要吃上海菜,以往太子,旺角,灣仔那些店如三六九,一品香,老正興的,很多都關門大吉,代之而起的是裝修華麗,別具氣派的菜館。老式的通常是傢俱太舊,且又搭檯,沒有太多私人空間,但份量夠,濃味十足。而裝修得美輪美奐的新式上海菜館,那些小菜通常比較小碟,但客人的私人空間會更被重視。時宜世易,香港人接觸上海菜的日子好長,但社會日漸富裕下,對吃上海菜的要求甚至對菜館的要求都大大提高。在外知名的鼎泰豐,其實服務十分稱心,由斟茶遞水,待客細節上十分周到,視客人為至賓。服務上真的好有系統,好貼心。始終食物質素才是最重要的考量,先來一個四喜烤麩,我覺得可以更好,始終味比較淡,未夠濃。涼的程度恰可。而且不水汪汪的,但確實不夠甜,吃下去都很利落,只是那種甜味引得不夠,個人認為打了折扣。皇牌菜式-小籠飽與蒸鮮蝦餃,賣得比其他店貴,但貴得來確實亦有它的道理。皮夠薄,蒸出來夠滑,且夾起後皮亦沒有穿,內裡豬肉不肥膩,肉汁不會嗆口灼口,吃下去好順滑,少少醋,吃得一氣呵成。通常在外吃小籠飽時,有時外冷內熱,有時肥油太多溢瀉出來,但此店的就沒有此情況出現,我個人十分喜歡這兩道菜。湯麵,湯是另上的,麵底好均勻,而且吃下去好幼滑,湯本身不太油,而牛燉得十分腍。吃下去好軟綿綿,十分好吃,味很清新。接下來的素菜包就平平無奇,只是菜切得比較幼細,沒有太大驚喜,平實的一道菜。較為失望的一定是排骨蛋炒飯,問題不在於排骨,厚度適中,燒出來剛好,不算油膩,而且好均勻,惜飯底出了問題,用上東北米,完全發揮不到那種炒的功力同鑊氣。炒飯炒不起粒,炒飯用上東北米,黏性太重,炒出來不夠乾身,吃得時候不夠爽,選材上完全幹不了炒的神髓,實在失望。伴茶用上淡淡的青茶,滬江特色,惜與香港的氣候不太夾。始終下油菜式多,黑茶可去油膩呢。不過,整體菜式上吃的味蕾好清新,但從清新的感官中,吃到不同菜式的質感,有滑有熱,有冷有腍的。不錯的一頓飯,令我的味覺不時拼湊起來。…Read More
