不得了的湯—刺豚皮
感謝友人邀請,來到這裏試私房菜,一看菜單非常豐富,而當中最為驚訝的就是從未試過的「刺豚皮湯」,久聞此品可暖胃,對氣管炎、咳嗽等有一定療效,適逢秋冬時份,吃此湯最適合不過。原來友人認識此店老闆娘,同台食飯之際介紹製作此湯工序十分繁複,需先以人手拔刺,每塊4小時,並必須選用老母雞、金華火腿、上等龍骨及花膠響螺文火熬制四個小時,隨後再加入刺豚皮煨上兩個小時,刺豚皮湯才完成,滋味甘甜、鮮香潤滑、濃香無比,豐富的膠質更是入口即化,另魚皮膠原蛋白含量豐富,喝完此湯整口膠質,回味無窮⋯⋯
