<拉麵食評>大勝軒這個名字,相信對麵有一點興趣的人也會曾經聽聞過。由山岸一雄先生所創立的拉麵店,其後已成為一個華而不實的品牌。.山岸一雄先生因創造沾麵被後世人稱為拉麵之神。而他本人則在2015年與世長辭,享年80歲。.有人會話你寫食評就寫啦。講乜春野歷史,我要知你食既野好唔好食咋麻,打咁多唔關事既野做乜姐?而我想講既係,你連食落口既野都唔知係乜野黎,你好意思去評人地好唔好食咩?.又有朋友會話我d食評文字形容到好好味,但去到之後試完覺得好伏。我只可以講因我而中伏既朋友我要深表抱歉,因為我既食評唔單單用味覺出發,而係用我所有觀感,我既感受而行先。.好!講返正題。黃埔大勝軒丸一 一間老牌子店鋪中有著不少的客人樓面則只有一位年紀輕輕眼大大的小妹妹廚房中有兩男一女不停地討論著信用卡今個月用左幾多錢一入到店中只感到一個字:嘈!因為我就是坐在bar枱的正中央,可謂一覽無遺。廚師對待每一碗麵的感覺是厭倦的。就像是機械人一樣。湯頭是日本空運來的。瀝水過程其求是但,連切京蔥這簡單步驟也是用機械代努。我心想:這也是廚師嗎?我知道大品牌是有標準的,但是我真的看不過眼。過多三分鐘左右麵終於在我的面前,剛好兄弟致電,我忘了影相就大口大口吃起上來。第一啖入口都不以為意。但當我把電話掛掉後,再吃上一口怎麼會怪怪的。.相!當!之!咸!我知人家是做沾麵的口味會偏濃,但我真的除了咸和魚介之外,什麼味道也嚐不出。但好笑的是,它的湯一點也不掛湯。麵是粗身的太麵,真的頗彈牙。不知為何叉燒中會有薑的味道,肥瘦分明,瘦的地方也真的是頗難咬的。最值得讚的是溏心蛋,流心做得不錯,但沒有蛋味。一碗有形而無魂的拉麵。.說真的,如果山岸一雄先生知道這拉麵的存在,我相信他會彈起把自己的弟子殺死好讓他不要再敗壞自己辛苦所創立大勝軒的牌子。.到最後其實我都唔理有幾多人睇,重點係希望睇既人會明我所講既係乜野,同埋最後想講一句,唔好睇咁多果種收錢賣廣告既content farm.…Read More

[拉麵食評]食物是傳遞情感的媒介拉麵是留下靈魂的橋樑我一直深信依一點係世界既真理...好耐好耐未試過有一碗拉麵感動到我,而和拉麵做到依樣野。一碗令我感受到廚師熱誠同誠意既一碗拉麵。...夜晚9點係陳漢記叫左外賣煲仔飯,拉麵癮起,行過見到一堆日本餐廳,咁就逐間睇下邊間拉麵吸引啦。行左幾間見到有一間入面一個客都無拉麵店,出於好奇心同又中伏既心態入去坐底左。...全世界望全我果種感覺真係都幾怪,好彩侍應姐姐都幾熱情,落完order之後5min內到左碗麵。...麵到左之黎我只諗到兩個字:詭異.點解一碗咁既正常既麵會一個客都無?.點解會冇客,個湯頭同個麵會係有幾恐怖?..湯頭:飲第一啖,好正常喎,冇味精。.飲第二啖,好濃味噌,淡淡既豬骨。.飲第三啖,濃厚既湯頭。...麵:第一啖,哇!掛湯喎第二啖,哇!小麥味?第三啖,哇!無鹼水味呀..叉燒:一望:挑,普通炙燒一聞:哇,幾香喎一咬:油脂同肉香係個口腔內爆發出黎😍😍一個字:幸福呀...我好似從來未試過咁認真去打食評,但今次真係要咁樣先表達到我果種反應。...之後有一個好唔好意思既要求,我問待應可唔可以比一碗仔個原味湯頭我試試,廚房走出一老闆?.問我係唔係要原味湯頭,冇醬油好淡味架喎。我話係呀唔該😁..佢真係入去煮返個湯頭比我,第一次入拉麵店有咁既待遇,湯頭雖唔厚,但飲到果種熱情,決心同誠意。...之後又同老闆傾左兩句,要保持水準,就唔可以太急太趕,好欣賞老闆係香港依個社會都做到依種態度。..…Read More
