[尋味。中環。法國藍帶 Le Cordon Bleu @ Central, Hong Kong] 中環小巷處處是特色的首飾家品甜點屋,擺花街最近添了新成員RaRe Restaurant,晚餐頭盤是三文魚蓉伴檸檬汁凱薩沙律,很清新醒胃,法包配上自家橄欖油和黑醋也很美味。這裡主打手工意大利麵,卡邦尼一點也不馬虎,fresh pasta伴上濃厚的煙肉磨菇和忌廉汁,水煮蛋纏綿,灑上大量的Parmesan,芝香味濃,大概配料曾以香檳煮過,意粉又有一點點酒香的後勁。另一款main的紐約客牛排也很鮮嫩且肉汁香濃,我最愛它的薯蓉,很軟滑。The new RaRe Restaurant in Central, Hong Kong, just walk from Lan Kwai Fong in 2mins. The starter salmon terrine with lemon dressing is fresh enough as an appetizer. And the bread crisp with home-made olive oil and vinegar should not be missed.Famed by the house’s hand-made pasta, the carbonara reveals the piece of art of authentic Italian. The fresh pasta presents with creamy white sauce, bacon, mushrooms and poached egg, topped with parmesan. 30零蚊足料30件餸豬膶通唔該!

小時候逛深水埗,走完玩具街後,必到維記食一碗豬膶麵,喝一杯凍檸茶。簡單的一餐,這些年來,店裡的面貌和風味依舊沒變,令人久不久就掛念起來。簡單的最原始的茶記裝橫,圓形摺桌,圓形膠椅,白磚牆,掛風扇,沒有花巧的擺設和華麗的座椅,因為,這裡專注賣的是:產品。這些的粉麵有四類:公仔麵,通心粉,米粉,意大利粉:全部可配搭簡單的餸料,簡而言之,單拼$30,雙拼$33,加底補$22,任君配搭。豬膶麵最有名,也是我最愛,每次必點。點了一碗食極都有餸剩的豬膶牛肉通(大概加起來有30件餸?),湯底也有濃濃的豬膶味,也許己差不多打烊時間,豬膶久經熬製,質感有點乾硬。值得留意的是,這湯以香濃豬膶味為主,不覺得有太大薑䓤味或者一般內臟湯的苦味,這推敲店家處理豬膶也該頗為細心的(豬膶是排毒的器官,烹調前都需要用一小時以大量清水浸泡,漂洗,靜置後沒有血水流出才算把毒素清洗掉,並去除成品的腥苦味)。簡單一份閒日收工的速食晚餐,每人埋單30零蚊,慳水慳時間只求性價比幾好。…Read More

是日外出工作,來個KFC總部下午茶。早前有食評也詳細介紹過這邊的培訓設施和餐廳佈局,我就不重覆了;倒有一些很想分享的: Open kitchen 開放式廚房KFC這裡的收銀處在一樓,真正用餐和取餐處在二樓,少了收銀處的遮蔽,開放式廚房一覽無遺,很乾淨企理,而且所有食物都列得并然有序,店員也很有條理分配食物到不同的盤子。用餐處地面以黑白磚斜鋪,添幾分時尚感又保留KFC signature color. Juicy熱騰騰蜜蜜燒雞翼雞翼在這家店是燙手的!足見這家flagship store保溫爐的功力。以蜜糖燒烤的雞全翼,juicy很入味,不過可能是一早烤定的,雞皮都顯得略有收宿。 就這麼一份下午茶廳,供我小歇,思緒總理一下今天的會議和下次的工作方向。偶爾,我也會放空靜觀身旁的學生們和長者們的閒聊。 香港地百物騰貴又連年通脹的年頭,還有連鎖點供應貳拾零元四款小食連飲品的茶餐,可謂買少見少;仍有這個公共空間,特別是小社區的課後學生和老人家,一個廉價可以休歇的地方,該珍惜。…Read More

意大利語的Amico有”好友”之意,1890更有vintage的感覺,這晚與好友在此談心,猶如繁華鬧市中的放下浮囂,進入19世紀意式小酒吧的情調懷抱。 晚市餐牌有3個:à la carte, dinner set, drinks menu. Drinks menu cover了紅白酒氣泡酒cocktail和啤酒,大約每類都至少有4-5款可選,挺讚的。Set dinner ($128-$268)包括Prosciutto沙律,主菜,甜品,餐湯/咖啡/茶。我們二人點了BBQ Pork Ribs 和Pork Rack,一湯一奶茶。 燒烤醬汁焗豬仔脾Pork Ribs with Barbecue Sauce(Set Dinner Price at $188)上碟時,每件Ribs已經切開,不須費功夫在左切右切,心思位喎,讚!肉質鮮嫩,juicy而沒有燒到乾乾的感覺,可見烹調時間和溫度控制剛好,配上BBQ sauce品嚐也非常匹配。 加拿大豬鞍扒Canada Pork Rack(Set Dinner Price at $188)加拿大豬肉以無添加著稱,這件厚切豬鞍也不例外,肉質軟熟,大概香煎後再焗,保留了豐富的肉汁。唯一美中不足是這個醬汁,橙橙地色帶有果蓉的外型,淡淡的食不出是甚麼味道,是桃或柚子嗎? :)意大利風乾火腿沙律Prosciutto Ham Salad(Part of Set Dinner)羅馬生菜,狗芽菜配上Prosciutto Ham及日式芝麻醬,我最愛的組合。蔬菜細細切件,每一口更能專注於蔬菜的爽脆和鮮甜。 南瓜湯Pumpkin Soup(Part of Set Dinner)南瓜香且質地幼滑,食落仲有粒粒南瓜蓉呀! 今次我們兩小妹食兩個Set都飽飽的,下次一定要試埋cocktail先得呀!(cocktail list的”求其特飲”和”垃圾桶”這些有趣的名字,試點該也挺享受的) …Read More
