2016/4/26 清真惠記灣仔寶靈頓道21號鵝頸街市1樓鵝頸熟食中心5號舖老豆一直對清真惠記讚口不絕,卻一直碰不上時間一起去。這天下午經過,上去碰一碰運氣。那時將近黃昏,看到伙記正收拾、清洗東西,記起清真惠記不做晚市。幸好還有咖哩買。咖哩羊腩飯(HKD 44)羊腩沿用多年的家傳手法調製。咖哩主要以咖喱膏配上三四種香料自家調製而成,微辣香口,但出奇地不會蓋過羊腩獨有的羶香,配以白飯,令人大快朵頤。咖哩牛腩飯(HKD 44)咖喱牛腩,以2.5小時燜腍再放入咖喱汁內燜至入味,與羊腩一樣香嫩。而這碗的辣椒油較多,吃開辣的朋友表示「辣得很爽」。用餐時多手翻到餐牌背後,督到「咖哩可助防老人痴呆」此標題,內文提及咖哩含有薑黃素,有助防止腦神經細胞捐傷,還真不知道咖哩可以預防老人痴呆呢。…Read More

吉壽日本料理一直對於放題的印象都不太好,但今日心血來潮想吃放題。二人8時到吉壽時,門口的姐姐主動問有冇訂位,然後給我們籌號紙,告訴我們等四張枱就到。等了約半小時便有位,當天門外有不少訂了枱慶祝母親節的,另外母親節的源故,劃一HKD258再加一。原來吉壽大翻新,座位之間較以往寬敞舒適。多了個類似自助餐形式的位置,主要是前菜,如沙律菜、酸薑、栗米等。翻新後,劃了一區作甜品,不同種類如朱古力泡芙、牛奶布甸、乳酪、豆腐花、木槺布甸等,不定時添加。飲品的種類較以往多,另外,亦設有果汁自助飲品機。8時半入座,侍應細心提醒10半要交枱。甫坐下,揭開那本放題下單本,劃了刺身、壽司、炸物等。刺身數量準確。甜蝦刺身大隻爽口,三文魚正常。吉壽的壽司款式較以往多。另外,有不少創意壽司,可試試。吉烈蠔,皮簿炸到卜卜脆,咬開,蠔熱騰騰的,溢出蠔汁。吉烈芝士波炸榴槤,未食過,淡淡榴槤味。串燒海蝦燒鯖魚整體吉壽翻新後,座位較以往舒適。食品種類較以往多而新穎,食物水準仍保持到中上的水準。兩小時的用餐時間內,不見漏單的情況,食物的數量與下單的數量相乎。吉壽的上菜速度仍然令人滿意,該是即叫即製,固沒有出現乾等的情況。 …Read More

老朋友 ─ 鹿鳴春

第一次拜訪鹿鳴春是在2011年。自那次便對它的烤鴨念念不忘。雖然還未到訪朋友介紹在中國比鹿鳴春更好吃正宗的京菜飯店,但這些年來少不了在香港一嚐其他片皮鴨,依然是鹿鳴春的好。2014年夏,再次造訪,食物服務依舊好。2015年夏,心癮起,早三日前訂四人枱,治治心癮。鹿鳴春的招牌依舊醒目搶眼。它的數十年如一日可從他的門面裝潢,以及熱心為你推介食物的老伙記,深深體會。當然,包括食物的水準!四人先來個粉皮,伙記推介白肉粉皮。白烚的薄鴨肉片,拌豉油辣椒,以及比平常粗身但更滑的粉皮,確是開胃。以往只懂叫雞絲粉皮,想不到豉油辣椒跟粉皮這般夾。再來了個賽螃蟹。以蛋白、魚肉等快炒,沒有花巧的配料。蛋白雪白泛油光,絲絲分明,連愛吃賽螃蟹的朋友也大讚鹿鳴春做得比外面的出色。放進口是滿滿的嫩滑清淡,讓人吃不停。賽螃蟹即媲美螃蟹的意思,嚐的是它以假亂真的味道,鹿鳴春做的確是出色。之後上桌的是糟蒸鴨肝。還真是第一次吃鴨肝。點這道菜時,伙記好心提醒,這道菜有酒,才為我們下單。糟蒸鴨肝,故明思意酒糟蒸熟挑選好的鴨肝。上桌時,鴨肝內裡呈粉紅嫩色,冒著熱氣,該是即叫即蒸即上桌。配以濃厚甜香的湯汁,簡直不得了,都顧不得膽固醇這回事了。一大碟的鴨肝倒是嚇倒了朋友,本以為一小碟,過過癮。所以點這個,要有心理準備。接著是京燒羊腩。份量十足,皮脆肉嫩,羊羶味十足,一定要試。羊腩內裡仍保持肉汁,味道濃郁香口,讓人欲罷不能。最後是例牌的烤鴨。師傅熟練的手起刀落,連皮帶肉片出一片片,是視覺上的享受。翻看2011年拍下師傅片鴨英姿的照片,對比下,仍是那位師傅。猶記得上年帶朋友試片皮鴨,朋友被師傅英姿深深吸引,忍不著要跟師傅合照留念。怎料,師傅擺出片鴨最有型的一面,任朋友拍,有趣有趣。烤鴨的食法,相信不會陌生吧。先把麵粉皮放在伙記預先準備的碟子上,放上烤鴨、青瓜、大蔥等,隨個人喜好,淋上海鮮醬,包起便是。不得不說鹿鳴春的麵粉皮,做到厚身但又不會過粉。試過吃薄的,包起來吃都穿掉;厚但粉身的,寧願鴨片點醬吃。至於烤鴨,不用多說吧,皮烤得依舊香脆,肉汁鮮嫩,鴨是熱烘烘的上,師傅切時,也要先用毛巾拿著鴨,以免燙傷。下單時本想再要拔絲香蕉,每次來都必定以這個作結。可是伙記說待我們吃完才叫吧。哈哈,四人來說,困真吃得很飽,吃不下拔絲香蕉。埋單時,伙記打趣說「下次先食!」鹿鳴春到底有什麼吸引力,令我一再回去,有如回老家般?要知道在香港,一出名的店,總有部份不能保持水準的,更不用說走下坡。但作為屹立了半世紀的鹿鳴春,即使備受遊客追捧,依然能保持水準,確是難能可貴。即使鹿鳴春數十年如一日,仍希望它繼續保留老店的味,當然伙記和食物亦然,這好比舊朋友知己般。…Read More

對於手工餃,有著一種偏好。眼下這個祟尚速食文化的空間下,還有多少人會閒時在家自己包餃子?到樓下超級市場買一包包現成雪藏的,不是更方便快捷嗎?之前在油麻地那頭返工,自自然在那裡搵食。有緣撞進一間小規模的地舖,專賣各式各樣的即製手工餃,尤其愛吃它的大蔥羊肉餃,以及牛肉餅。朋友聽說我偏愛吃手工餃,向我推介他居所附近的街坊餃子店。這日不怕遠,為嚐餃子,一入寶琳。地鐵站與慧安商場確實有一小段距離,但在黃昏時分走這段路,伴著微微涼風,值的。慧安商場有別於市中心泛濫的倒模商場。略略逛了一圈,麻雀俱小,是我對慧安的印象。不過朋友提醒,這些街坊舖都比較早收,要宵夜,是不可能了。平日閒來無事包餃煎餃果腹的,當然要一嘗良記的招牌煎餃。去到良記店外,看到老闆娘密密包餃子,而老闆負責收錢煎餃。以前我倒是老實地包起餃子,自己煮來吃,過過癮,近來少了。包過餃子的,總會知道包餃子不是一兩次便懂。皮要薄,餡要多,把餃子皮對折、捏好,挺像樣吧。一煮,便知包得如何。包得不好,餃子都散開,皮與餡一下子分離。只能靠一次次失敗來改進。良記的招牌餃子,即叫即煎,熱騰騰的送到你手上。餃子煎得偏平,兩邊酥脆。皮薄得透身,都可瞥到內裡的餡料。餡料都是韮菜、紅蘿蔔絲等村料,煎得香口,不太乾。讓人不知不覺吃光。老闆有問要不要辣油,不要了,想就這樣試煎後的味。可能有人會覺得良記餃子的餡過於普通,但餃子就要這樣才好吃。…Read More

又一個到士丹利街搵食的正午。士丹利街最入的大牌檔 ─ 裕興咖啡,雖然以一早賣光港式三文治較為人熟悉,但今天經過,瞧到幾桌不約而同的,一碗碗有如碗口那般大的餐腸煎蛋,「就這個吧!」甫坐下,老闆娘便過來提醒,下單起計,需時半小時。言下之意,要有等候的決心,不然,另覓只求快的地方吧。即製以半小時來說,不算甚麼,就是來吃即製,而非翻熱的。要了個全併餐($39) ─ 餐肉、司華力腸煎蛋湯麵、凍啡。老闆娘先把洗好的筷子用紙巾包著放到你面前,再而奉上讓人降降溫的凍咖啡。以大牌檔來說,裕興的咖啡算不錯。全併餐煎蛋配料為切片的餐肉和司華力腸,煎得微脆香口,混在蛋汁內煎,煎得剛好。煎蛋下層,是椰菜,撥開椰菜,就是出前一丁湯麵。味道如何?它令我回想起小時侯外婆煮麵的味道。煮麵,相信對身處於速食文化環境中的香港人來說,非難事。但,憑我怎樣用相同的出前一丁,相同的味精麻油包,就是煮不出外婆煮的味道。好啦,回來眼前這碗餐腸蛋麵。麵是煮得彈牙,即使慢慢吃,泡了湯一段時間,麵身也不怎樣淋。要知道煮淋了的麵,是什麼滋味。雖說8月頭炎熱,還要在正午時分,但用餐途中,陣陣迎面而來的微風,確是令人心身舒暢。用餐時,瞥到老闆娘掛了「全部食品已售罄 All combos are now sold out」的牌在檔口。約有兩三人剛想坐下,老闆娘便出來提醒。裕興開舖時間由早上8時,至下午1點9。如要午飯,還請趁早。檔內的櫈吸引我的注意,都是在一般傢俬舖內看到的膠垃圾桶,反過來便是。頗實用,該是放便收拾擺放吧。大牌檔是大牌檔,而非什麼快餐店,什麼米芝蓮。要知道大牌檔的特色,就是室外,就是沒有冷氣,就是不太整潔。現存的大牌檔,為28間,請珍惜,到失去才來大搞什麼悼念集體回憶,令人反感。…Read More

總會被士丹利街那排傳來陣陣油煙鑊氣的大牌檔吸引過去。即使在炎熱的中午時分,室外的大牌檔硬是有種魔力,拉你過去。今次是被座無虛席、傳來陣陣鑊氣的陳泗記拉進去。陳泗記位於中環士丹利街74號,午飯時間總是座無虛席。心血來潮,來個餐蛋飯(餐肉煎雙蛋飯 $40)!看着阿姐以生鐵鑊煎蛋、再煎午餐肉,是一種享受。阿姐把煎好的三片午餐肉放在那碟冒着蒸氣的白飯,再鋪上煎雙蛋,淋上豉油。單單是這幾分鐘,已叫人垂涎三尺!煎蛋看似是普通簡單,但煎過蛋的大概從無數次的失敗中,領悟到要煎得剛好 ─ 即蛋邊微脆而不過燶,蛋黃要流心而不過熟,並非易事。陳泗記的煎雙蛋正正煎得剛好。午餐肉煎得脆身。飯煙韌,伴着流心蛋黃汁和豉油,一大享受。雲吞麵 ─ 陳泗記的雲吞是傳統的雲吞,一隻鮮蝦與肥瘦豬肉的比例,大概是八比二。餡料比例得宜。可一試。反之,麵略為淋身,若能更為爽口彈牙,更好。湯底,一般。凍奶茶,不錯,可一試。容許隔離飯香。看到隔離桌的砵仔蒸飯,蠢蠢欲動想試,唯有留待下次品嚐。…Read More
