闊別四旬,重登馳名老店

星期六趁大姨由加國回港渡假,小姨提議到沙田龍華品嘗乳鴿,回味童年往事。登入「開飯喇」查詢訂位電話,卻見食評彈多讚少,頓然卻步。幸舅仔及姨甥女極力推薦,終可成行。幼時曾隨父親到此名店用膳,當時家貧,日常飯餸,菜多肉少,得初嘗獨食全鴿,滋味無窮,記憶猶新。餐前父與友人雀戰,孩童們無聊,便跑過店前鐵路,到海邊劃艇耍樂,轉眼四旬,鄉郊不再,只見石屎森林。今經營環境艱巨,此等老店生意定必因難,重遊此地,未敢期望過高。入座人齊,商量點菜,初定每人乳鴿一頭,家人多選原隻免切,亦心儀多款懷舊小菜。侍應卻提議化算套餐,湯餸飯俱全,再加乳鴿,配合人數。再參閱菜牌,套餐菜色一般,又欠風味情懷,如此選擇,何必遠渡前來,固堅持散叫。當晚客似雲來,全場爆滿,侍應招呼確有不周之誤,酒水久待,需親到水吧拿取。但見多位上年紀侍應,四處頻撲、落單、沖茶遞水、上菜、擺檯執檯,一腳踢,不忍責難。乳鴿先到,見狀可人,我等急不及待,手到拿來。油炸火路適中,皮身略肥,卻不燶不膩,又因全鴿上檯,皮保肉濕,汁豐味濃,軟滑可口,未幾盡嚼腹中,此際十指油脂,不在話下,幸好洗手茶缽及時送到。其他小菜,生炒排骨、西檸軟雞、魚腐雜菜窩、薑蔥焗魚雲煲、魚肚浸時蔬,分量味道,中規中矩。拙荊好粥,席上雞粥不可缺,粥底綿滑,雞味馥郁,一窩不夠需添食。主餐用畢,叫一窩招牌甜品豆腐花。片刻一碟蒸釀百花豆腐出現,甚感疑惑,查單後,知侍應弄錯,豆腐花變豆腐蝦,惹來大笑一場,但見賣相不錯,雖肚已飽,亦樂意受下。終見甜品前來,豆腐花一大窩。腐花不熱不冷,起初有點懷疑,食落尚算滑口,加點桂花糖漿,錦上添花,瞬間全清,欲添食兩桶,但傳菜員通知沽清,落單侍應不信,親到廚房提取。三句鐘飛逝,肚滿腸肥,承惠每位佰八,雖不算便宜,但地方鬆動,又不迫客人限時還檯,適合家人共聚聊天。飯後又到前園流連,拍照盡興,樂極忘形。結數忘記對單,回家才悉誤點的「豆腐蝦」不在單內,雞粥來兩窩計一窩。心中承諾,下次光顧,會多付小賬。順帶一提,店內露天處處,我非煙民,卻戥好此道者安慰,欲嘗飯後煙之樂,無需遠跑。雍雅山房已去,容龍別墅、山頂餐廳,不復前貌。香港商場林立,連鎖食府充斥市場,重效率輕人情。龍華酒店,碩果僅存,未遭地產海嘯蹂躪,希望良心老闆,多守一天,食客多點幫襯,好等老員工得保飯碗。…Read More

rick w. a very good piece of nostalgic writing , the secondary school teachers should use your text as a teaching material , if there's no copyright problem . btw , i've only visited this place once only in my 20's . it's a very good place for family gathering , but i heard a whisper that the food quality has been declining badly .
