星期日去新蒲崗吃brunch,路過看到一家裝潢港風的新店,便入去試新。點了二個套餐均附送青瓜小吃和一杯雞湯(我想是浸完雞的湯奉客)味道也是濃郁有雞味。1.足5両香煎肉餅煎蛋飯大澳咸魚香氣樸鼻,肉餅份量十足結實彈牙,有少量薑葱油放飯面配上甜豉油,好吃。煎蛋也可以選太陽蛋,反蛋,或熟蛋。2.古法去骨沙薑雞配菜飯冰鮮雞也做得肉滑,少少紅,配新鮮沙薑蓉味道不錯。但下面的汁稠,不合我個人口味。下次試試醬油雞看看。有免費的橙汁蘋果汁附送自家製的辣椒油也不錯。下次晚上去試試他們的煲仔飯和小炒。是一家可以回頭幫襯食店。…Read More

星期三天氣寒冷,好友相約太子冬至聚餐。太子夫婦擋小店,招呼殷勤,食物水準不錯。冰鎮生腸粗壯豬生腸沒有上色調味,可知厨師對食材的信心;簡單灼熟,襯上葱絲紅椒放置冰塊上。腸頭長切開四,腸身粗切段,醮上Wasabi 豉油,神奇的爽脆可口,不錯的前菜。招牌碌鵝,鹅掌翼碌鵝和掌翼是分開order的,一樣的味道,不同的口感。鵝肉嫩,掌翼淋滑,果然是出色招牌菜。鵝汁好味,點了粗麵拌鵝汁,灑上葱花吃,妙絕。個人覺得甜些小可能更野味好吃。白灼海中蝦本來預定欖角煎大蝦的,但老闆娘話大蝦不靚,所以改了游水海中蝦,白灼蝦鮮甜爽彈。豉汁蒸白鱔蒸鱔中規中矩,味道可以,但這菜一定是鱔材料決定一切。筍蝦炆豬腩肉以前過年節,媽媽一定炆筍蝦豬肉吃。點這菜是懷舊吃情懷。味道不錯,豬肉炆得夠身,筍乾有咬口。葱油雞用上新鮮雞,價錢當然比大路冰鮮貨高,重雞味,鮮雞雜very good,但胸肉便有點粗柴。臘味糯米飯蒸好糯米飯再配上臘味炒。糯米軟熟,粒粒分明,灑上炸花生,葱粒,好吃。反沙芋頭條芋頭粉糯,可以的總是覺得小店簡單裝修,吃人情味和厨師手藝。這店可以再回來吃。…Read More

二十多年沒有再幫襯創發,今天特意約了朋友來懷舊一下。2層店,只開放地下,生意沒有像機場在的時間暴滿,但8点也是滿座的。坐下侍應姐姐便放下潮州功夫茶和4個小食,炸花生(脆),生咸菜(咸),豆腐干菜脯,炸魚仔(香脆好吃,骨也可以吃掉),前菜好像收了10元一枱。猪腳凍這菜式在坊間已很少供應,入口膠原重,煙煙韌韌有嚼勁,淡淡滷水味道,好吃。滷水鵝片鵝腸鵝片入味不咸沒有渣,腸帶些肥糕新鮮爽脆,不錯。可惜碟頭小了些!潮州紅燒翅翅伴以小碟莞茜,但翅湯不夠熱便不加入進食。翅足湯稠濃郁還有些銀芽另口感更皆,這價錢也底食。炸豆腐豆腐質感跟平常吃的不一樣,比較綿密,入口軟糯,外皮乾身香脆,醮上韮菜鹽水吃,絕配。炸三棗(蝦棗,蟹棗,墨魚卷)炸物不油很乾爽香脆,味道香口,墨魚卷加入了馬蹄粒特別出色煙靭爽口。煎蠔烙蠔餅是煎不是炸的,蠔仔大隻,新鮮沒有腥味,蛋香濃郁。炒豆苗豆苗豬油青炒,脆嫩,但份量很小。楜椒咸菜豬肚湯很重楜椒味,暖胃,不吃辣的可能吃不了。豬肚和粉腸才料新鮮,沒有豬騷味,入口軟淋,也是必吃。反沙芋條反沙芋條可以逐條點,7元一條,大約半小時便從廚房出鍋,待應捧着逐枱問人少的枱要多少條,然後放下。芋條粉糯鬆化乾爽,裹住白白脆糖漿,條條分明,水準絕佳,也是必吃。南瓜福果芋泥芋泥平常很小點,但來到這些傳統老店,一定必吃。亮亮的豬油,特別香滑,但甜度和油量感覺好似比以前減少了用量,適應市場口味。總括來說,味道幾十年也能保持,水準不錯。但今次的紅燒翅和豬肚湯,個人覺得比較咸了些。…Read More

颱風過後,秋意漸濃,天氣清朗,適合郊遊。今天三人輕走印州塘郊遊徑,途中在三椏村蜂場午餐休息下,吃了幾個清淡客家菜。木瓜雜魚湯一大窩,材料有十多條手掌大的小魚,豆腐,木瓜,十人份量三個人真的吃不了。老闆話魚是晚上放籠,早上捉回來,所以很新鮮,魚沒腥味,喝了濃湯,魚醀上豉油也很好吃。客家咸雞咸雞半隻,皮爽肉咸香,有質感。老闆沙頭角入貨,現在疫情,不能過關也可以吃到大陸雞味道,不錯。白灼大尾魷魚魷魚也是老闆自己釣回來,新鮮爽脆,配合芽菜香芹很鮮。家鄉炒米粉配料有咸肉絲,木耳絲,韮菜,蛋絲,炒得乾爽不油膩,做单尾,填填肚子也不錯。…Read More

朋友定了戲曲中心的滿樂中菜預祝中秋。順便參觀下戲曲中心佈置。朋友定了房間,整顿晚餐也在清静歡樂環境中渡過。人末整,先點個椒鹽九肚魚吃住等。油炸功夫很好,魚件乾爽,如果椒鹽重手些更好送酒。另外也點了金沙炸魚皮凉瓜(忘了拍照),咸蛋黃咸香,一樣乾爽比九肚魚更惹味好吃。招牌片皮鴨堂切片皮鸭,侍應生擺盤也很用心,每片薄餅中間也有蒸籠紙分隔方便取吃。鴨不肥皮也鬆化,不過不失。蜜汁义燒半肥燶义燒,肉質鬆化蜜味濃,好食,性價比高,必吃之選。杏汁燉白肺湯高湯豬肺,後加杏汁便沒有其他配料。湯頭入口順滑濃郁,滿口杏香,豬肺嫩滑。金瓜九肚魚烙這九肚魚烙配上南瓜,蕃薯粉煎出來煙煙韌韌,也十分可口,不失為百樂潮州菜同一集團。梅菜扣肉這裡扣肉比很多客家店做得出色,豬肉和梅菜蒸得火路十足,豬肉入口溶化,久違了的好味道。鴛鴦胡椒焗蝦新鮮青楜椒配白楜椒粒焗蝦煲仔上,賣相討好,但楜椒味不能滲入蝦身,稍為失色。豉汁蒸白蟮這道菜,中規中矩,可以的。三菇燴六耳素菜不同菇類,乾菌,白合。配搭清爽,可惜很細碟。蛋白杏仁茶現做生磨杏仁露,入口香滑杏味濃郁,十分美味可口。這頓中秋節晚餐也吃得十分滿足合意。…Read More

大牌檔順德菜吃出人情味

朋友介紹在大成街市熟食層的順德菜大牌檔味道不錯。這晚跟老婆兩人專成去試試。我們六点半到,已有幾枱客人在開餐,有吃火鍋,有在樓下買了海鮮來加工,吃小炒粉麵的,好像服務十分彈性多元化。大叔老闆安排座位碗筷後,送上餐牌,見我們只有兩人,便推薦了幾個小菜選擇拆魚,炸鯪魚球,煎釀三寶,煎焗魚嘴,煎焗白鳝,煎釀鯪魚,炸鮮奶,炒牛乳等順德小菜。跟著便點了3個小菜食品嘗下。順德拆魚一大碗滿滿的有点稠,淡水魚折肉配上木耳,冬菇絲,絲瓜粒,入口鮮中帶爽脆,最特別配上粉絲,另到湯更滑口。總體很可口,一個例牌有8大碗,喝畢這也半飽了。個人覺得少些馬蹄粉,沒那麼稠,可能更皆。煎焗鱔片菜上枱很吸睛,一股油香撲鼻。即刻叫枝啤酒配合下。鳝皮脆肉嫩,有11/12件,好吃。可能是成本問題,這裡用了比較便宜的黑鳝作材料,便沒有正白鳝那爽脆感了。大厨出來訪問食客意見時,我也提出這問題,何大厨也認同的,他建議下次來可以在樓下街市自己買靚白鱔食材,請魚檔走骨起片,然後拿上來加工(收費80元)那效果便一定更好吃。雞蛋焗魚腸魚腸上枱很是震撼,像一個圆球放在煲中,三份一圓頂在瓦煲上,表面不像坊間焗得乾脆香口。魚腸也很肥大,入口Q彈,沒有魚腥苦味,吃到油條蛋香。這些工功菜,可見這店手藝不錯。我第一次幫襯吃了三個菜,覺得這店性價比高,傳統大牌檔風格,吃手藝味道便沒苛求了。最重要是人情味,大叔老闆和大厨有空也出來和食客交流問問意見;介紹下這裡特色食品如一魚六食,八寶鸭,杧果/杏仁/榴槤等味道的炸鮮奶,湯水等預定菜式,又可以代客加工,家庭小店做熟客生意,會盡量配合客人口味。下次約多幾位朋友再來吃其他順德菜式。…Read More

平常也有到這店吃早餐,我特別喜歡他們的咸豆漿,葱油餅(厚和薄的也各有風味)和粢飯,很有在台灣和上海的味道,沒有出境旅遊,也可以懷緬一下。但早餐人多排隊,人手忙碌,招呼便真的沒有了。看到幾位名食家也介紹這裡的地道上海菜。屯馬綫剛開通,店只在土瓜灣站幾分鐘路程,試車之餘便來試試。6點15分入坐,只有二枱客人。二位姨姨侍應生,老闆娘睇埸加年輕的太子爺幫忙下单。和太太二位,趕快點了幾個菜品嚐下。滷水蘭花豆腐干平常在其他食店吃到的豆腐干,沒有這裡花功夫把豆腐干切上花刀,這樣更美觀和入味。滷汁不咸,淡淡的入口充滿豆香,值得一試。砂鍋醃篤鮮這湯入口鮮美,沒有味精,咸肉咸香Q彈有口感,十分好吃。鮮筍可以,扁尖筍有渣。整體湯是十分可口。銀芽炒鱔糊菜端上桌便很有好感,鱔條粗粗的配上中央的蒜泥葱花。鳝條新鮮彈牙,芽菜爽口,沒有傳統上海菜的濃油赤醬,小小改良更合香港人口味。炸銀絲卷很久沒有吃到這麼出色的銀絲卷,裡面是一絲絲的,用來伴鱔糊吃,匹配。小籠包單尾來個小籠包,新鮮豬肉做,包皮不太薄,但充滿肉湯汁,燙口,十分好吃。這晚可能早入席,只有三四枱客人,店不忙,老闆娘也是有說有笑,很有家庭小店的親切感。下次一定再來幫襯,嘗試其他菜式。…Read More

將軍澳和女兒午餐,在開飯搜尋有什麼選擇,看到連鎖比利時餐廳Frites, 剛好在女兒office附近,便去試試看。餐廳在將軍澳海濱展廊旁邊,有室內和室外坐位,今天下雨便選了室內坐,不然在外面看看海景也不錯。12時半入坐,只有2枱客人,可以静静的一家人吃個午餐。點了三個set lunch.頭盤有二個選擇Ceasar salad 大路貨色,意大利生菜爽,烟肉香,芝士濃,味道不錯。椰菜花忌廉湯湯也順滑好飲,擺盤也漂亮。忌廉煮青口青口一向是這連鎖店的signature 食品,青口質量很好,十分鮮嫩,下次來也一定再點。USDA Angus 西冷牛扒這西冷安格斯牛扒也不差,order medium, 熟過了些,但可以的。這裡的配菜炸薯條也很出色。忌廉意大利麵這意大利麵便一般般,不過不失了。鮮橙可麗餅甜品沒有選擇,只提供可麗餅,也是新鮮煎的,醬汁是鮮橙和橙皮絲,合我個人口味。如果不喜歡橙皮味道便可選餐茶,這里的咖啡也不錯。餐廳有五位菲律賓籍侍應生,可能人客不水,服務十分殷勤。…Read More

星期五為二位老朋友慶祝生日,有人想吃辣,也有人想吃海鲜,便聯絡家附近的夫婦川菜小店-小四川 幫忙安排。老板娘熱誠的给了我們建議,大家商討後擬好菜式定好位,按時出席,人末到整,先點辣子雞送送酒。辣子雞小雞丁伴上炸辣椒,香氣撲鼻,乾身不油膩,這裡配上炸豆,比花生更香口鬆脆,送酒一流。泡椒金菇蒸扇貝加上泡椒蒸更特出鲜味,小許金菇更有口感,跟平常吃的金銀蒜做法,又是另一滋味。川式炒花甲蒜頭豆豉泡椒唐芹炒花蛤,也很鮮味。烤大桂花魚上桌,濃濃辣椒紅油香氣,地道做法,香而不辣,配上下面的豆皮,好吃。水煮牛肉併鸭血一樣香辣,牛肉很嫩滑,鸭血一般,也有水準。辣子肥腸跟辣子雞一樣烹調,香辣。稍嫌豬大腸炸得過了火,很有嚼口。吃飽生日蛋糕做甜品。老闆娘再送上桂花糖四川冰粉,又是一顿開心美味的晚餐十分滿足。…Read More

很久沒有晚上堂吃,刚開放4人一枱至十点,便來附近樂富商場吃差點遺忘了味道的海鮮。三個人,只可以點了幾個菜安慰下自已。煎墨魚餅一碟6大件,買相漂亮,經理說是用菲律賓大墨魚自家厨房制作。果然香口Q彈,粒粒墨魚有口感。鹽燒南非五頭鲍鱼烤得乾身,灑上炸蒜椒鹽,味道很香,火候恰當,肉不韌。不防一試這鹽燒的做法。上湯南澳洲大龍蝦伊麵底二斤多些南澳洲新鮮大龍蝦,龍蝦肉鮮甜爽彈,真的比其他產地的龍蝦好吃很多,伊麵也炆得入味。很久沒有吃南澳龍蝦,三人清碟。潮蓮碳燒鹅例牌燒鹅下庄暖暖的,皮脆肉嫩,醃得入味,我覺得比深井名牌店更好。下次人多使點一全隻,看看會不會熱些,那便一定更好吃。薑汁炒芥蘭這炒芥蘭便是這頓飯最差的菜。火猛炒得有些過火,菜葉有燶味,芡似糊。貼心的是芥蘭莖上的硬皮已經削去,如果用心炒這簡單的菜應該不錯的。…Read More
