睇YouTube 介紹,順道行過嚟試下。鋪頭位置唔係旺街但都好多熟客,7點都要排隊等一下。叫了燒賣同魚蛋(各10蚊一串)魚蛋係細粒實哋有咬口少少彈果種,唔係發到大一大果種,如果再重啲陳皮味更好。不過己比好多大又鬆靠淋汁加味嘅魚蛋嚟得好至於燒賣,係傾向似金龍燒賣嘅咬口,都有少少魚味唔係完全食粉團。至於最大優點係由於貨如輪轉,唔會蒸過頭放太耐,而且添貨落蒸架前有先用蒸籠蒸透唔會有唔夠熟唔夠熱嘅問題,而且老闆調嘅甜鼓油同辣鼓油都好唔錯。我唔認為係網上堆「必食客」講到一定要專登嚟試不吃後悔果種誇張程度,不過經開真係可以幫襯下,尤其呢排天冷,又凍又餓果陣篤一串熱辣辣係好過癮,此為簡單的一樂也。…Read More

早些時間已經發現這店子,可惜放工太晚無奈向隅,今日假期經過就擇日不如就日立即上去試試。天氣不太熱就選擇坐陽台,侍應生有耐性詢問在下這位生客口味以及解釋咖啡豆選擇以及提供咖啡豆樣本。餐廳環境幾舒服唔會太迫,而且依家天氣未係火爐咁,即使露台位坐定咗都算幾自在。.點了個set 加配 coffee Buddy.Coffee Buddy 是日精選咖啡豆(呢一日係藍山咖啡)製作出Espresso Cold Brew Coffee 以及 Hand Brewed Coffee並奉上自家製作曲奇餅餸咖啡。唔太清楚第一次試都可以放心,店員會教你點樣先後次序品賞咖啡。個人覺得冷粹咖啡真的唔錯。曲奇餅餅身鬆軟 有舒量落鹽用鹹味平衡唔會太甜,唔會滯同膩,配咖啡就相當唔錯。至於焗肉醬意粉跟餐湯以及沙律味道可以。如果非要講可再進一步,對義大利麵處理,嗯,個人要求幾近乎有點偏執,香港人以往普遍食慣「煮過頭」over cooked 的義大利麵和義大利飯。但個人認為唔需要太刻意遷就,因為既然有誠意可以做到原碟義大利麵入烤爐焗,義大利麵應該可以做返意式AL-Dente (即麵條煮至外面軟化,一點半熟不生,貪其有咬口)香港唔少標榜手工義大利麵的餐廳放了很多心機做手工麵條但臨門一腳都係煮過火煮透晒變相就浪費心機。所以即使係工廠製乾麵條只要處理得宜也可以是佳品。會再幫襯😆…Read More

地膽朋友介紹說不妨吃清湯牛腩麵。.專登選擇午餐時間之後到埗,店面企理、樓底又高係幾舒服.反正平日好少到這區,點了個有齊三種牛腩的,就一口氣試晒佢。.碗麵上檯,份量幾足。.事不宜遲,飲一啖湯頭,一飲,藥材?嗯嗯嗯,那就是「藥材牛湯牛腩」,不同外面那種「白滷水湯牛腩」,外面好多清湯腩其實落左唔少滷水料而且偏咸(成本這回事你懂的)。這間用藥材煮牛湯心思放了在減低膩感,要讚一下。.今時今日,香港牛骨成本太貴,好難做到清湯腩,做得到要維皮貴到嚇人。所以基本上,沒有幾多會用大量牛骨牛肉去做湯頭的麵食如清湯腩和越南牛河。食過越南當地牛河就明白。要好多牛骨跟肉先可以煮出那種甜味。.這個加了藥材同香料的湯頭確實令碗麵和牛腩沒有太膩感覺,唯一要注意,湯一旦唔夠熱了,藥材既苦味會突顯出來。都係果句好嘢趁熱食。.佐料的蘿蔔夠䭃身、無起渣、也有甜味。.三種牛腩分別都煮得唔錯,少少肥香口夠軟身無起渣也入味配埋湯頭唔錯。質素唔錯,要吹毛求疵的話我自己偏好寧願件數少尐同無咁一口一件也希望牛腩件也要大件一點就可以更食得出唔同既牛腩位置既特色同師傅手藝。.朋友呢個介紹唔錯,無中伏。…Read More

晚上與友人聚餐,試試在觀塘APM 試業中的台灣過江龍春生堂,可能店是急急忙忙營運,我同檯那幾位吃過台灣本店的朋友就頭擰擰說食物做不到台灣本店應有水準。.小弟未試過台灣店無從比較,但都認為當晚食物水準大有改進空間,試簡單寫著分享一下:.當晚8點半入坐,但打開餐牌,有不少食品不是試業期間根本沒有供應就是沽清(例如招牌的牛肉三寶麵就湯頭可能反應熱烈早賣完而暫停供應)於是點了鯛魚便當、清湯牛𦟌麵、滷水拼盤、滷水豬大腸、魯肉飯、肉燥生菜。.首先滷水拼盤,牛筋、牛肚跟豬大腸都做到入味、炆的火候控制不錯夠軟身。所以再追加的滷水豬大腸都可以,而且放底的芽菜有好好處理無「標」水,大家值得一試。而鹽酥菇普通,不過不失。.不過,除此之外其餘都需要改進。(1)魯肉飯,水份太多,不夠香口,也令在下面的飯太濕濕軟軟沒了𡁻頭。.(2)肉燥生菜跟上面的魯肉飯問題幾乎都是一樣,肉跟汁煮太稀不能掛在菜上,將剛烚好又充滿水份的菜放在一起就「化」掉,一碟菜、水、肉碎分離淡而無味,上得太心急;.(3)清湯牛𦟌麵,湯頭不行✋,原因有二,一湯可能是稀釋太多,幾乎沒有牛肉牛骨的清甜味、牛香和膠感,只飲到蘿蔔甜味.....估計因此加了白滷水料和下多了調味反而略為咸過頭了.麵條亦煮過火太軟身,雖然牛𦟌可以接受,但吃過台灣其他牛肉麵的香港人太多,這碗麵過不了他們關。.(4)鯛魚便當.....有紫菜貢丸湯、滷蛋、清菜勉勉強強,但主菜鯛魚下太多燒汁煮,魚味都被完全蓋過。像我這種可以撈汁扒飯入口的都覺得不太可以。..其實,香港的台灣菜近年如雨後春筍,跟香港人多去台灣有關。香港人大都知道地道台灣菜有多好吃和甚麼味道,舊有掛名台灣菜求求其其無質素的在香港貴租焗賣貴情況下客人好快用腳投票走人被淘汰殺下馬來。.即使同區也有不少台式餐廳,競爭更見激烈,朋友話拿不出台灣本店水準很快會比下去。建議叫台灣本店派師傅那邊先過來穩定食物水準(肯做一定可以)。.台灣菜台灣小食只要有心機做簡單對口味一定不乏捧場客,不要一味壓成本省人減制作功夫,講到尾,食物質素才是真正招牌。.…Read More
