每年一次的米芝蓮三星結婚周年紀念

早前和先生慶祝結婚周年紀念,食過眾多米芝蓮三星餐廳的西餐廳,我和先生向來喜歡傳統粵菜對食材的追求、烹調的技巧,今次決定食米芝蓮三星的中餐廳。今次在富臨飯店的用餐體驗整體滿意,預訂「米芝蓮三星套餐」,要先網上付$1000訂金。「米芝蓮三星套餐」算是品嚐鮑參翅肚的入門版,用膳的餐具擺盤就比平時中餐廳的精緻很多,難怪達到外國人米芝蓮三星級的等級。-蛋白炒官燕伴鱘龍魚子-蛋白炒蟹肉官燕散發出幽香的芝麻味,魚子醬由品牌Kaviari 精選供應,魚子醬顆粒大、滿有口感。當蛋白炒官燕伴上魚子醬同吃,魚子醬的咸香提升了蛋白炒官燕的味道,而且魚子醬甘香的油脂令整道菜式更滑,回味無窮。-古早花膠爵士湯-是次餐單的菜式中,我和先生最喜歡就是這個湯!有螺頭、花膠、雞腳,當然少不了爵士湯的精粹:哈密瓜,整個湯清甜不油膩,每款湯料都發揮出自己優雅的香味,柔和不突顯個人味道,彼此相得益彰。下次再來富臨飯店,是一定會encore 的湯水。-富臨鮑魚扣鵝掌 伴唐生菜(日本吉品38頭)-38頭鮑魚屬貴價食材的入門版,個子雖細小、未見溏心,足見餐廳對製作鮑魚的用心,鮑魚軟滑,慢燜時吸收了雞湯、豬肉的精華,肉味十足。鵝掌烹製得軟硬適中。唐生菜瀝水的工序足夠,沒有溝稀了鮑魚醬汁,這微小的工序看似微不足道,食的時候足見餐廳的用心。旁邊的一小口飯伴上鮑魚醬汁,齒頰留香。-魚翅蟹肉燒釀雞翼-端上枱時雞翼還是熱辣辣,飽滿的雞翼外皮香脆,內餡的魚翅蟹肉塞得滿滿,雞翼的油脂滲入魚翅蟹肉中,令口感更滑溜。這道菜皮脆肉嫩,十分討好。-懷舊葡汁焗響螺-這道菜式略顯平庸,好像一下子跌落太平館的級別。響螺外型吸睛,葡汁味道滯、悶,是比較失色的一道菜。-千里醬爆關東遼參-店家的自家獨門千里醬,味道像沙茶醬、海鮮醬混合麥芽糖,可能食慣蠔油、金華火腿煮海參,這個千里醬個人未懂欣賞。遼參厚肉,遼參的針密而滿,沒有斷針,論質料來說,是上盛的食材。吃過以上油膩飽滯的菜式後,服務員端上冷泡的玫瑰單叢茶,口感清爽,清除油膩飽滯感,才吃下一道較清淡的菜式。-鵝肝鮮蝦水餃麵線-用鵝肝代替肥豬肉滲出油香,看似簡單又見餐廳有自己創新的想法。加了鵝肝後,令平時一道平民菜式,馬上升lv!-南北杏萬壽果燉雪耳 •懷舊美點-飯後一點甜,暖胃又滋潤。套餐的其他菜式都很特別,這個糖水就略顯平庸。「米芝蓮三星套餐」鮑參翅肚都有齊,餐廳的環境、服務員服務、餐具擺盤等,都達致米芝蓮水準。很適合情侶及夫婦在生日、周年紀念日等前來慶祝。食厭咗/唔想食西餐fine dining,又想食餐好的中餐米芝蓮,這個是不錯的選擇!******************************值得一提的是:富臨飯店有茶藝師駐場,茶的餐牌搜羅了多款市面上稀有的紅茶、青茶、熟茶、生茶、花茶等。除茶藝師外,其他服務員亦對茶藝有一定知識。對茶道有研究的食家來到,能與駐場茶藝師交流一下,志趣相投,是一個很好的飲食體驗。******************************上載了是次「米芝蓮三星套餐」的餐牌,以下是我們對是次三星套餐喜愛程度的排行次序:古早花膠爵士湯魚翅蟹肉燒釀雞翼蛋白炒官燕伴鱘龍魚子富臨鮑魚扣鵝掌 伴唐生菜(日本吉品38頭)千里醬爆關東遼參鵝肝鮮蝦水餃麵線南北杏萬壽果燉雪耳 •懷舊美點懷舊葡汁焗響螺…Read More

夜上海,這間見證在香港輝煌時期的老牌餐廳,原來由馬可孛羅酒店搬到K11 Musea。訂咗Restaurant Week 餐牌,人少少又可以食多幾款菜式,仲要冇麵飯類,啱晒無飯人士。涼菜拼盤有:太雕酒醉雞、香蔥拌螺頭、古法煙鴨蛋、鎮江肴肉、蒜茸拌脆瓜見證住香港80、90年代美好時期的友人點點頭說蒜茸拌脆瓜依舊是以往的味道。松茸燉嚮螺湯松茸的幽香很輕柔細緻,有嚮螺頭、豬肉粒、雞腳,整個湯清清淡淡,飲完好舒服。燉湯很有用,喝完後全晚到瞓覺時個身都暖暖的。主菜都幾豐富,有5款菜式。野山蒜原隻大明蝦,蒜絲覆蓋咗蝦,雖然賣相唔係話好靚,帶微辣,忍唔住食多幾啖蒜絲,蝦都夠大隻新鮮。蟹粉釀蟹蓋,服務員端過嚟時已經聞到陣陣蟹香味,會食到一絲絲蟹肉,又唔會太流。特式崧子魚,松子魚唔係成條魚咁上,改咗厚肉嘅石斑塊,炸得香脆,個甜酸汁都調得好。桂花蜜汁火方,一人一件的份量剛剛好。乾煸竹筍四季豆,平時我好少食四季豆,呢個四季豆炒得脆嫩,竟然令我食得晒。點心有一人一件鮮肉小籠包。甜品是生磨蛋白杏仁茶,杏仁茶超滑,蛋白絲做得好幼細,口感似燕窩,好有驚喜!友人說做出從前的水準!冇諗過個餐牌都食得幾飽,同埋菜式都幾豐富,環境服務都好好!食過K11 Musea 咁多間餐廳,最鍾意係呢一間!…Read More

星期日臨時臨急想食西餐,restaurant week 見呢間仲有得book ,咁就即book 啦,book 咗2點,早咗10分鐘到,要喺餐廳門外即係樓梯走廊位等待。見入邊啲客人離開咗兩枱,我哋都仲未有得入去,入座前等候的體驗不太好,喺樓梯附近企的感覺唔太好。入到餐廳度都未安排好我們的位置就急急點餐落單先,okay ,因為都接近2點,餐廳都想快啲幫我哋準備到食物。嚟之前已經睇咗openrice 食評,去返峇里風x 西餐的fusion ,都想試試有什麼特別。- Chef Azmi's Signature Lobster Bisque 龍蝦濃湯-龍蝦湯加入咗冬陰功。平時飲龍蝦湯會飲到中段覺得悶悶地,呢款加入咗冬陰功嘅,有少少香料的香味,同埋有啲微微辛辣,飲落又冇咁悶,幾好。我哋原先的麵包籃,俾咗遲過我哋嚟的客人,碗湯飲咗一大半先有得食啲麵包。食物一下子嚟得好急,未飲完個餐湯,主菜就已經到。 -Smoky Fresh Tuna, Shaoxing Wine, Tom Yum, Ran-Oh Egg Fettucine Pasta煙熏新鮮吞拿魚、紹興酒、冬蔭功手工日本欄王蛋意粉(+$48)-吞拿魚係有煙熏味嘅,係全熟,咬落去軟腍腍,冇想像中有一絲絲肉質感嘅感覺,同埋吞拿魚嘅份量就比較少嘅。係個紹興酒+冬陰功配搭嘅扁意粉就幾得意囉。-Coconut Husk-smoked 6 oz. Argentinian Black Angus Tenderloin, mashed potato,vegetables, Thai Tamarind Soy Sauce 6 oz. 椰殼煙熏阿根廷黑安格斯牛里(+$58)-牛里肉都係普普通通啦,薯蓉加入咗啲泰式嘅微辣香料,冇咁滯,又幾得意嘅。主菜的小結論是,肉的質素普通/麻麻哋,淨係靠廚師的一雙巧手,透過煮食技巧、食材的配搭、醬汁來提升食物品質。-Tiramisu 提拉米蘇 (+$38)-據說是用了日本欄王蛋整的Tiramisu,會見到cream的位置較橙黃。Tiramisu應有的rum酒香、cream的幼滑度全部都做得好好,正常發揮!-Banana Roti 香蕉飛餅 (+$48)-有一球雪糕的香蕉飛餅,飛餅煙煙韌韌的,夾咗香蕉喺入面。呢款甜品有好多唔同嘅層次,幾好食嘅。食完接近3點半,才知道因上場的客人遲到(35-45分鐘!)令所有上菜用膳時間都延後了,繼而令我們等候入餐廳的餐飲體驗不好。如果你問我Restaurant Week係咪平咗好多?又唔係喎!主菜除咗兩款之外,其他都要加錢,甜品得一款唔使加錢,其他好多款都要加錢。加下加下,張單就4百幾數2個人變6百幾蚊2個人😂我都明餐廳要俾平台費俾Restaurant Week平台,會俾一般餐牌賺少咗。可能就當賣個廣告費,博多啲人認識自己嘅餐廳,多啲客人,又多啲回頭客啦。…Read More

嚟到餐廳真係「嘩」一聲,張張餐枱位置都可以睇到港島區的維港風景,慢慢嘆過週末午餐,正!Vista「週末風車午餐」午餐包括:Margherita Pizza 一片、迷你蘑菇湯(份量都唔迷你)、自選五款開胃菜、主菜及一個甜品。風車午餐的精粹是自選5款開胃菜,選擇了:Burrata 布拉塔芝士沙律、烤八爪魚配鷹嘴豆蓉、迷你鵝肝撻、生帶子薄切、藍鰭吞拿魚配牛油果他他。款款都好食,最鍾意Burrata 布拉塔芝士沙律,份量大,味道都好正宗,有種處於意大利嘅感覺。藍鰭吞拿魚配牛油果他他有啲日本+西式現代fusion,好香滑,如果加多一兩片檸檬在旁,可以自行調配檸檬汁份量,味道會更清新。主菜揀咗:慢煮和牛面頰配松露薯仔蓉及青瓜、西西里海鱸魚柳。慢煮和牛面頰帶點煙靭感,不會很油膩,而且份量也很足夠。松露迷對住松露薯仔蓉咁香松露味,忍唔住不斷食。青瓜🥒原來整咗上面嗰兩塊好似薯片咁脆嘅脆脆片。灑上薄鹽香煎的西西里海鱸魚柳,帶點中式煎魚感覺,配了燴蕃茄雜菜,輕盈不油膩。最後的甜品:經典意大利芝士蛋糕 Classic Tirmaisu,份量都幾大份下。外型都入面的餡餅一點都不馬虎。$488 嘅餐牌食物款式和份量都好豐富。如果加埋海鮮拼盤嘅話,相信要由12點食到3點,唔停咁食足3個鐘😂 價錢同中上環soho 區的西餐廳相約,而呢度仲有海景睇!平時嘅工作壓力、生活壓迫,難得可以慢慢享用美食,欣賞維港風景,放空下,真係好減壓、好寫意。Vista呢間海景餐廳,觀賞維港煙花慶祝活動等風景一絕。臨走前問咗職員,如要預訂觀賞維港煙花慶祝節日的晚餐要幾耐前訂位,職員告知最好於煙花活動前一個月訂位。…Read More

想食中菜,又唔想飲茶,打開OpenRice bookmark咗嘅銅鑼灣中餐廳,就見到呢間「灃味館」,咁就俾個機會佢試吓啦。出發前嗱嗱臨WhatsApp 預約,呢日係星期日嘅午市,雖然只係兩個人嚟,餐廳職員安排咗個廂房俾我哋,仲有埋電視睇㖭。呢度係做私房菜嘅格局,都有幾間私人廂房,食飯傾偈時可以Private啲。兩個人叫咗個午市二人餐,前菜要咗酥炸生蠔,湯就升級轉左杏汁菜膽燉花膠湯,主菜要咗新鮮菠蘿拔絲咕嚕肉和上湯焗海虎蝦拌鍋巴,主食到升級咗轉做銓哥炒飯。酥炸生蠔一人一隻,炸皮做得好薄好脆,生蠔都幾飽滿,蠔肉仲係好嫩仲有蠔汁,唯一係個帶子位靭咗啲(兩隻都係)。杏汁菜膽燉花膠湯就一般般啦,塊花膠好薄好細塊,不過我哋冇預早book枱,都不能要求太多。個湯都好滑嘅,有雞腳燉湯個湯提鮮不少,杏汁就幾好唔會食到有顆粒感。呢度嘅王牌菜式之一係新鮮菠蘿拔絲咕嚕肉,又係個炸皮做得好薄好脆,裹住個醬做到拉絲感,咕嚕肉係梅頭肉夠滑帶嚼勁。呢個咕嚕肉又真係幾好食嘅,一舊食完又一舊,好食到食唔停。上湯焗海虎蝦拌鍋巴,個醬用咗上湯同櫻花蝦,好香口,忍唔住口掛住用好鍋巴沾個醬嚟食。海虎蝦控制火頭啱啱好,蝦肉仲係好鮮嫩。銓哥炒飯有櫻花蝦、帶子、蝦肉、芥蘭頭等配料。由於兩款主食太好食啦,令銓哥炒飯有啲失色。要讚嘅係,個炒飯炒得唔油,夠乾身,碟底唔會有一堆油。食完仲有兩碗糖水送添。今次午飯小事試牛刀覺得大廚銓哥喺火候技巧同食材味道配搭上面都唔錯,擺盤都吸引,已經心思思計劃下次約埋啲朋友一齊嚟試吓個主菜單的食物先。…Read More

佢係我係和富咁多間餐廳入面,食完一次後,會再去食2 3 4 5 6次嘅餐廳,湯底冇味精,可以成碗飲晒。個人唔係好食得辣,所以會揀唔辣嘅湯,豬骨濃湯同埋蕃茄湯底都好食,小朋友亦都鍾意,材料加到成碗都係,都係$100-120,夠飽!用手機點QR code攞餐後,上菜等一陣都好快就嚟到。跟餐加錢的炸魚皮細細份都幾好,不過要盡快食,放耐咗一陣,可能吸咗空氣嘅水份,就變咗冇咁脆身,淋咗啲。另外魚腐、魚片頭、豬大腸、仲有豬軟骨都好好食,豬軟骨係每次嚟都會嗌嘅食物,炆得好腍又夠入味。見到隔籬枱嘅酸辣魚片湯都唔錯,又好多魚片,而且魚肉都好嫩滑。…Read More

鐵板燒最講究的是材料及鐵板燒師傅技術,龍亭有數間分店能做到大量採購,降低成本,與同價位的鐵板燒店比較下能提升食物質素。來吃晚餐,幾乎全場滿座。餐廳內有兩個鐵板燒師傅,除了吧枱還有餐枱的客人,我們坐在餐枱位置,都看見鐵板燒師傅整晚到忙過不停,沒有停下來的一刻。可能是兼顧乘客人數眾多的關係,龍蝦和韓牛薄燒都是過熟overcooked ,吃起來乾身、沒有肉汁。最欣賞的是鐵板時令海鮮炒飯,材料十分多,碗上鋪滿蟹籽和三文魚子。其餘的食物中規中矩。我們訂了Restaurent week 的餐牌,$498/位,A5和牛+$198,加一後,2人共$1313。這個價錢食物質素尚可以接受,如果是用餐廳的原價的話就確實是overprice 了。用膳後,奇怪隔籬枱三個人食飯總數是$188,問職員才知道網上平台 有優惠推廣是海膽主題餐牌的,要喺網上平台 俾咗錢先,嚟度再加酒水就要額外付費。我哋坐餐枱位置,食完離開餐廳後發現衣物都充滿鐵板燒的味道,建議著已清洗的衣物去。(我又唔係寫得好好,openrice都竟然懷疑我是試食活動,係對我的讚賞啦。食飯張收據冇keep住,邊得閒為咗個有彈冇讚的食評特登keep住張單丫)呢度嘅鐵板燒唔係好差,但又未去到每一方面都五星級十分滿意,係屬於性價比高囉。…Read More

餐廳搬咗樓層仲搬咗入防空洞穴,喺門口拎起超過越百年的電話,穿梭過去時空轉移正式開始,感受四次元空間裡的頂流西班牙味蕾記憶。🔸Chicken liver pâté 🔸雞肝醬配砵酒洋蔥醬,雞肝醬入口絲滑Creamy,混合甜香的洋蔥醬,抹在西班牙香脆多士上,同時享受香脆、幼滑兩個質感。🔸Grilles cuttlefish with allioli espuma🔸據大廚說墨魚片控制烹調時間於30秒完成,厚切墨魚十分爽口。看似香草醬的泡沫醬汁,是番茜、蒜蓉、蛋黃醬用氣槍打成泡沫,口感如忌廉般香滑,蒜香味10分濃烈,喜歡選香味的朋友10分推薦!配墨魚片的味道聯想起中式的蒜香爆墨魚片,今次以西式的方法呈現,美感馬上提升!🆙🆙🆙🔸Roasted apricot flower chicken 🔸必食招牌菜的火焰威士忌燒杏花雞,服務員在面前以火焰威士灑在雞皮上,令整隻雞充滿酒香。睇住火焰杏花雞是觀感享受的重頭戲,絕對是打卡時刻,見枱枱食客上呢度菜式時都係不斷打卡、打卡。之後服務員會拎回廚房去皮拆骨。食雞時去雞皮去雞骨,另外雞皮會製作雞皮飯,一雞兩味。用松果木煙燻過,雞肉帶煙熏香氣,雞胸肉嫩滑,雞腿肉的都不太油 ,唔易飽滯,吃著吃著好快就清盤。🔸Crispy chicken skin rice🔸脆皮雞皮飯,同樣以松果木煙燻過,雞皮特別處理過,以蒸餾過程隔走雞油,沒有肥膩感。雞皮猶如薯片般香脆可口,雞肉全部已拆骨,啖啖肉,雞飯又油香而沒有肥膩感,食到底見到碗底沒有多餘的雞油積聚在碗底,對於吃油飯的愛飯人士很著重這種有油香而沒有多餘油剩餘的極致境界。🔸Catalonia cream 🔸加泰羅尼亞焦糖奶凍,看似cream brulee 的甜品,主要的差異就是 Crema Catalana 是由牛奶製成,而且焦糖在底部而不是在表面。如cream般乳滑,還是第一次食這款甜品。這裡的食物冇味精,食完唔口乾。環境昏暗,適合情侶拍拖及閨蜜聚會,來一次特別的防空洞飲食體驗。…Read More

呢頭難得會再三光顧的餐廳

住和富、城市花園附近嘅都知,附近幾條街的食市執咗一大半,冇乜幾間餐廳淨。而淨低嘅餐廳當中,會再三再四繼續光顧嘅更加係少之又少。是日傾盆大雨想喺附近食個lunch又坐得舒服嘅,自自然然就諗起「自然せ」 (Openrice 寫自然屋,日文「せ」大概似「也」嘅音)閑日落住大雨約1點左右,原來都幾多客人喎。今次唔洗帶埋小朋友嚟,唔洗照顧小朋友,終於可以歎個lunch!叫咗松、寿司定食,有茶碗蒸、味噌湯、仲有主角(10件壽司)同吞拿魚手卷。10件壽司當中最鍾意生蝦壽司同海膽軍艦,生蝦壽司都鮮甜,估唔到有驚喜!平時都會周末全家人一齊嚟食下晚餐,小朋友好鍾意食烏冬煮物(有雞肉同三文魚揀),一大鍋份量夠2-3人食,烏冬鍋好推薦!同埋每次都要食老闆娘是日推介嘅刺身,有一次係深海池魚,真係好新鮮,食完全晚都再三回味。…Read More

上年9月嚟食錯過咗蟶子季節,今次再食原來已經開始咗蟶子季節。問服務員姨姨先知原來5-8月就有哆頭蟶。食咗兩款哆頭蟶款式(撈汁哆頭蟶、鐵板鹽焗哆頭蟶),啲蟶子好肥美,下次嚟會再食。之前食悶咗餐牌上嘅菜式,所以冇嚟好耐了,今次見餐牌上部分食物菜式都轉咗新菜式,有啲新嘢食下又幾好喎,已經諗好一次食的菜式。好多菜式都是$100左右一款,份量適合2-3人食用,很適合人少少又想食多幾款菜式。食了很多款海鮮菜式都很好,很推薦!嚟咗好幾次,好多位服務員姨姨都很有禮貌,令用餐過程好開心。…Read More

原來Pizza Express 已經60周年,剛好在60周年推廣的最後一天來到,甜品的Haagen Dazs 雪糕sold out,飲品的熱情果氣泡茶都係sold out😅 食物都正路嘅,1個小食+2個pizza+1個甜品+2個飲品,計埋加一,2個人就要5百幾蚊,都幾貴。難怪好多香港人一放長假期就要返國內,香港消費係比較貴而且唔值,一個午餐的價錢就夠喺國內玩足食足一日,只怪香港租金實在太貴,香港的租金確實需要調整一下先挽救到香港經濟。…Read More
