以去除油膩感。 另一個係包住薑絲等既配搭,味道幾好👍🏻帆立貝他他+薄脆:柚子,紅豆,紫菜帆立貝加入左柚子/青檸,加上食用花做點綴,視覺上十分賞心悅目,味道上係清新既,但無左帆立貝應有既鮮甜味。 面頭既法國魚子醬就食噱頭多過食味道。 同樣被柚子/青檸既味道蓋過左。個薄片就無咩好講,因為食唔多出佢聲稱加左既材料既味道。 總括依然,相比之下我同太太都係比較鍾意食原粒,食鮮甜味既帆立貝。 縞蝦,雉羽太縞蝦:主要係北海道產,第一次食同聽🤣 但真係好好好食同新鮮,有蝦既鮮甜味,蝦身肉質都好緊致。👍🏻👍🏻雉羽太:屬班類既魚,所以肉身會比較實,魚味都幾重,唔錯👍🏻大蜆、蠔葉,蠔膏,蜆湯全晚最鮮既一道料理,先飲一杯用大蜆煮成既蜆湯,一個字:鮮!!! 好好飲,如果大杯少少就好啦😁 再食埋用大蜆肉做底,配上蠔葉同蠔膏,呢一啖真係鮮上加鮮既配搭👍🏻👍🏻 十分好食刺身三味:秋刀,黑鯥魚,吞拿魚三食秋刀:時令,入口時候魚味唔濃,但原來after test 先黎料,好食既。黑陸:魚皮經過火炙,逼出左魚油,同時多多一層火炙香味。好食👍🏻吞拿魚三食:基本既赤身、中拖、大拖羅。無根,但入口口感三款都係偏實,大拖油脂感係豐富既,但魚味就比較偏淡。 相比下拿吞拿三食比另外兩款失色。喜之次配蘿蔔底+蓴菜,配蝦湯底喜之次:魚皮經開處理,十分香脆,肉質好細緻,係我食過最細緻既魚肉👍🏻👍🏻👍🏻個底就用蘿蔔盛載住蓴菜,個湯就用蝦熬煮出嚟嘅湯底。蓴菜:個人唔鍾意,因為佢同秋葵一樣,有一種好似鼻涕咁嘅黏稠既液體包圍着,個人頂唔住個口感😅 而味道上都冇咩好大特別。 蘿蔔:冇渣,但唔甜同冇蘿蔔味……至於個蝦湯,有少少蝦味,但唔算濃郁。可能個蜆湯太出色。紅蟹,大閘蟹膏配哈密瓜陳醋拆肉紅蟹加上大閘蟹蟹膏,呢個組合除非隻蟹臭,如果唔係基本上唔會唔好食,蟹膏甜嘅,入邊再配上清甜既哈密瓜,中間會有一層陳醋,增加左成個餸菜嘅層次,炸米亦都增加左口感,但當我食到陳醋嗰時,個腦即使出現咗豬腳薑,因為真係嗰陣味🙈 但總括來講呢碟係唔錯嘅A4和牛一入口嗰時滿嘴油香👍🏻 配上自家特製嘅XO醬👍🏻👍🏻但比較可惜嘅就係我嗰舊overcook左少少,接近6-7成熟😅 但基本上都冇乜嘢好彈。 好食🤪海膽創意料理海膽+黑松露+壽司飯+魚子。 職員話呢碟係佢哋公司嘅signature之作,個人覺得係好食嘅,海膽新鮮,冇臭味,都冇咩明礬味,新鮮即刻黑松露,香味突出👍🏻👍🏻👍🏻 但作代表作既話記憶點唔係好突出😅😅黑松露risotto 職員話用咗日本糯米,口感煙韌, 廚師加入左自家高湯煮呢個飯,最後灑上新鮮嘅黑松露,香味十分,呢個飯都十分好食,佢比海膽創意料理更有記憶點🤣最後甜品海鹽雪糕加上食用銀薄。晴王提子配上香檳啫喱,平時買$1xx蚊既香印仲好食過佢🤣 完全唔甜🙈…Read More

同太太都好鍾意食日本燒肉,但無奈疫情關係唯有喺香港一解燒肉既思鄉情。原本用咗Apps預約夜晚6:30,但因為私人理由夜晚6:37先到達,但職員已經唔俾我哋入😢😢😢😢 唯有即時拎飛排隊等,強烈建議大家用佢個Apps預約位置,或者用佢個Apps遙距拎飛。兩人以上最好分開五至10分鐘拎。最後係夜晚大約9:00成功入咗😵😵 我哋揀咗個lv4嘅澳洲牛放題,再加咗個一人嘅啤酒放題$30。牛肉嘅質素OK,融雪都冇咩問題,放題來講呢個價錢我覺得可以接受,係等嘅時間比較來啫🤣 一分錢一分貨,質素來講我覺得算對得住個價錢,但我就未必會試佢個日式和牛放題,因為相同嘅價錢可以喺Donki買靚料自己屋企燒,質素用選擇可能仲正🙈 總括嚟講,lv4既餐都算對得住個價錢,可以一解日式燒肉個鋪癮,但大家記住要預約咗先/ 拎定飛。。…Read More
