晏晝同朋友約咗一齊食飯,朋友介紹一間私房菜話好好食,所以我哋一齊上去試一試。餐廳座位都幾寬敞,唔似一般中菜酒樓咁逼夾,我哋見到一個四人套餐,都幾fit老火靚湯:湯完全冇味精,飲起上嚟有一種家的感覺,非常好飲。酥炸茄子:茄子被薄薄嘅蛋黃漿包裹住,炸嘅火喉控制可以話係大師級,完全保留到茄子新鮮而有汁滲出嚟。冰鎮鮑魚:名貴就唔駛講,鮑魚煮得稔但亦不失煙韌爽口嘅感覺,最重要就係佢秘製醬汁,完全帶出鮑魚新鮮嘅味道。由於係冰鎮,食起上嚟非常清新。子薑配流心皮蛋:皮蛋有別於一般黑色嘅賣相,仔細睇起上嚟係啡色一層嘅,皮蛋味濃。如果同子薑一併放進口,好容易清除皮蛋濃烈嘅味道。秘製豬肋骨:問咗老闆,呢味餸用咗陳皮醃製,味道非常特別而且超級好味, 酸酸甜甜,加上以炸嘅形式,烹調功夫可見一班。肉質方面,豬肋骨有些油脂,食落爽口有溶化嘅感覺,但煮得好稔,非常滿足。頭抽豉油雞:用上玫瑰露去煮,雞肉新鮮嫩滑,呢度菜可以話係我咁耐以來食嘅豉油雞當中數一數二嘅菜式。釀鯪魚:雖然呢度菜唔係一啲名貴菜式,但絕對係用心之作。師父將打好嘅鯪魚肉,釀入原條魚之內,再經香煎以達致皮脆嘅感覺。咁樣嘅食法啖啖肉,冇晒食到魚骨嘅煩惱。上湯浸菜心:菜心新鮮,冇苦味。上湯浸煮後,菜心吸收哂上湯嘅味。炸鮮奶:外面炸到金黃色,十分香脆;內裏仍保持流心狀態,值得一讚腐竹薏仁糖水:養生有益嘅糖水,個個都啱,仲要好食,而且煲到d 料爆哂,用心程度值得嘉許。呢間餐廳真係值得再嚟,性價比高!…Read More

今日lunch去咗銅鑼灣一間新開嘅餐廳試一試,叫嘢食嘅時候,店員亦用心介紹比目魚沙律比目魚肉質意想不到的嫩滑,而且稍為燒過,能將本身留喺魚嘅油脂稍稍燒出來,更加感受到比目魚的味道。另外用上新鮮嘅沙律,食完完全冇油膩嘅感覺。日本白粟米白粟米真的很少見同食,除咗爽脆同粒粒分明之外,味道真係會令人10分喜歡,佢嘅甜度比普通黃色嘅粟米可以話係高幾倍,絕對稱得上係粟米中嘅極品。松葉蟹肉海膽飯松葉蟹肉新鮮可口,但更重要的是海膽味濃,用料十足,海膽嘅海水咸香充斥左整個口腔,再加上珍珠米一齊炒,一粒一粒而且非常彈牙,口感非常有趣,呢個炒飯一定要再食。聖子都幾大條,用蒜蓉及乾蔥去燒,微辣,感覺似避風塘風味,真心好味。而聖子切成一粒粒,咬落彈牙而且爽口,正!清酒煮蜆蜆肉非常新鮮,肉質且彈牙亦紮實,而用上清酒去煮,帶出淡淡酒香,將蜆肉新鮮嘅感覺昇華至另一層次。日本蛋卷(黑蜜味)甜品一直都係好鍾意食,但呢種蛋卷味道非常特別,蛋卷亦非常鬆軟。香煎鵝肝鵝肝外層煎得非常恰到好處,表皮有點燒焦嘅感覺,但咬落去非常Juicy,啲汁喺口腔入邊濃濃的遊走,原本頗有油脂嘅鵝肝但配搭上一片清新的蘋果肉,將油膩嘅感覺一掃而去,配搭認真唔錯。芫荽炒豚肉鍾意食芫荽嘅朋友,一定鍾意呢一個菜式,芫荽量多之餘配上豚肉嘅方式去炒,爽脆得來又有啖啖肉感,刺激食慾。蘋果梳打蘋果味濃又甜甜地,幫助去除油膩嘅感覺。今日午餐真係勝預期之作,大滿足。…Read More

人生第一次食 omakase,係要食豪啲嘅,揀左25道菜。黎料喇!賀年食品近新年,有黑豆,琥珀合桃,名門卷,栗子,魚仔作為賀年食品牛油慢煮栗子配枝豆栗子好鬆化,充滿牛油香味,最重要係有味得黎唔膩蟹肉水雲沖繩最出名嘅水雲,加醋,酸甜爽口,打開我嘅胃口鮟鱇魚肝蒸到啱啱好熟,口感嫩滑,加左啲酸汁,更帶出果種鮮甜味。完全唔似鵝肝咁油膩白鳥貝即切即食,好爽口鱈魚白只好creamy,食落無怪味,配埋旁邊嘅海帶食口感更豐富。師傅仲話食左對皮膚好添油甘魚薄切師傅稱為沙律汁嘅Wasabi 汁,唔係酸汁,會更清新。魚味好突出,好鮮甜獅魚鮫師傅教,先食一啖皮,食左個香脆感先,試左味先。再喺肉上面吱少少檸檬汁,會有一絲嘅清甜味。又係堅喎!成個味道變化過程真係如師傅所說蜜柑鯛壽司一食落去,咦?有柚子味嘅,好特別呀!愈食個口腔愈有蜜柑香味。用岩鹽取代豉油,更加好味赤貝壽司新鮮到仲識郁架,面頭有少少黃柚子汁,好清新,帶出鮮甜味,爽口九繪魚熟成三至四日,更爽口師傅喺飯入面加左拖羅肉,令到飯黏身啲,又有啲魚油感面頭有三文魚子,一食落去爆開有啲咸味,令到成件事味道好有層次三文魚子湯葉新鮮腐皮,好香濃嘅豆味,可以清一清個口,再繼續食海膽豆腐一啖食晒,海膽嘅鮮甜味衝擊住成個口。豆腐有微微嘅海膽味,再加埋上面嘅海膽同面頭嘅黑魚子,清甜得黎有一點海水咸味牡丹蝦北海道黎架。蝦頭燒過,再將蝦膏攞喺蝦身上。好鮮味呀~~~北海道米崎珍蠔即開即食,超新鮮。上面有醋啫喱,配合埋本身咸味較重嘅蠔,好平衡,鮮味更突出。蠔身爽口肥美北寄貝壽司師傅一攞落黎,北寄貝仲有啲自然收縮,新鮮到吖。食落去sok sok 聲,好正呀花竹蝦即場喺魚缸撈上黎,做左五成熟,爽而滑,仲有鮮甜味脂春魚師傅用火槍燒一燒舊魚,所以有輕微嘅煙薰味。飯入面加左蔥,面頭有少少炸蒜,食落有好少嘅辣味,魚味濃郁吞拿魚油漬海膽卷成舊擺入口,紫海膽味霸佔晒成個口腔,新鮮所以一啲都唔腥。好正呀油甘魚刺身柚子胡椒汁味道啱啱好,帶得出油甘魚嘅鮮味。魚質嫩滑,又厚身,好豐富鮑魚撈蟹膏慢煮鮑魚四個鐘,師傅嘅巧手刀功切到有啲波浪紋,令到鮑魚更爽口同易入口。鮑魚好甜,好香士多啤梨天婦羅好新鮮嘅嘗試,脆脆嘅外皮,一咬,士多啤梨必晒啲汁出黎,好juicy。中間又可以清一清口腔豐富嘅味道拖羅壽司師傅輕輕燒下魚嘅一面,令到魚身有入口即溶嘅感覺。再喺室溫擺多陣,令魚油更加湧出黎,拖羅更有油香面頭係櫻花蝦同金薄,嘩!好高級呀。櫻花蝦脆脆地,配埋creamy 嘅拖羅,正海膽從一大板嘅海膽筆出黎,好!鮮!甜!底下嘅紫菜天婦羅好鬆脆香箱蟹係雌性松葉蟹,全部都係蟹肉黎架,撈埋蟹籽同蟹膏,脆卜卜,仲有啲醋啫喱,好平衡蛋布甸淡淡嘅甜味,仲有啲酒香味,好滑身,好creamy舞茸菇年糕湯有種好特別嘅香味,食左一輪壽司刺身,臨尾飲返碗熱湯,好完滿哈蜜瓜一咬落去爆汁😛好juicy 好香甜第一次食omakase,有得食之餘仲可以同師傅傾計,師傅分享左好多做日本菜嘅心得,好喜歡呢個體驗…Read More

拍拖好去處。日式風格裝修,可以慢慢坐,慢慢傾計,令人舒服。食物方面,份量又好足夠。過程中仲會幫你換碟,唔會因爲d竹籤,醬油搞到好尷尬。日本唐揚池魚仔作為前菜,一點也不油膩。應該有啲炸完之後好好吸好d油。微脆,唔會炸到好乾身同熱氣,魚既大細適中,可以一口食左佢。醬汁方面:經典嘅日式沙律醬刺身壽司甜蝦:好大隻同新鮮,唔腥。呢個唔係一個低嘅要求,因為食過好多間日本餐廳唔係真係間間都可以做到咁新鮮。師傅仲好貼心咁幫我隻蝦搣埋個蝦殼個尾, 等我可以一啖入口,平日既我成日都唔知食蝦先定食飯先,衣家可以一次食哂2樣野。三文魚子:咬左好耐都未爆哂,微微既鹹味,唔腥,係幸福既感覺。係香港都可以享用好似係日本食既新鮮火炙剌身壽司第一次見咁厚嘅三文魚炙燒,都係果句令人好有滿足感。亦都有平時少食既食材,炙燒A5和牛,好鮮味同牛味,大推!另外值得一提,個日本飯好特別,用左赤醋去調,令食落去既時候口感順滑,亦都冇咗平時食壽司醋嗰種酸味燒白鱔串好有魚味,再加上檸檬嘅香味。魚肉唔會過熟啱啱好,又有啲脂肪,所以入口有唔同嘅口感同埋味道好有層次。另外,魚皮燒得啱啱好,有啲脆,但又保留皮本身嘅煙韌,作為懶人最開心係冇骨日本田米茄子豚肉串來自日本既迷你茄子,配豚肉和特製醬油,加上廚師的燒烤技巧,好好咁鎖住左d茄子既鮮味,唔會燒到太冧,有咬口。上面既木魚絲仲彈來彈,令人好有食慾,也沒有邪惡感,因為係蔬菜。脆焦糖無花果串面有一啲嘅焦糖,有少許嘅甜味,同無花果嘅少少酸味好match。入口微暖,估唔到無花果都可以整得咁好食餐廳環境:佢嘅隔膜用咗好傳統日式嘅簾子,同餐廳嘅氣氛好夾。達到防疫要求之餘,又可以製造私隱嘅感覺,若隱若現,唔會令你覺得望到隔離好尷尬。更加令你好似去咗旅行咁樣,暫時忘記咗依兩年因為疫情好多餐廳都加晒膠板果種唔舒服嘅感覺飲品方面:生啤酒,好fresh,冇咩苦澀味,易入口,配住魚生串物食,讚…Read More
