友人素聞此餐廳環境、格調,以及食物俱佳,特選之為我慶祝生日。甫一到埗,乍見場上賓客亦一雙一對,氣氛、佈局亦仿似情侶餐廳,而自身一行三人,似有點格格不入。當然,格局可以不論,食物質素最為重要。點了四道菜餚,凱撒沙律、安格斯肉眼、千層薯蓉及炸雞塊。以$108一道凱撒沙律及$158的千層薯蓉來說,份量也許太少,想我不是鄉下佬出城,也不是吝嗇那一百幾十,而fine dinner的餐廳也常有光顧,就此四條生菜,與月餅大小的薯蓉,廟大燈籠小,唯價錢實在直迫米芝蓮餐廳。至於味道,沙律、千層薯蓉平平無奇,亦未見識到其千層之所在。生菜原條奉上,或是忠於Tijuana Hotel Caesar的原著,然人家的凱撒沙律是鋪滿碟面,不會如此孤寒伶仃。主菜牛扒,想是主廚嫌油花不足,為增油香,用大量生油烤製,上桌時油光盎然,入口瞬間滑入喉嚨,肉香未能細嚐,倒有油膱味洋溢口中。炸雞塊味道有點微妙,我們仨人皆吃出酸餿味來,唯侍應帶回廚房後說雞肉沒壞,只是味道不合我等口味,既然免去收費,我等亦不予計較了。飯畢後我們就此離去,沒叫甜品,亦未有久留。…Read More

今日起床風和日麗,猶憶起上週末陽光如是,是到石澳享受日光浴的好日子。蒲到石澳,一陣驟雨,雨後天清,無損雅興,清了暑氣,更覺怡人。躺了半晝,山雨欲來,雲低風嘯,似是歸時,連忙收拾,卻依然敵不過風雨之急忙。灘岸上風雨飄遙,車站下人頭擠擁;卻因大雨之急來,造就了於石澳用餐的緣份。得村民陳生的介紹,來到天后廟前的new black SHeep,聽說這裏的薄餅可口,便點了個Planet cheese pizza,又要了Irish coffee和Hot chocolate。薄餅即叫即制,等了甚久,外面已然放晴,先來飲料,Irish coffee做得不錯,淡淡的威士忌香氣在口中徘徊;Hot chocolate以朱古力粉沖調,少了鮮奶的襯托,入口粗糙,甚是榎口。等了將近一個小時,新解熱辣的薄餅終於上桌。薄薄的餅底,上面覆蓋著濃口的Goat cheese、mozzarella,伴以蕃茄醬、香草調味,與蘑菇、乾蔥等配料混然為一,軟綿的芝士配襯鬆脆的餅底,滋味非常。侍應亦介紹我們佐以自家浸制的辣椒油同吃,更是美味。試了一口,果然,椒香味更美,卻因太辣,淺嚐一口便已放棄。等了良久,飢腸轆轆,不消片刻薄餅已頓然納入腹中,想欲拍照,卻為時已晚。…Read More

大排檔的鑊氣小炒極是吸引,比之茶樓小館尤有風味;然無三五知已好友,卻又難以成行。上週五的飯聚約了近一個月之久,原來早一次共饍,已近一年。這次走到深水埗,特來試試這家甚有名氣的小菜王。事前先行訂位,到埗一見,門庭若市,縱有訂位亦要輪候。或者食神加臨,不消一刻已獲安排入座。吃大排檔,九肚魚是女友必吃之選,定要落單,再看菜單,來個豉椒蟶子、黃金蝦,Stephanie想吃炒蜆,因有蟶子,改要了鹽水花蛤,又要了個金銀蛋浸時蔬。Ray見椒鹽雞軟骨甚是吸引,又是推介,故又點了。先來了個菜,叫了兩碗白飯,菜的味道偏鹹,而我因愛鹹蛋黃的味道,卻又不以為然。等了等,九肚魚來了,魚炸得鬆軟,粉漿又不太厚,沾些醬汁,酸酸的味道解了油膩。吃著吃著,雞軟骨上桌,招牌菜自是沒可挑剔。接手來的是鹽水花蛤,花蛤鮮甜,簡約的味道解了前兩道菜的油膩,是濃油赤醬中的一片綠洲。再來黃金蝦,肥美的中蝦為蛋黃所覆蓋,甘香可口,誓要將蝦殼上的醬汁通通啜乾,方肯善罷甘休。這味菜是我所愛,然我愛其殼尤多於肉。最後來作結的是豉椒蟶子,汁香醬濃,肥英鮮嫩,以之佐飯,錦上添花。…Read More

昨夜心血來潮,想吃好吃的刺身飯,知道這家豐洲水產很久了,一直想試,又適逢五七折優惠,怎能錯過。時值八點,正是晚飯的黃金時間,心怕大排長龍之際,電梯門打開,只有為數不多的九人在門外等候,等不多久,已有兩人入坐。而前面三三兩兩排著隊的,皆未齊人,是以等不到十分鐘便可入座。望著餐牌,其中牡丹蝦海鮮丼及飛天黑鮪大滿貫丼令人猶豫難決,幾番掙扎,最後捨棄了肥美黑鮪。因坐吧枱,抬眼便見丼飯的準備過程,看丼飯師傅將一勺勺的三文魚子加入飯中,又將長長的三文魚柳去皮切片,頓時腹如雷響,我也想跟剌身們有肌膚之親。看得著迷,丼飯已送到眼前,暖和的醋飯上配料滿滿,魚肉亦甚是新鮮。丼飯層次甚豐,三文魚子伴以柚皮,入口清爽,亦去其魚子原有的腥與鹹;帶子以檸檬片相隔,食前稍稍擠壓檸檬,讓帶子沾上檸汁,更顯清新;牡丹蝦佐以青檸汁,鮮味更顯。以丼飯來說,屬上乘之作,然海鮮甜度稍嫌不足,如以原價論,則稍有不值。…Read More

公司位置隔涉,鮮有外出用膳,稍有閒暇,便約同事走土瓜灣一趟,看可有食神。沿農圃道走到馬頭圍道,見對街西餐廳甚是不錯,便進內一試。餐廳環境幽靜,食客不多,上菜甚快,適宜上班日短聚閒談。雖說午市,選擇倒也不了,一枱四人,各自挑選,有雞扒、有牛柳、有煎三文魚塊,而我選了羊架伴意粉。落單不久,便送來四杯餐湯,小杯子盛著的羅宋湯,味道得宜,濃淡適中,鮮甜的蔬菜中和絲絲辣味,蕃茄的酸甜激發胃酸分泌,大增食慾。令人對主菜更是期待。主菜上場,眼前一亮,精緻的賣相令人食指大動,先呷一口清水,洗去餐湯餘韻,捲一束意粉,送進口中。不知是餐湯太濃,還是汁料太淡,口中芝士若隱若現,似有還無,嚐不出其醬汁層次。炸羊架賣相得體,入口仍有羊肉膻香,可惜火候過猛,肉質過乾過硬。反是配菜甚佳,輕烤過的茄子、翠玉瓜,甜味得以保留,伴著醬汁,入口清新,比之羊架、意粉略勝一籌。主菜不見突出,猶可入口,接著來的餐茶,令人失望。一杯「立頓」紅茶,一壺奶精。我知,是時候結帳了。…Read More

年近歲晚,又是吃團年飯的日子。四處人丁暢旺,要尋一幽靜餐館相聚聯宜實是不易。驟然除夕夜去過的塩館,立時致電留座。是晚一行四人,其樂融融。來到如此特別的餐館,自不然要享用廚師推介,讓主廚隨意發揮,方可嚐其真味嘛。Chris了解過我們有何不吃後,便著手準備今晚的第一道菜。先來四款開胃小吃,連隨一隻大鍋放在眼前,鍋燒得正紅,然甚麼也沒有,正自疑惑,Chris說是清酒煮蜆,隨即倒入清酒、蒜片、昆布,特清酒煮滾。正想會否是外間那種濫竽充數、大堆頭、乾巴巴、人皆可做的敷衍料理,酒煮滾了,大蜆來了。Chris以火槍一彈,湯面微有火炎,酒精揮發,蜆亦下鍋。隻隻整齊排列,逐一開口。甫一開口,立時夾起,眼見肉質飽滿,不經細想已放入口中。經清酒沐浴,伴以微茫海水,蜆的鮮味發揮得淋漓盡致。一來已是高潮。好戲頻來,接著來的是花蟹,花蟹在燙過大蜆的清酒中浸紅,一轉色便已上碟,肉質滑嫩,鮮味十足,清酒滲入絲絲蟹肉,更見風味。花蟹配了九條蔥汁,然這汁實無用武之地,花蟹原有的鮮甜更勝一籌。原來,花蟹好味的秘密在其蟹鉗,幼滑之餘,入口即化。原來,蜆蟹不過煙幕,為是泡飯提供甜美湯汁。蟹身撈起後,將蟹殼浸湯,待蟹膏溶化後加入麵豉、白飯,白飯吸收湯汁發漲之時,加入雞蛋,煮至濃稠,成了這「海鮮雜炊」。Chris說一般情況下,海鮮煮好了,湯分了便算,但這晚興致溢然,做了這口飯。米飯吸收了湯汁,充滿鮮味,當中混了蜆肉的海水,加少許七味粉,去了微腥,又上了一個層次,好吃得一塌糊塗。上山容易下山難,攀上味覺的高峰後,不容易欣賞其他美食帶來的快感。這裡的燒物、串燒都做得不錯,尤其牛舌。這回的牛舌爽滑彈牙,牛味濃郁,咀嚼時在口中打轉,滑不留口。燒活鰻稍嫌遜色,雖皮脆肉嫩,然醬汁不足。烤雞泡魚乾亦不見突出。燒活鮑雖是不錯,然少了上回鮑魚飯的沖撃感。稍事休息,謝幕來的是京蔥牛肉卷,牛肉用的是A4宮崎和牛最肥美的部分,咬下去油脂一湧而出,伴隨入口的京蔥中和其膩,下面鬆化的法包吸收香濃牛油後,鬆化不減,更添風味。以此作結本可說是無憾。唯友人意猶未盡,要了個叉燒拉麵。煮麵的是Chris徒弟,麵上桌,Chris要友人評分,友人甚是謙厚,而我嘗了一口湯以後,認為甜味太濃,麵豉、醬油的濃度不足,是當晚的一個瑕疵。另外,原來這麼很多名人出沒,當晚還見到個老是在巴士背後常出現的名人呢。…Read More
