下午時段經過灣仔德仁街,目光被一道綠色趟閘吸引過去,招牌寫著「元朗合隆潮州粉麵」,正門的位置是一大片光潔的玻璃,入囗隱在小巷中,設計咁有特色一於入去試試。擁有高樓底店內充斥著一股濃濃豬骨湯香味,室內裝璜樸實無華,營造懷舊氣氛,模式卻與七八十年代冰室無異,餐桌擺設簡單而平民化,備有插得滿滿的筷子桶、豉油碟、辣椒油、魚露,還放上一疊點菜單,所有物品都很潔淨沒有半點油跡,可想言之這小店十分注重衛生。打開餐牌,單是豬雜也有九款,部位齊全,心多多每款也想試,就點個(大)豬什河粉,一大湯碗裡面有: 膶、粉腸、大腸、肺、心、肚、耳、脷、青肉等式式俱備,豬雜灼得剛好,不嚡不韌,胡椒香料湯底撒上唐芹、芫茜、青葱,芽菜做成一碗鮮甜的豬雜河,蘸上魚露辣椒油把內臟的鮮味引發出來。妙極!餐牌上還有很多特色小食,可惜我已經好飽無法再試,唯有下次再會吧!…Read More

燒臘是香港人生活中不可缺少的東西,每天中午,不知有多少香港人是以一個燒味飯盒來解決午飯的。今天我也不例外來一個燒味飯吧![燒臘]太子附近有好幾間著名燒臘店,今天揀選了「齒留香」燒臘掛在明檔櫥窗內,讓人挪不動腳進店細細品味。明檔廚房可以清晰看見師傅的操作過程,一根根完整的燒肉在師傅完美的刀工下,被斬得大小均勻,因為表皮酥脆的緣故,在切的時候還能看到四處飛濺的脆皮屑。藏身於太子界限街食店眾多一段,*店面裝潢簡潔,明亮燈光襯托暖木色系列桌椅和黑鏡牆面,牆上掛一些簡單趣味的粵語標語:全區最優質燒味店、馳名叉燒·我係No.1、再三回味燒味飯等.......今次點了肥叉燒肉飯,服務員送上個碟橙紅色瘦瘦的叉燒柴柴的肉質,真是嚇得我目定口呆!立即與服務員說係唔係油檔搞錯咗呀!你睇吓張單寫着肥叉燒肉飯喎,服務員仲問我係咪要換,如果啱食我就唔使指明要肥叉,唔該。我個人認為叉燒就是要帶點肥肉,燶燶地油油亮亮混合着蜜糖才好味,剛巧油檔師傅捧著一大盤剛燒起香噴噴叉燒經過,心諗會唔會用剛燒出來的,因為剛燒好的叉燒特別甘香鬆化,果然不負眾望,叉燒唔算好腍身,食落無渣又唔嚡口,也有肉汁燶邊位焦香,味道方面,外層蜜汁唔太甜,肉質略嫌鹹咗少少,適宜伴飯吃。脆皮燒肉醃得入味均勻以其肉松化、香脆,還有那股焦香,其口感富有層次感,佐酒送飯一流。堂食奉送餐飲及老火例湯,用料足,夠火候,亦是賣點。(*大部分燒臘店都有同樣問題,地面好跣!)…Read More

路經旺角砵蘭街時令我想起友人在社交網絡上曾經提及這小店,招牌上寫著 Phở Việt Authentic Hanoi Cuisine 越發地道河內料理,舖面裝修設計很日式,向老闆查證原來之前是間拉麵店,店不大裝潢雅致,環境乾淨店內大約可座二十人。入坐後店員奉上竟然是滲著椰香班蘭味的清水,從這些細微的小節,可以想像得到這小店嘅飲食一定有要求。餐牌不是太多選擇,首先點了杯越南柑桔梳打及越南熱情果梳打,梳打特飲都是即叫即製,水果用人手壓爛,再加入薄荷葉,超夠氣~好清爽。越南脆春卷香脆可口,配上Nước chấm碌冧汁將春卷包上一塊生菜及九層塔一齊伴食,這樣吃法唔會太熱氣,更加美味。河內越南法式三文治,是最能代表法國殖民地色彩的越南菜之一,長長法式麵包外面皮夠脆,不太硬,如果太硬吃下去嘴會又爛又損,配上多種餡料煙韌有咬感,口感之豐富令人垂涎。河內牛柳牛丸粉,河粉幼細軟滑,配料分量多,有芫荽、鵝蒂和香草等....... 昨天在網路上看到編輯食評|難得安靜 旺角抵食酒店中菜廳(鷹巢Eagle’s Garden) 立即經網絡訂了下午茶時間去試試,14:20到了旺角希爾頓花園酒店,餐廳位處二樓,一打開lift門木口木面Reception就安排一張中間近厨房出入位置給我們,當時看到有幾張近窗邊位置都set好,雖然窗外景色一般為什麼不安排我座呢? (*心中盤算一定有問題,欲知後事如何請閱下去⋯⋯)最後我還是要求轉換!但並不是轉去已經Set好的二人枱,竟然是要我等等.....安排一張近窗邊未清理好的四人枱。終於可以放鬆心情安坐了,翻開餐牌,具特色的菜色不少,但部份須要預訂,還有有多款點心及鷹巢下午茶套餐十分抵食;前菜可選一- 足料老火湯 / 一口厚叉燒/ 蒜泥小黃瓜 / 香蔥海蜇頭點心可選三- 黑松露素菜餃 / 水晶鮮蝦餃 / 香菇蒸燒賣 / 蜜汁叉燒包 / 蝦子腐皮卷 / 什菌香煎包飯、麵五選一- 高湯雲吞麵 / 砂鍋乾炒牛河 / 味菜豬頸肉炆米 / 瑤柱蛋白炒飯 /大澳牛崧炒飯當下單後經理來說叉燒沽清!一間酒店中餐廳14:30叉燒沽清,仲諗住嚟試主廚名菜叉燒,真係唔講得笑唔通真係咁巴閉!帶點失望惟有轉其他菜色。我就選定了- 足料老火湯(章魚煲唐排)、香蔥海蜇頭黑松露素菜餃、水晶鮮蝦餃 、香菇蒸燒賣 、蜜汁叉燒包、蝦子腐皮卷、什菌香煎包、砂鍋乾炒牛河、大澳牛崧炒飯及是日甜品紅豆沙。味道中規中矩,把環境及價錢計算在內,也值得一來。*但令我感到莫名其妙就是用膳期間,酒店F&B職員連同月餅外判商六個人在我隔邊枱開會,心諗唔係掛唔通酒店內部沒有會議室,全個大廳裡只有三枱客,周邊咁多枱為什麼偏偏選中我隔離,會議聲浪滔滔不絕另在場六位成員都收聽清晰,若果我係敵對供應商個六十分鐘議程(๑˃̵ᴗ˂̵)咁就太浪費了。作為一家國際酒店管理人員,真係要好好檢討一下。…Read More

最近透過傳播媒體報導中,提到灣仔新近開了一家潮洲菜館,大廚以前在潮州菜館工作了30多年,經驗豐富不論小炒夠鑊氣,巧手功夫菜,同樣出色。早在一星期前已經訂枱,服務員說用餐分兩段時間18:00-20:00 / 20:30-22:00 是晚就同班朋友試試,一到步就看見鋪面幾個大酒櫃,一眼看到很多列級酒莊餐酒,心裏想到菜館老闆一定是愛酒人士,所提供酒杯及醒酒器絕對值得一讚。經過大門上一層樓,用餐環境簡潔清雅枱面上已放了高腳酒杯,包房還有個小露台,對吸煙人仕來講是一大喜訊。因為同行友人酒量略淺,我只好準備了一支舊年份波爾多二級裝Ch. Palmer來配合各款美食,但看其餐牌,至少也有上百道菜式,而且有很多都是心機菜式,並非周圍都能夠吃到。較早時服務員蔣小姐已經幫我留了普寧豆醬雞,寸金紹菜包;其餘就分別點了:滷水拼盤,九肚魚烙,川椒蝦球,胡椒豬肚湯,水瓜煮魚鰾,蠔仔粥 ,沙嗲牛肉炒河,糖醋麵,清心丸綠豆爽及母皇壽桃。原材料新鮮,豆醬鷄甘香鮮嫩,紹菜包清新開胃,滷水味醇和不搶(賣相不佳),魚烙鮮嫩多汁,蝦球晶凝通透,鮮豬肚濃湯香滑,魚鰾吸收汁料極之鮮味,蠔仔粥火候剛好,炒河兜亂妙極,糖醋麵金黃不膩,清心丸綠豆爽清甜潤喉,母皇壽桃鬆軟綿綿。還有很多菜式想試可惜用餐時間太少只有兩小時!唯有下次吧。…Read More
