第一次認識豪大大雞排是新假期雜誌介紹的,但始終無緣一試。可能自己對炸物的熱衷程度不及甜品,故很少推動我專程坐車去食。終於,豪大大的新店開正在我居住的荃灣,想都设有想就買了一塊雞排($25),與哥哥分享。雞排要即炸,要有心理準備等大概5-10分鐘,視乎排隊人數而定。(我排第二個都要等約10分鐘。)新店應該還在試業階段,所以選擇只有雞排,辣或者唔辣。要了一塊辣的,店員問要大辣定小辣,我反問兩者有甚麼分別 (我以為是醃料上有分別),店員回應無分別,純粹個人口味不同,在最後放辣粉時重手些或輕手些。把新鮮熱辣的雞排速遞回家,再用上10分鐘,還是熱的。起動將雞排分屍,味道是......說不上好好味,也不能說難食,只是個人認為炸的肉類好難會唔好食,但吃後確實沒有驚為天人的感覺。表層的脆粉會隨著温度下降而變得慠硬,建議即食;小辣不夠辣,始終加辣粉踉以辣粉醃是不同的。不過,未試過都可以一試,…Read More

細件但好味

專程到九龍城為食幾條街,Cookies Quartet只剩下兩包散裝蝴蝶酥,阿里吧吧的玫瑰鳥結糖早被沽清,連Ceres都未啓市。最後只到清真牛肉館買了2個牛肉餅,再到Tony Wong買3件Mini Pastries。每次經過Tony Wong都是人山人海的,今天都無例外。雖然公眾假期已過,星期三的中午時份,店內一樣擠滿人。店內只得兩名職員,而包裝時又要在每件餅的底部貼上膠紙,以防蛋糕在運送途中走位,堆積客人在所難免。於是我都快速地挑了三款Signatures,包括,Chocolate Truffle,One Two Tea 及Mixed Berries Napoleon。($38@)率先試的是 Mixed Berries Napoleon,回家後隔了4小時,擔心酥皮變腍。竟然沒有變腍,因為原來酥皮做得好硬身,得以保持脆度,不俗。Napoleon的奧秒之處是要新鮮做,然後即食。唯一可以改進的是酥皮的鬆化度。第二件試比較清的One Two Tea,即是伯爵茶蛋糕。從來未喝過Earl Grey Tea, 經了解過後,其實伯爵茶就是加入了佛手柑 (Bergamot) 精油的一種茶,而佛手柑會發放一陣柑橘的香味。Mousse入口感覺軟滑,茶香混和奶味,是味道比較輕的港式奶茶,餅底應該也加入茶的成份;柑橘味不明顯,再細嚐才發現中間一層蛋糕有微微的橙香。裝飾的Mini Macaron,質素以至口感都與法國品牌相距甚遠。不過,整體而言,One Two Tea 是三件中的my favourite。最後試最重味的Chocolate Truffle。朱古力造主角的甜品,最重要的不是師傅的手勢,是朱古力的質素,二者得兼當然最好。今次這件Chocolate Truffle,母親的評語是沒甚麼特別。同意,沒甚麼特別,但一個朱古力蛋糕難道要有芝士味才算特別嗎?在我心目中,朱古力永遠是最踏實最不做作的食材,它可以有千變萬化的配搭,但它最基本的甘甜其實已經足以叫人興奮。這Chocolate Truffle,第一口感覺單調,誰知甜味過後,那股甘味慢慢充斥於口中,打消了我覺得膩的念頭;餅的中心有一些薄脆,看不見但吃得到,為整個餅添上活力,帶輕微的榛子味,感覺良好。三件餅水準中上,期望日後在店內品嚐到傳統以外比較創新的作品。下次轉場去Smile!:)…Read More

舊同學聚會兼慶生,因為得5個人,一磅的蛋糕太大,於是選擇了美心細細系列的Mini Angel($88)。很幸運,一日前訂都有貨。在荃新天地訂,訂金$20(其實可在收貨時付全數),港鐵站分店取貨,再付餘數$68。美心方面會提供膠生日快樂牌、蠟蠋及刀。Angel Cake 配上附送的Honey Crumbs,灑上蛋糕上一同食用。一向反對連鎖大集團的餅店,貴夾無誠意,食物質素不特別好。但Budget同人數有限,Angel Cake是最安全的選擇。蛋糕質感尚算鬆軟,合格;忌廉甜度適中。整體結論:不過不失。普通的忌廉蛋糕被包裝成所謂天使蛋糕,外形是不錯,但$88,不如買街坊麵包店的,平一半!…Read More

買曲奇送禮,通常會選擇比較有名氣的曲奇四重奏或者曲奇薈。自己食或者作為款待訪客的家中常備,我會選擇價錢大眾化味道好的百事吉。祖母家住灣仔,所以每次必順道到這街坊餅店,惠顧他們的曲奇餅。今次買了杏仁條,蝴蝶酥($68/磅)及合桃牛油曲奇($48/磅)。半磅重的杏仁條/蝴蝶酥都不用$40,招待客人時只要轉一隻碟即可,同樣不失禮!杏仁條好厚身,非常鬆化,不用翻熱都好味道,甜度亦適中。蝴蝶餅甜度可以接受,間中會有一兩塊比較甜,不過純粹是表面的砂糖不均;整體味道不遜於四重奏。合桃牛油曲奇,牛油味足夠,鬆化,是穩當的選擇。整體而言,百事吉是街坊餅店中水準高的一間,難怪每逢新春都擠滿買全盒零食的人。…Read More

參觀海港城的朱古力展,由朱古力雕成的文化遺產,沒有甚麼驚為天人,反而有開始發臭的跡象朱古力不用失望因為在港威地下大師雲集各大品牌都會在展期設立短期鋪位,La Maison、Goossens、Paul Lafayet、Thomas Haas......第一間看見La Maison,買了一件Chocolate Eclair($45)可能看的人多買的人少,當興奮的我問有沒有Macaron,我見到職員偷笑我。(有善的)沒有散裝的Macaron出售,只有6件($130)或12件裝的Box Set,所以放棄了。這個品牌,一粒小朱古力都要二十,這裡裡外外都充滿朱古力的eclair算是價錢合理。酥皮在香濃的朱古力映襯下,相對遜色,但根本不重要,朱古力才是主角嘛!朱古力入口軟滑,甜度適中,合格。下次一定要到其門市參觀,試試其它產品。註: 朱古力展期由即日起至二月二+日結束。…Read More

在眾多的食材中,芝士的烹調方法可說是多姿多采,百花齊放。意粉,Pizza,火鍋,芝士撈公,芝士蛋糕......更神奇的是不擅烹飪的人,只要在食物加上芝士,就可以瞞天過海。今次買來一個芝士撻($14@)。(另有2個膠盒装,$28)沒有立即食用,因為個人認為一切不是新鮮出爐的麵包或撻,均必須以焗爐先翻熱。雖然多一個步驟,但足以令鹹魚翻生,又可讓自己在冬日得到温暖幸痛的感覺。如果在户外,沒有焗爐,我寧可選擇街坊麵包店,不斷出爐,買到熱呼呼的麵包機會較大,而且價格相宜。這是我食的美學。撻本身不大,但由於成份都是較膩的芝士和牛油,一人食用足夠有餘。焗熱後的芝士撻發出陣陣的牛油香,芝士反沒有發出香味。咀嚼時,濃而不膩的芝士味才在口腔中爆發,簡直是人間美味!雖則說芝士用處多,但好吃的芝士菜式都有一個共通點,就是要熱(cheesecakes/ desserts除外)。…Read More

第二次到Lafayet朝聖,照舊買了2件餅及2粒Macarons。一件是Rose Raspberry Macaron($40),另一件是Apple Crumble($40)。Macaron以牛油紙包裹。看《風行全世界》時,見過杜如風介紹Pierre Herme的Ispahan,現在不用到巴黎,都可以試一個外表差不多的水貨。大口咬!杏仁餅質地鬆脆,只有3粒的Raspberries好新鮮,失敗在中間的rose butter cream太多。結論是,水貨呢啫,將就下啦!Apple Crumble的肉桂味太出位,搶去了旁邊Rose Raspberry Macaron的玫瑰香,因為連牛油紙都充滿了肉桂香味。這個Apple Crumble必須以焗爐先加熱,用鍚紙包裹再焗可防止表層變焦。出爐後,可愛的母親不停問:「蘋果呢?」,更着我刮走表層的餅皮。熱辣辣的蘋果肉香甜濃郁,與外層非常配合。Macarons($15@)試了Pistachio同Chocolate。Pistachio:無開心果味,反而有杏仁味。Chocolate:味道等於吃一口朱古力,OK。個人比較喜歡上次試的薑味,但Paul Lafayet的macarons始終是我首選!…Read More

看畢各食客的食評,普遍人都對此店服務質素印象麻麻地。幸運的我,沒有踫上黑面職員。但,我撞正一個大慒員工。當日,我買了4粒朱古力(Box set, $108)同1枝棒棒朱古力($60)。需知道朱古力都是差不多顏色,我原本要焦糖味(milk-caramel)的棒棒朱古力,大慒的職員卻給了我牛奶味(milk)。重點是,更慒的客人(我)是不到食的一刻都不知錯,我甚至有一刻同自己講:「我食到焦糖味呀!」(原來是幻覺!)一向不好牛奶朱古力,因為比較甜,且奶味會蓋過可可本身的味道。所謂:「如果太多牛奶味,朱古力味一定無定企」。唯一可取的是大師以幼鹽調味,非常特別。1. 紅苺(左上角): 酸酸甜甜好開胃,pass!2. 鳥結杏仁(右上角):味道跟榛子一樣,但較淡。3. 橙(左下角):職員介紹,普普通通。4. 榛子(右下角):味道濃郁,非常好!最想試的橙酒朱古力一直out of stock。為了維護消費者的權益,我建議職員在算賬前,先跟客人檢查貨品,好似護士執完藥,都會向病人逐一講解每種藥的效用。如此便可避免執錯執留。或者,顧客醒目些,其後我發現棒棒朱古力末端有一字母記號,"M"應該代表milk chocolate。照推下去,"C"=milk-caramel;"D"=dark chocolate。下次記謹留意,不要被騙,成為朱古力慒人!…Read More
