【龍門客棧】意外失手?!鹹雞真的好鹹喔

雖然曾聽說龍門客棧的客家菜不俗,但一直都未有嘗試,今天終於再路經店門,終於下定決心進門一試,果然有意外「收獲」!😄店鋪不算很大,但座位舒適,不感局促;配以香港舊照、屋邨插畫,確有一份地道的感覺。坐下後,我們點了兩份午餐,分別是咖喱薯仔牛坑腩和客家生醃鹹雞;另外點了兩杯這裏獨有的月桂奶茶。咖喱薯仔牛坑腩可謂真材實料。肉的份量合乎其分,每一件切到可一口吃下的大小,方便女士進食。牛坑腩肉質軟嫰而不失嚼勁,在獨家調配的咖喱包裹下,滲透濃郁的肉香;二者完美揉合,相得益彰。薯仔看似是配角,但絕不馬虎。大小與牛坑腩相約,軟硬適中,盡得咖喱和牛坑腩的精華!客家生醃鹹雞看似平凡,但一試便知廚師的心思。雞皮爽彈,皮下脂肪不多,不會膩口。份量相當,肉質嫰滑,鹹香鮮美,下飯一流!當日剛好獲贈新菜式:麻辣牛筋小食一份。素來不太嗜辣的我,起初有點卻步,但一試就「後悔」;後悔我對它有過猶豫。牛筋富有膠質,只消輕輕一咬,便在口中融化。自家製麻辣汁,初入口有一點辣意,隨即舌頭被麻香佔據,但不會過份停留,非常「過癮」,令人欲罷不能。飯後的一杯月桂奶茶,是整頓飯最美好的終結。呷一小口,茶香四溢,甘、澀、醇、厚,互相交織,加上月桂獨有的辛、苦,平衡奶的厚重,同時增添層次。總結:本來只抱着一試的心態,但這一試卻有意外的驚喜。相信不久將來,會再前來拜會。…Read More

幾年前朋友推介NUTMAD這一間餐廳,表示它的菜式獨特、美味,配合店內的咖啡,可謂一流。可是,由於工作忙碌,一直沒有動身前往(連餐廳搬到觀塘也沒去過)。及至最近路經,便在中午時份抽空試一試。先說一說餐廳裝修。風格承襲工廈韻味,餐廳面積不少,不怕有壓迫感。閞放式的廚房,客人偶爾可欣賞廚師烹調食物的過程(主要是煮意粉的過程)。餐廳整潔乾淨,不過不失。可能是因為星期日的關係,在餐廳等了約三十分鐘,終於被安排入坐。餐廳的菜式不算多,可能是想走專一路線。我們當日點了三款菜:墨西哥烤餅(Quesadilla)、煙燻豬豬卡邦尼(Piggy Carbonara)、鱸魚(Sea Bass)。先上的是前菜墨西哥烤餅。入口是有點像孜然味,另帶些微酸辣;墨西哥風的沙律醬和蕃茄莎莎,混和芝士奶香,整體味道尚可。再來的是餐廳的特別推薦:煙燻豬豬卡邦尼。餐牌上標明:「不含忌廉,但含有生雞蛋和芝士調配而成的新鮮蛋汁」。想必這注明是想表達餐廳的卡邦尼是依照正宗意式的做法。意粉入口有一種蜜糖的甜味,完全沒有任可芝士和蛋味可言(嗯,當場它真的沒有放忌廉)。我們不禁心生疑惑:「真的嗎?這真的是卡邦尼?」研究了一會,我們發現原來餐廳沒有將芝士在煮的過程中混和在意粉內,而是將芝士製成芝士脆片(Parmigiano-Reggiano Crisps),在煮好後直接放上。另一個令人感困惑的是:究竟意式煙肉(pancetta)去了哪兒?說實在,整碟意份真的吃不到任何意式煙肉的油香味,反而令我意外的是有中式蜜汁叉燒味。我真的逐件肉吃,原諒我可能錯,但我真的吃到叉燒的甜味和質感。我不肯定餐廳是不是有意創新,所以煮了這一種蜜味卡邦尼。我個人覺得它整體就只是將叉燒湯意變成叉燒燴意。不是不好吃的(我相信是真的有人喜歡),只是強差人意。(P.S.:當下我真的有想過問餐廳可否進廚房自己煮。)最後一道菜是鱸魚。鱸魚配以豆漿、黑醋上碟;豆漿會隨時間凝固(此點侍應上菜時有作介紹)。做法是有創意的,但實在忽略了不同食材的特性。鱸魚本身味道偏淡,以黑醋相伴,必定喧賓奪主(已經不說它用的鱸魚是冰鮮)。另外上碟溫度不足,吃到最尾(或遲一點吃),會有一絲魚腥味。(P.S.:這道鱸魚標價$250,但質素如此,突然覺得自己這一頓飯很奢侈。)…Read More

話說去到北角,打算挑一間在海邊閒坐。在地圖上見到這間叫「野草」的咖啡店,感到好像很特別(被名字吸引),於是便前往。甫抵店鋪🤦🏻‍♂️真的很粉紅,全間都是粉紅;當時真的給它嚇倒,若非有人陪,我猜我未必會進去。抱着既來之則安之的心態,我們點了兩款雪糕(其中一款是冧酒紅菜頭)、兩款甜品(蝴蝶酥、意式杏仁餅),和一杯洛神花梳打。甜品和飲品說不上很特別,不過杏仁餅確實不錯,沒有像砒霜般的杏仁味(我平日抗拒),也沒有核桃酥的熱烤帶來的「熱氣」感,入口鬆脆自然,令人欲添一二。最令我驚喜的是它的雪糕,一者是用本地農場的新鮮材料製造,二來款式多為坊間少有,三者口感和味道一流!(不作累述,請親自前往)…Read More
