失望兼肚痾—次難忘的用餐經歷

近日在 Threads 上見到不少人推介這間餐廳,帶着小小期望而來,卻換來失望,甚至同行友人有肚痾問題,一行三人都留下難忘的「回憶」。用餐流程及初印象我們三人稍為遲到,職員先遞上餐牌讓我們選擇,最終決定選擇 $680 的套餐。閒談間得知主廚曾於「旭」任職,為追夢而自立門戶。坦白說,作為一間主打日本料理,尤其是 Omakase 的餐廳,主廚的儀容與專業形象相當重要。然而,主廚當日予人感覺略為邋遢,制服滿是摺痕,整體形象欠佳,未能給人信心。個人認為整潔的外表是對自己的基本要求。食物及準備功夫點餐後主廚才開始逐樣準備,事前應該沒怎樣準備,每道菜都即場處理,導致過程緊張,亦沒有多餘空間作調整。雖然吃過的菜式不多能記得,但有幾樣特別想提及: **鯖魚卷** 魚肉厚薄不一,刀工明顯欠佳。所見明顯刀不夠鋒利,切面及厚薄參差。**燒鯛魚前菜** 上枱時魚皮剝落,賣相欠奉。魚肉略為乾柴,幾乎沒有任何燒烤香氣,味道平淡。配上岩鹽後咸味過重,未見平衡。**壽司飯** 壽司的靈魂本應是醋飯,但當晚的飯既不熱也不冷,完全沒有溫度可言。飯粒不夠黏結,夾起時容易散開,醋味亦分佈不均,可見拌飯手法不夠細緻。用餐後感餐後同行友人全部出現肚痾情況,確定不會再有下次。…Read More

這次想介紹我很喜愛的餐廳,亦想推薦兩道9.0 menu 必試的菜式。這間餐廳早於香港手工意粉未盛行時已經開業,今年8月16號正好是他們三週年。見證住他們由1.0 menu 到依家嘅9.0。新menu 10.0即將推出,所以想趁最後呢幾個星期,推薦大家一定要試嘅Foie Gras Mini Burger和 Pigeon!Foie Gras Mini Burger以菠蘿包皮包裹鵝肝,配上香甜的雲呢拿洋蔥醬、波特酒、微苦的黑朱古力,以及鴨肉鬆,每一口都層次豐富。黑朱古力和波特酒的微苦與甜,帶出鵝肝的香滑,雲呢拿洋蔥醬更添芳香。鵝肝一點都不膩,所有材料完美融合,自9.0推出以來,最小都食過5次。另一道 Pigeon,以三成熟的乳鴿搭配 Muscovado 黑糖脆皮,外層微甜焦香,肉質極嫩滑。乳鴿肉配上濃郁的肝醬汁和甜美的紅蘿蔔,細緻地平衡了整體味道。入口先是糖衣的香脆,繼而是乳鴿的鮮嫩和肝醬的濃郁,讓人回味無窮。Menu 其餘嘅推介菜式一定係burrata 同埋不得不提嘅意粉,水準一向高而穩定,每次來都令人滿意。係因為今日食完之後有感而發,覺得一定要寫返個Review分享。想推薦兩道9.0 menu 必試的菜式。…Read More

系黃竹坑咁多個年,終於有間食得過嘅餐廳。factory event space 主要係比人租場攪event, 其次係做零售(零售店叫steak king) 同批發,依家佢地逢星期五都有個Friday steak night ,系website 度訂位,要比$500 deposit 前菜叫左個bacon wrapped scallop, scallop 食得出唔係cheap cheap 個d, 同個bacon 都幾夾,如果bacon 有多啲油香就更好另外叫左個beef short ribs , 呢個係超好食,本生個店員推介嘅時候,我都有d懷疑,食左一舊之後係停唔到口,個牛又軟嫩,外皮焦脆。 最後叫左2份Steak 揀左一個Dry age 左60日Australia M5 picanha $1450/1 kg (我只要左500g) 另外揀左個Australia grass fed t-bone $750/kg 整好之後,個chef會系你面前切牛, 佢地嘅steak 係perfectly cook 嘅medium rare, seasoning都岩岩好,牛嘅質素都好高個chef 同d staff 都好friendly , 現場有埋live band ,所以氣氛好好,裝修就應該話係industrial 。個人會覺得食過呢間應該唔會再去食porterhouse , 當然地區同環境係porterhouse 比較好,但係呢度牛嘅質素絕對高過porterhouse, 所以打算下個月再黎試其他dry age 埋單2500, 4個人,有300蚊係2支酒嘅開瓶…Read More
