食材鮮壽司好食主廚好nice

非常滿足的一餐壽司盛宴!今村已是心儀已久的店,明明聞說味道很好,但OpenRice 卻負評疊疊,一直未認真安排。這次再仔細讀一下OpenRice 的食評,見到一堆有點茅盾負評,反而激起了我走一趟的決心。而幾乎所有負評都有一句:食物是很好的⋯⋯咁我就放心啦!結果不出所料,這餐晚餐絕對是享樂雙修!味美歡笑更勝「牡丹樓」!今天幸運之處:1)晚餐只有三組人,每組2人2)三組人同時到場開餐3)三組人都食相同的omakase + sashimi set4)我這組是第一次光顧,但另兩組是熟客,仲要幾熟果種,氣氛warmup後變得很好5)三組人都能喝酒,還喝得不少,而今村san亦是嗜酒之人!今晚點的set挺大份,細食者要三思。但壽司部分我按慣例都係掛住食,唔得閒影!今村不同之處,是sashimi 安排穿插於整個壽司過程之間,而且安排得相當合適!非壽司部分我也沒拍足照片,親身吃還是最重要的!大致壽司部分有:赤貝、鳥貝、墨魚、炭炙金目鯛、三式海膽platter 、烤赤鯥、烤穴子、赤身吞拿、中吞拿、大拖羅、香蔥拖羅小手卷生魚片(或熟魚)和少量熱食部分:剝皮魚清湯、剝皮魚刺身(沾魚肝香蔥醬油)、鳥貝群邊沙律、池魚麵豉茸(!)、赤海參、昆布漬牡丹蝦配乾蝦膏碎、熒光魷魚茶碗蒸、清酒昆布淺漬渡蟹、毛蟹肉cocktail 、煮鮑魚、薑片夾小肌、香脆白馬頭魚埋尾有細香蔥麵豉湯、抹茶pana cotta、不太甜紅豆糕和草莓。加上今日點了十四代生清酒、十四代的燒酌、還有今村san請飲的天寶sake... 教我們如何不滿足?!食物沒有能挑剔的地方!整配搭安排都是一流!尤其三拭海膽,由清甜的馬糞海膽、甘香濃郁的福岡海膽到滿口甘甜並重的北海道白海膽,絕對是澎湃的幸福感一下子湧了出來!而從來是平凡的墨魚,今天也表現得非常有張力、口感豐腴甘甜,果然是seasonal !昆布漬過的牡丹蝦,又彈牙又充滿鮮香,加埋蝦膏碎的酥香,真心全新感受!連平時常吃到的茶碗蒸都做得好出色,滑脫脫程度近十分!湯汁芡勾得剛剛好!今村san是個相當幽默的師傅,但在重重爛gag中,也能見到他一面對壽司、食物時的認真和堅持!吃飽後三組人邊喝酒邊聊天,過得甚為愉快!今村san還介紹了幾家推介食府呢~~有空要去試~今餐相當感恩各種幸運機遇,期待下一次!…Read More

先表達非常抱歉,進餐時完全沒有拍照。不拍照原因:1)埋吧台進餐常忙於與chef傾計,忘了!2)食物很精彩,想立即欣賞,can’t wait!3)恃住網上類似照片一堆,同樣是那款壽司,照片是不會太大差別的,除非特別為我而做的菜式,另作別論。金坂,聽聞了2年的大師級壽司處,一直未有去試的原因:1)食開果開食得我很滿足2)地點太遠不方便3)好難訂枱而今會去試的原因:1)食開果間的變了朋友的日本師傅離職了,回到家人身邊不再回來2)其他幾間名店一樣咁難book入店那天是周六晚,一握入魂牌坊就在吧上,侍應並沒有帶我去大師傅那邊,由另一日本小師傅serve我們,雖然有點小遺憾,不過還是ok的,因為我相信這類店有一定QC。在吧枱上還見到第三位師傅,是一位本地師傅,平素在後台為主,他在我本來的愛店工作過一、兩個月,人甚勤懇。遇到熟人,他特地向日本小師傅介紹了我,還強調了一下我很喜歡喝燒酌!我點了兩客基本壽司套餐(1688),外加三款刺身,內容全任師傅發辦。另外點了一小瓶清酒。埋單七千多澳門元。餐前小食係時令熒火魷魚🦑,還有樣小點完全失憶,反正都好吃。刺身第一份是比目魚二食,第二是海膽,第三是黑喉。觀察過,應與omakase shin(2988套餐)的刺身settings 一致。壽司真的有點忘了,畢竟是2周前的事了。但也是許多post裡或網誌上都寫上的那一堆。刺身:甜美新鮮,配搭完美壽司:飯的大小、溫度都相當標準,鬆/實度合標準,醋的比例可以,不能說是我最喜愛的,但是ok的。魚生片與飯團之間全都協調得非常不錯,醬油、芥末、鹽花、檸汁、柚子皮、薑蔥油等的選擇都很不錯。例如kohada、iwashi 配薑蔥油真的非常好吃!烤穴子就有柚子皮和鹽花來襯托鮮香。鹽花也是富山白蝦的好朋友。不過,可能市場競爭是越來越烈,澳門能吃到好壽司的機會還不算少,所以整體沒有非常驚喜就是了。這與不是大師傅有關?服務:環境簡潔乾淨,服務員是有禮的,不過不算很熱情,添茶也有點慢。師傅們都很nice,就算是小師傅serve, 大師傅都有打招呼,而小師傅被我多番聊傾計後,也熱絡起來,不時糾正我的魚生日文發音,也用英文和我聊各種事。廂房不時傳出非常吵的敬酒聲,在澳門賭場食肆就習以為常了,畢竟和賭場脫不了干係。這缺點在整個澳門都普遍存在,除非像我喜歡去的街上小店。…Read More

真的很少會那麼狠批一家日式連鎖式食店.因為大部份日式連鎖式食店, 就算不是很好,但也很少 "很差", 加上, 就算有點差,也不會為自己寫上最諷刺的口號... 這家真是例外之極~~這裡是suzuki cafe.那天和友人lunch, 見到光鮮明亮的suzuki cafe,想想, 應該起碼有UCC或 Pokka的接近水平吧.so, 我欣然步入.見到有幾合理的lunch set, ok 啦, order左一個沙律set, 一個海鮮飯set,wow, 沙律應該唔能夠話有咩大問題, 但係個海鮮飯呢...又乾, 又鞋, 又淡....落左好多豉油都搞佢唔掂... then, 我當然要order我摰愛的咖啡啦,我要的單品山度士咖啡.... -- 應該是單品咖啡屆中的最穩陣order吧~天啊... 前面有一食評講得對 -- 真不知那是什麼...好像啡, 好像古古力, 好像什麼也不像...我真的不能通過加奶加糖加anything 去改變那種奇怪的味道...大半杯咖啡被我浪費了... 而且還不停飲水洗口...但最令我感諷刺的, 就是在這個當口, 竟給我看見杯底下那碟子寫著的大字...上面說, 它們對質量, 是絕不會 "compromise" 的~!!真係得啖笑...但我朋友安慰我說... 或許 不會compromise的, 是指那隻碟 ....…Read More

睇到網友黎呢度食過, 話好, 所以某日我行開就試下搵黎食.因為係樓上舖, 加上我唔係地頭蟲, 所以都搵左一陣仔,搵到上樓, 當時冇咩人, 因為未到lunch hour,老闆娘真係好nice, 一黎就知我未黎過,問我叫咩英文名, 然後好溫柔咁招呼我,我order左一個蜜糖豬軟骨+雜菜+飯的set,當然唔少得要咖啡啦~個豬軟骨好腍, 好好味, 蜜糖汁好正, 但係唔夠我點飯食啊, 可以多少少汁就好~湯係磨姑湯, 幾好味啊~咖啡呢, 可能我要求比較高, 我覺得只係麻麻地, 不過都唔算太差.食ge過程中我四圍望, 見到好多人留左咖啡豆, 花草茶包等等係度,證明好多熟客都會回頭, 而且係以hae的形式逗留,呢一個小corner的確又幾warm feel,如果我係香港長住或者呢頭返工, 我都會enjoy 係度發下呆, 飲下野, 食個salad之類的.可惜後來lunch time, 有一行熟行gathering, 幾嘈下...第日搵個tea time, 我會再去~…Read More

朋友話未食過韓國菜, 於是前幾日去開利園做facial, 就約朋友去試下呢間啦.事先已經睇過食評, 訂定位,所以都心裡有數去食.去到呢, 見到環境幾好, 招呼都可以,不過侍應冇主動介紹特式食品, 同埋冇主動介紹一客肉同一套餐的烤肉的區別,等我明左套餐抵食少少後, 又唔介紹套餐裡面有乜東東,樣樣野都要我問到足先得, 太被動.龜背烤肉加水係傳統正宗做法, 唔怪咖 (前面有幾位朋友話怪... ^^"),我細細個食韓式燒烤, 以至去到南韓食都係一樣.肉類我地兩個人, 都算化身食肉獸啦,叫左一客 黑豚肉, 一客鹿肉套餐, 一客鮮魷, 一客帶子,以黑豚肉最出色!! 肉質腍夾嫩口, 味道腌得剛好,相當好味, 早知唔要鹿肉或鮮尤而食多佢一客... 呵呵,:)鹿肉好耐冇食過, 中等啦, 好似食牛肉咁, 味腌得太咸少少,鮮魷其實幾好食, 但係龜背燒起鮮魷時有少少難度, 因為尤魚卷起後,會中間難熟, 周邊易焦, 如果改為厚身的墨魚扒就會very very good,!! 唔記得寫意見俾佢添!! 帶子中等啦, 好大隻, 好厚身, 不過唔夠鮮甜, 應該係急凍之故.另外叫左個海蜇做前菜, 加上其中一客套餐有三個小涼菜,都幾好味呀~套餐包一個白飯, 一碗蘿白湯, 三個小涼菜, 一份烤肉, 同一客單烤肉差三十蚊左右,都抵食ge.因為唔太清楚份量, 所以我仲額外叫左一個熱菜,係d 豆呀, 菇呀, 魚肉制品呀, 帶子呀炒炒埋的,一般啦. 下次唔要佢.仲有一個迷你人蔘雞湯, 幾好味喎, 兩個人剛好, 唔會太多.下次兩個人食的話, 我會建議order份量 : 一客迷你人蔘雞湯, 一個烤肉套餐 (最好係要黑豚肉啊!)另外加兩份烤肉 / 海鮮就夠了.另外我地仲一人叫左一客飲品.所以埋單七百幾.過程當中侍應大哥成日唔記得加水, 鍋邊好黑啊~ 但係抽風做得幾好, 在鍋邊環形抽風, d味未升上來就抽走左, 幾好~:)…Read More
