Came here before their official opening to the public in HK. Reached the restaurant at 12:30pm and the waitress politely sat us at a table by the window. We ordered a few appetisers like the King crab cocktail, Seared scallops with carrot puree, Tamarind spiced chicken wings and Seabass Carpaccio. The crab cocktail had plenty of crab meats, scallops were so juicy and tendered, the chicken wings were juicy and of course, the carpaccio was excellent!As for mains, we tried the Roasted Dingley Dell Pork Belly and Ocean Roasted Trout. Our first taste of the dingley dell pork belly was in London 2 years ago at Bread Street Kitchen. The pork's skin was so crispy and tendered meat so juicy that you can see the juice sprawling out once you cut it! A must try for sure.
