神秘私房 自定價錢刁鑽料理

私房料理一向難發掘,就好似呢間咁,連IG都冇,門口純黑超神秘,就算經過都根本唔會知道,多年黎全靠熟客做起。Tailor made menu ($600-$1500/位)除咗用上稀有魚料,仲有主打刁鑽獨有菜式,同埋各種海鮮料理,刺身主要都係自家手工熟成,而田中呢到就大概$1000-$1200。前菜:螢光魷魚、北海道鮟鱇魚肝、菜籽花刺身:流心斑馬瀨尿蝦 (兩位用)用上巨型斑馬瀨尿蝦,而且熟度啱啱好,做到爆膏得黎流心,而且瀨尿蝦一向鮮甜到極,又特別鮮嫩,絕對必叫。北海道象拔蚌 極新鮮象拔蚌,原條前中後切上,原汁原味只有極輕調味,三個部位既有鮮甜,又有口感爽口,令人一試難忘。北海道小樽八角魚 (熟成4日)相中魚鰭非常霸氣果條 (圖6),就係八角魚,而且仲有稀有嘅特鰭,睇外形都覺得刁鑽,鮮味特別濃郁。其他刺身:長崎深海池魚 (熟成5日)三重縣鮫魚 (輕微火炙、海鹽)野生油甘魚 (熟成3日)火炙竹籤魚 (熟成5日)火炙北海道銀鱈魚紋甲魷魚卷赤海膽而其餘刺身主要都係熟成,全部由師傅手製,冇經過機器熟成,熟成後脂香更濃之餘,分解纖維後肉質更軟嫩,而且呢到真係少有地做得專注。壽司/卷物:九州鰯魚磯邊卷左口魚壽司 (放上左口魚邊)醋鯖魚卷呢到本身就主打刺身,壽司唔多(不過都超飽),但同樣令人難忘,例如醋鯖魚就用上一晚風乾醃製,酸度同油香都非常豐富。風乾九州產南瓜沙律生燒巨型長虎蝦特意用上巨型長身嘅虎蝦,燒到剛熟,啖啖鮮嫩,但醬汁更加係重點,用味醂拌上日本蛋黃,濃郁又提鮮。四年濃湯特製海鮮飯師傅開店四年以黎,每日用上各種蝦蟹、瀨尿蝦、鮮魚骨煲成湯膽,而且基於食材變化,每季味道都稍為唔同,田中第二次黎,今次就特別鮮甜。甜品日本冧酒提子雪糕、朱古力Brownie、柚子芝士蛋糕Sake亦係呢到重點,師傅本身就係唎酒師,睇到櫃上無數空樽就知,不乏精挑細選,絕對值得試試。…Read More

入口即溶三角嫩肌🥓招牌壺漬封門柳🍗少有靚赤雞!-出邊任唧乳酪雪糕越黎越少,好多都變哂普通雪糕,不過都唔係重點,田中主要係想Show off一下,睇下尾圖唧到幾高,如有更高請DM挑機。而呢間燒肉走中高檔路線,價錢範圍超大,高級可以上到黑毛和牛,同時都有最平$298起,亦有一定水準,啱哂想食燒肉放題,又唔想太廉價(或太伏)嘅朋友。-🥓牛肩胛肉海鮮放題 - 54品 ($298)🥩日本九州產黑毛和牛海鮮放題 - 117品 ($688)120分鐘任食,而除咗最平同最貴呢兩款,中間仲有三個Level,安格斯牛/澳洲和牛都有,就算唔食最貴果款,都有超多靚牛。❇️而117品真係超級豐富,除咗重點日本黑毛和牛,仲有任食原隻生蠔(燒)、超多靚海鮮、日本赤雞、甜品小食等等。-🥩牛肉(重點):🔸究極日本和牛三角嫩肌🔹極上黑毛和牛薄炙牛肋肉、角切、牛肋條、牛肩胛、牛小排和牛都有成6款部位,而三角嫩肌最肥美,接近入口即溶,沾埋日本生蛋壽喜燒汁,牛脂香同蛋甘香混和,真係超誘人邪惡。🔸煙燻壺漬封門柳 (醬油味)被稱為鎮店之寶,價錢第二抵嘅LV.2就食到,原條封門柳放入壺漬,外形超霸氣,肉質醃腍又味道濃郁。🔹嚴選牛肩里肌肉🔸特上肩胛翼板肉🔹霜降一口牛而就算最平LV.1嘅呢3款,都唔係普通款式,靚牛肩胛全部任食,肉感脂香平衡。-🦐海鮮(重點):🔸日本宮城縣原隻生蠔 (燒)LV.4已經有任食燒原隻生蠔,睇相都見飽滿肥美,而且鮮甜唔腥,燒到剛熟真係超Juicy嫩滑,真係係咁掃入口。🔹原隻鮑魚燒 🔸照燒帆立貝 🔹醬燒廣島蠔🔸清酒煮蜆 🔹大海老 🔸蒲燒鰻魚田中數過海鮮超過10款,而呢到幾款係其中必食,帆立貝鮮甜又燒汁醃過,廣島蠔同樣飽滿,鮑魚海老更加係大大隻超正。-🍗其他肉類(重點):🔹赤雞雞腿肉 (醬油/雙重芝士)🔸炭火赤雞燒除咗大路豚肉雞肉,赤雞絕對係必食,肉質超有驚喜,肥美香嫩Juicy,田中食得仲多過和牛,而雙重芝士更加係超邪惡 (亦可以用其他肉拉芝)。🍨呢到仲有唔少小食料理,例如邪惡炸雞、海膽忌廉流心餅,而甜品方面亦有唔少,除咗自助區同任唧乳酪雪糕,仲有少見嘅燒朱古力棉花糖。…Read More
