成日都話想去OZONE飲嘢, 但身邊都冇邊個朋友特別鐘意飲酒; 所以就特地去Book枱去試一試佢地星期日先有嘅Brunch同盡飲佢地個支價值不菲的Veuve Clicquot香檳。OZONE位於最高的118樓, 要從Cafe 103隔鄰的升降機直上。經過一行以LED燈作裝飾的走廊後便到達酒吧。自助餐枱被劃分為兩部分, 一部分主要提供日式刺身、壽司和生蠔。另一部分則提供波士頓龍蝦、海鮮、燒牛肉、冷盤沙律、肉類及甜品。當日坐在近酒吧附近的壽司吧, 那裏是一些比較入的位置; 如果想觀賞景觀就須隻身步行到外面的露台, 並提供高裿及望遠鏡好讓我們較容易觀看。Brunch開始後, 我先到冷盤位置拿取海鮮, 取了我最愛的波士頓龍蝦、長腳蟹腳、青口及三文魚子脆筒。龍蝦的蝦味幾明顯, 但如果佢有糕的話相信會更加好味; 長腳蟹腳的味道也很鮮, 也有很強的海水味。至於三文魚子筒, 這種食品的製作外貎也是第一次見, 筒內的沙律也做得頗乾身, 沒有多餘的水份流出來。至於刺身、壽司和生蠔, 刺身都很爽口, 完全沒有筋; 但生蠔卻比想像中驕小, 應該是餐廳用一些接近珍珠蠔的品種。而第二次再取回來的海鮮就只有半隻龍蝦, 一隻蝦及一個三文魚子筒, 以及兩款的肉類小食。味道鬆軟而有質感, 而且做得仔細。而燒牛肉就是自助餐中唯一的熱盤, 而餐廳為了配合以亞洲風味的Brunch, 因此燒牛肉的汁料並不是傳統的燒汁, 而改用韓式蛋黃醬及泡菜作為配料, 但我總覺得韓式的燒汁跟牛肉不夾, 所以只在上面加上所提供的茄汁便算。雖然燒牛肉的汁料不配合, 但牛肉的質素很好, 爽口, 肉質鬆軟, 肥膄適中。主菜方面, 我選了燒銀鱈魚, 一種日式的主菜, 肉質嫩滑, 皮簿而且鮮甜, 容易入口。 只是左上角的露筍鞋了一點。整體都很出色。至於甜品, 當然是不可忽視啦, 最愛就是燕窩金箔在面上的奶凍, 入口幼滑而不甜以保留燕窩原有的味道。而芒果布甸則多果肉而爽口, 相對芒果的份量較布甸為多。至於迷你朱古力心太軟, 感覺就差了少少, 雖然是現場即製, 但內心的溶漿不算多, 而以花作為主打的甜品味道就較為一般, 但香味就頗強。OZONE與其他酒店餐廳不同的就是設有巨型望遠鏡, 即使在能見度底的情况下, 也能見到東廊近嘉華國際的路牌字體同行車情况, 仲連lFC天台上的天線也可看到; 下次如果有人約去OZONE飲嘢, 而佢話塞車而遲到, 就可以知佢有冇呃你啦!…Read More

今年12月, 係Ritz Carlton在lCC重開的首個聖誕節; 而佢嘅Sunday Brunch, Book咗半年枱, 終於等倒聖誕前夕先有機會食佢地個Sunday Brunch. 我揀咗飲Billecart-Salmon Brut Reserve NV嘅Set, 價錢超抵, 而食物質素、用料都比其他Buffet, Brunch, 如洲際較為高同嚴格。嘅然餐廳以南意大利菜為主, 海鮮當然是不可取替啦, Tosca 的Brunch所提供嘅海鮮除了青口和蜆外, 並不是獨立供客人夾食, 而全部都跟少量配菜或沙律一併品嘗。而部份肉類如巴馬火腿也會被用為製作沙律的材料。在第一張Buffet枱, 所提供的前菜主要有各種不同的沙律, 煙三文魚, 一些小碟的迷您前菜, 以及其他海鮮。取回來而較出眾的可說是帶有魚子在表面的鮮甜帶子、海鮮沙律脆筒及西柚配巴馬火腿。這些頭盤、味道鮮甜, 沒有使用太多的調味品, 只用天然的香料作調味這不但能保持肉類、海鮮原有的鮮味; 更能增加其香味同加強味覺。到第二張table, 食物主要有各種不同的意式火腿, 麫包, 青菜(則小椰菜及其他意式蔬菜的沙律, 意式燒豬, 肝類及各種不同的芝士。在第二張table, 我選了大部份火腿, 少量沙律和一片燒豬; 火腿的味道和口感各有不同, 燒豬的豬皮仍然能保持鬆脆。 至於他們最專業的, 莫過於芝士部份, 芝士大致分為兩類, 乾身和水浸的水牛芝士; 水牛芝士的味道較接近鮮牛奶味, 質感與白烚雞蛋接近; 不同的是芝士是由一層又一層組成的圓球體。而硬身的芝士就感覺比較像一般Buffet的芝士, 例如藍芝士。而餐廳經理Dino更主動地介紹各種的水午芝士, 並提點我們在進食時不要和其他芝士放在同一隻碟上, 以免破壞水牛芝士的原有味道。過了食頭盤的時間, 主菜終於登場; 我所點的主菜是章魚鮮車厘茄橄欖意大利闊麪。零香料的烹飪不會令人感到主菜下肚後太飽, 闊麪的質感爽甜並能與鮮茄、章魚三種鮮味同時感受到。甜品環節, 種類一般而且精美; 而且更加了不少聖誕才出現的Panettone, Stollen等聖誕麫包。我在甜品中取了的主要有兩碟, 其中包括, 西西里甜卷配無花果, Espresso Creme Brulee, 意大利咖啡純朱古力筒等。甜品大多都不太甜, 因此可以保留原材料的口味。唯一失分就是曲奇沒有太明顯的味道。而我感到從中甜品可看出其心上作出的改變, 就是意大利咖啡純朱古力筒本身是由一個小形的咖啡杯改為朱古力筒。最後的是要介紹主打飲品Billecart-Salmon Brut Reserve NV同餐廳提供的餐後飲品Latte, 香檳的口味很清新, 有很香的白提子味令其更容易入口。而Latte方面, 與其他Buffet上桌的方法不同, 待應會把Espresso在客人面前直接倒入已打泡的熱鮮奶內, 相對之下, Latte的咖啡同牛奶成份也較一般咖啡為高。在環境上, 在Tosca向上望可看到Cafe 103, 則可以吃到朱古力下午茶的地方, 樓底高而裝修不錯, 只可惜的是香港的空氣質素每况愈下, 可以看到清晰海景的機會恐怕也愈來愈少。總的來說, 這個Brunch可說是Ritz Carlton給星期日到Tosca 光顧的一份心意, 因為即使是平日散點的話, 加起來即使是午餐也可能要每人一仟蚊落樓了!…Read More

自問喺中環嗰時從來都末幫襯過麗嘉酒店, 由富麗華酒店被清拆後就沒有再到大廈高層的餐廳進餐。經過9年後, 終於再有幾會讓我再次到全海景大廈享受下午茶。更高興的是, 當時lFC建成後至今卻是連大堂也是一般市民不能內進的地方, 但lCC反而能讓人出入較自如, 並能到達全球最高的酒店享用優質的服務。簡直是人生的一個榮幸。午餐時段1:30進場, 先由圓方金區近HMV上一條電梯, 但之後不要繼續上其他電梯往寫字樓或轉左, 向右行便可看見Ritz Carlton的側門入口。進入後再上一條電梯便可到達酒店大堂。然後便由酒店職員陪同下乘座快速電梯前往103樓往Chocolate Library 登記並立刻讓我們入座。:)我被安排坐在近可望倒意大利餐廳Tosca的雙人座位, 能與Tosca分享部份海景位, 但可惜當日天氣較陰暗, 而且有陣陣微雨。最遠只能望倒尖沙咀的建築物, 要停雨時才隱約地看到會展。在點菜前先到餐廳兩端可望到維港兩岸的窗口觀景和拍照, 一邊望向尖沙咀至鯉魚門, 而最遠更可望倒港島東中心及嘉亨灣; 另一面可完全地望到lFC、灣仔及西環海景。看完海景後便到第一階段點餸時間, 把Menu打開後便見到較矚目的推介菜式, 而我就豪不猶疑地選擇了朱古力火鍋同朱古力梳乎厘。等候期間仍馬不停碲地繼續影相, 直到第一道菜朱古力梳乎厘來到桌前才肯令我乖乖地坐下來品嘗。:)先趁熱品嗜梳乎厘的, 入口感覺軟綿綿而很快溶在口中, 味道不太甜而保留強列的黑朱古力味道。而加上梳乎厘核心的新鮮紅桑子更能帶出果味令朱古力味混合而令整件食品不太Dry的感覺。至於旁邊的兩粒朱古力, 一粒牛奶味的Chocolate TruffIe入口在完全味咬過後便立即溶在我的喉嚨, 可見其質感幼滑非常。而令一粒則外脆內軟, 表面包著黑朱古力外殻的牛奶朱古力, 對比強列之餘也能體驗兩種不同味道。至於朱古力火煱雖然也屬於招牌菜, 但味道及食物配搭上則令我感到失色, 朱古漿的味道雖然濃烈, 但三種麫包不能明顯地突出本身的味道。而加上朱古力醬後更把其口味帶走, 至於用朱古粉炸成的Pasta就像很淡的朱古力條, 更失去Pasta的質感和口味:(; 如果能大幅改善配料的質素應令此產品更上一層樓, 成各大雜誌的推介品, 而到後來才發現可補充棉花糖, 但我已完全食完而待應已收了碟, 令我感到有些可惜。:(到了下午三時, 主角終於出場, 這就是鼎鼎大名的Chocolate Library Afternoon Tea。一本封印有Chocolate Library的厚厚圖書呈現在我的眼前。我興奮地問女待應可唔可以賣呢本書俾我。而答案當然係唔得啦。而待應依然很開心, 因呢箱真係好受歡迎, 前後有不少客人都問過這個問題, 因此可能日後有售都不足為奇。打開封面後, 內裏有七種甜點及兩種鹼點, 待應便立即介紹各種小食和食嘅先後次序, 便跟從意見先由鹼至甜食起。煙燻法國鴨胸伴合桃包:鴨胸的口感好結實, 但食落卻接近黑毛豬火腿, 超乎想像。而麫包則外脆內軟, 口感結實。而包內的疏菜同水果份量不多, 作用只是為了令麫包作些少滋潤, 也為鴨胸肉作一點平衡作用。可可朱古力包拌鴨肝醬:味道簡直零捨不同, 鴨肝的味道既爽而香, 質感又較硬。而我又很喜歡它與朱古力麪包的結合, 而麫包的質感也十分鬆脆, 帶十分強烈的香草味令整體味道更可口。如果用鵝肝做可能成個Set加多幾十元都味定。牛奶朱古力黃梅:可能自己個人本身較為鍾意食黑朱古力, 所以覺得這個牛奶朱古力的味道一般。但食落口依然覺得像松露般滑,加上面一層Cream令幼滑度錦上添花。而面上的黃梅爽而不甜,配上朱古力令兩者混和而合作地突出。Berries cocoa tart:此甜品的基座是純朱古力撻, 應該相似於文華快船廊的同類產品。但餐廳應修正中文名, 因為草苺可可撻這個名詞只是指它是一件只有草莓的朱古力撻, 其實為免有所誤導, 應最好更正為雜苺朱古力撻。先要一讚它的朱古力很滑同好濃, 而餅底也很脆; 雖然各種Berries大多味道也較酸, 但各種的果味也很重, 十分可口。橙香朱古力蛋白杏仁餅:口感很脆, 朱古力味濃而橙味也很重; 面上加上各種可可脆更令食落去的爆炸感更強。但幼滑度卻不及其他法式杏仁餅專門店, 未能令朱古力有入口即溶的效果。朱古力拿破侖酥:這個是整個Tea set中最愛的一個, 因從未想過朱古力原來可以製成一個特別的拿破崙。基座的餅底既實而脆, 有很強的可可味, 而且用足堅果去製成, 十分用心。加上面上的Cream及朱古力片便能做到脆滑俱全的效果。可惜未必人人識欣賞, 到收碟時有客人就剩下沒有食, 好想問收碟的那位待應唔好拋棄佢俾我地食。朱古力紅桑子撻: 其實佢係同Berries cocoa tart係相似產品, 而不同的是佢的朱古力撻內加了紅苺用, 令朱古力味更有水果feeI。雲石芝士蛋糕:內有朱古力餅為餅底, 朱古力餅底很結實, 但濃度只屬一般。而雖然有芝士味, 但濃度只屬一般, 當然與芝士蛋糕專家文華餅店仍有一段距離。白朱古力杯:最後的甜品, 表層的果醬都用料十足, 而且另外再加上不少紅桑字果肉, 果肉酸而口感佳。而白色部份的白朱古力味較少,反而似白色的奶油Mousse, 但好在食落兩者並沒壞影響。完餐之後, 由於下面的Lounge and Bar 同Tosca仍未到復業時間,所以可以借用一段時間攝影維港美景同欣賞餐廳設計, 當然只有Tosca, Chocolate Library 同 Lounge and Bar 可以望倒港島嘅維港美景, 但天龍軒就只能望向葵青貨櫃碼頭;但食物價錢感覺Tosca係當中最貴。至於酒店設計, 個人覺得較Cyber, 如像電腦遊戲場景; 例如到達Lounge and Bar 後, 要經過一段水晶隧道Loading, 才會到另一間餐廳; 完成所有Mission後才可乘電梯到118樓的酒吧與最終Boss對決?! 不必, 因為雖然是這様出色的設計是這樣, 但只要選出自己喜愛的餐廳便可以了!攝影過後, 但最終仍依依不捨地離開; 告別這繁榮的維港海景。下次再有機會會再與家人到來, 共享繁榮、幸福的可貴。…Read More
