痴之以鼻,一索得雞

十位食家為旺記寫食評,十位食家都異口同聲讚賞旺記的小菜,我是第十一位,還有甚麼好寫?話說有一日,天寒地凍,遂與阿癲到登龍街食「樊少皇」煲仔飯,等位之際,不知哪裡傳來陣陣酒香,經過我靈敏的鼻子一「索」之下,嘩,簡直驚為天人,原來是從旺記傳出來的花雕醉雞窩味。就是這一「索」,自此念念不忘,一定要來吃一次醉雞窩。醉雞窩是我常吃的,故頗有心得,「春秋」的水準不穩,「樓上樓」的不夠入味,其他的不要提吧!唯有旺記的醉雞窩,水準最穩定。何解多次在廿多卅度的高溫下,都嚷著要吃旺記醉雞窩?原因有二:其一,有Heart:湯底香、雞酒合一這些都不在話下。重點是,無論舖面有多忙,無論店外有多少客人在等位,鬍鬚老細都堅持自己要親自主理桌上的醉雞窩。招牌攸關,老細有自己的一套方法,令雞件煮得奇滑無比,甚麼方法?你自己試試,但可以告訴你,你起初一定會看不過眼,可是,你不要懷疑,因為用他的方法煮醉雞,一定是最好的。其二,用料新鮮:首先,雞有雞味,應該不是雪藏貨。其他火鍋料雖然選擇不多,但首選推介一定是生大條泥和白鱔片。泥細條的不要,因為不夠新鮮。大條的上檯時,魚還是「口擘擘、跳跳紮」,新鮮否?鱔片方面,是我吃過眾多火鍋鱔片中最白滑、最肥美和最鮮嫩的,一試難忘呀。如果兩個人去食,可以點半隻雞的雞窩,加一碟泥或鱔片,最後再加碟生菜,已經足夠有餘。最後一個溫馨提示:無論淥雞也好、淥泥也好,還是淥鱔片也好,都一定要依足老細吩咐,你可能會覺得他好管閒事,但我告訴你,聽話冇蝕底,你一定近廚得食!…Read More

「上菜」何太急!?

餐廳性格,各有不同。「性急」,絕對是第尾牛扒的性格。同樣,食客性格,亦是如此,有人著重菜色、味道;有人著眼環境、服務。老實說,假如你是後者,我還是強烈勸喻你不要踏足這門口半步。但假如你不介意這裡的侍應那種催三催四、趕頭趕命的服務態度,倒不妨可以來一試,這裡的牛扒,必不叫你失望。鐵板蒜蓉汁西冷扒餐,是我的心水推介。餐包仔帶著應有的微溫,配上勝利牌片裝牛油。誰會理會牛油是否有反式脂肪,一心就只想把整片牛油塗在麵包上,然後快快的把它吞噬,要配合這裡「性急」的文化吧!但才要一口咬下去的時候,紅湯亦已同時火速送到。有人說,要知道某餐廳或扒房的牛扒水準如何,只要喝一口她們的羅宋湯便知龍與鳳。這裡的羅宋湯,肉味香濃、味道帶點辣,椰菜、甘筍、西芹、青紅椒等,比比皆是,且時有牛尾骨和牛肉,露出了真身,就知道是用料十足,一定不是罐頭貨。下點胡椒粉就這樣喝下去也好,用以蘸麵包吃也好,同樣滋味。嚐過這裡羅宋湯的美味後,我便盤算得出,這裡的牛扒,一定不俗!至於白湯,你、我、他都懂得如何煮,只是金寶湯加水,不喝也罷!萬眾期待,主菜上桌了!鐵板西冷扒淋上了蒜蓉汁,淅瀝聲音不絕於耳,引得全場食客都在「左顧右盼」,心裡暗想:「這就是我的牛扒嗎?」牛扒所到之處,形成了一條約米半長的煙路,香氣雖然撲鼻而來,但亦同時提醒店主應該好好改善一下抽風系統。餓鬼如我,看到這塊牛扒就歡喜雀躍起來。牛扒面積之大,差點就足以把整塊鐵板全面覆蓋,弄得所有配菜,如粗粗的扭紋薯條、稍稍煎過的蕃茄和其他雜菜粒等,都就像被「泰山壓頂」般,默默地浸淫在香蒜汁中,默默地做它們配菜的角色。一刀從牛扒的中間切下去,柔軟無筋,「鋸扒?冇難度!」。廚師對於烹煮的技術,拿捏相當得宜。牛扒中心呈粉紅色,且肉汁豐富,4成的生熟程度剛好。肉質方面,更是鬆化柔軟。在此,我必須要強調,他們並沒有像銅鑼灣皇后飯店般偷雞取巧的採用鬆肉粉醃牛扒,因為如果用上鬆肉粉的話,牛扒肉質柔軟之餘一定是偏爛、容易撕開的,而且肉味會被徹底遮蓋,但第尾的牛扒卻絕對沒有這種情況。顧著吃滋味的牛扒之際,可別忘記在蒜汁下浸淫久矣的配菜。這些薯條和其他雜菜雜豆,可以這樣說,由於汁料都被充分吸收,所以只有一個字可以形容,就是「索」!到餐後甜品時間,是一小球雪得頗硬的雪糕,有雲呢拿和朱古力兩種口味,味道都尚可,但我本身就比較喜歡吃朱古力雪糕。談到雪糕時間,值得一提的是,侍應會在不動聲色間,在你將近吃完牛扒之際,問也不問一句就把他們手上的雪糕放下給你,因此,你基本上是沒有選擇餘地的,除非你的動作比他們快,趁他們還未有行動給你雪糕之前預早聲明想要雲呢拿還是朱古力雪糕,否則就聽他們由命吧!還記得有一次我和友人兩人在此進餐,偶一不慎,讓他們捷足先登,放下一白一啡的雪糕,其實我們兩個當時都想吃朱古力雪糕,於是就立即跟侍應說我們想要兩個朱古力雪糕......這裡我想給大家賣一個關子,就請各位猜一下該侍應有何反應?他又作出了何許舉動?答案稍後才告訴你。其實,只不過是吃一餐吧了,要吃到這樣十萬火急的,還要時刻與侍應時間競賽,實在不該再來,但這裡的食物又確實不錯,所以時時都心思思想又再來。有一次我就這樣一次過一口氣如下般告訴侍應要吃些甚麼:「西冷牛扒餐4成熟蒜蓉汁紅湯凍檸茶多茶少甜,雪糕要朱古力唔該!」夠快吧!估不到侍應會笑笑口的「串爆」回答說:「做乜咁性急呀?你咁心急,朱古力雪糕而家上好唔好?」唉!說到這裡,只能輕嘆一句:「本是吃一餐,上菜何太急?」答案是時候揭盅了。最後,侍應說了一聲:「得!」。跟手就拿走了我們一杯雲呢拿雪糕,放於鄰桌,然後又二話不說,拿走該桌一杯剛上桌的朱古力雪糕給我們,有趣吧!…Read More

全球氣溫上升,天熱的日子越來越多。約於早兩、三個星期前,冷鋒忽臨,氣溫驟降,雖然不是很冷,氣溫只得十二、三度,但心想寒冷天氣的日子都已經「時日無多」,遂與癲癲再次到蛇王濤食蛇羹。本來只想簡單地吃一頓蛇羹套餐,即一碗小蛇羹和一碗臘味糯米飯,但當看見別人的加大碗蛇羹後,卻又抵不了誘惑,最後都叫了兩個加大蛇羹的套餐。加大了的蛇羹,貫徹著蛇王濤「大件夾抵食」的文化,依然都是滿瀉的。粗條蛇肉,配合雞絲、肉絲和木耳絲等,用料之十足,賣相之豪邁,霸氣逼人來;至於味道之調配,更是其他蛇王所望塵莫及。吃蛇羹必不可少的「炸脆脆」,更是一絕:色澤金黃,入口鬆化,甜度剛好,一點萬年油的味道都沒有,必然新鮮。至於臘味糯米飯方面,不是生炒,而是飯煲煮熟的貨色。飯面略濕,臘味雖然寥寥無幾,而且切得頗為細粒,但味道卻是恰到好處。喜歡吃花生的朋友,大可以在落單時叫聲「糯米飯多花生,唔該!」檔主一定會毫不吝嗇地多給你花生。從前天冷時吃蛇羹是一件理所當然的例行公事,如今全球氣候持續偏暖,2006年更是有氣象紀錄以來全球第六最暖年份。試想像一下,全球氣溫變暖,蛇便沒有需要在冬眠前大量捕食,貯存能量,用以過冬,恐怕到時候,「秋風起、三蛇肥」這句說話將成為歷史,能吃蛇的日子亦將少之又少,所以特此勸勉大家,要好好愛惜地球,人人都出一點力,保護環境,好讓蛇和人都能夠「有啖好食」,共勉之。…Read More
