除了三星米芝蓮外,食評都好好,令我未食過就睇高一線。另外,我都食過不少無星嘅fine dining ,都覺得很滿意,所以我期望呢一間三星米芝蓮係會比我之前食過嘅更精彩。先講唔精彩嘅地方,呢間嘅菜式非常花巧,我當然知好多fine dining 都係咁,也知道花巧可提升菜式嘅價值,但廚師嘅心機未能與好味道成正比,就好似有點兒為花巧而花巧。另外有啲食材份量少得誇張,若隱若現咁。呢種做法可以令到人哋覺得佢哋設計菜式時有幾仔細,大家注意力都放在味蕾。但係我認為,太少嘅份量,咁疑幻疑真嘅味道,和肯定存在嘅味道撞唔出應有嘅火花,少少可惜。食物層次感和精緻度做得好好,食材配搭係有新鮮感有驚喜和恰當,服務也一流!當然我都係同其他食評一樣,係好個人化和主觀。麵包有四款,兩款硬兩款軟,硬嘅和軟嘅包最好味都不是這一間。失望!咸牛油超啱我心水但出面唔難有!之後送一個cream狀嘅小杯,唔好食好普通,係底部有微酸嘅昆布做出對比加番啲分。前菜鴨肝非常香濃。但還是較喜歡主流做法,切得薄一點,然後煎脆個皮做到外脆內軟,因為而家咁好漏,旁邊嘅柑橘也未能解漏,我自己覺得呢個做法係浪費左一件咁靚嘅鴨肝。旁邊一小督粟子勁好食!到帶子紅菜頭,帶子薄切就真係冇咗應有嘅口感和鮮味,我自己覺得呢個做法又係浪費左食材。成碟靚但味道好普通。Artichoke羊芝士雲吞湯,無影相,最掂!羊芝士雲吞味道濃烈,唔係人人鍾意但我鍾意,豐富咗成個餐嘅層次。煙肉蘭度豆湯,一般。然後魚,器皿靚,又好好味,好想再食!但旁邊那三少件薯仔就普通一點。虎蝦香草汁,未食過有肌肉嘅蝦,肉質非常結實,此外其他嘢不特別出色。乳鴿菜鴨肝,話係signature,未食過咁亂滑多汁嘅乳鴿,菜竟然有驚喜,裏面包着香口嘅脆脆,菜勁掂,其他中上。豬肉卷,話有無同部位嘅豬拼成一個卷。我地真係覺得唔好食,想食剩。西柚花椒啫喱,非常解漏清新,我勁鍾意,又唔甜,花椒冇存在過咁。香梨榛子杏仁脆餅,我就唔鐘意咁甜。送嘅甜品一般。跟餐㗎啡好飲…Read More

奇怪的奶油筒

為食的我難得見到小時候最愛的奶油筒,實在沒有不買的理由,快樂餅店能夠在灣仔屹立多年而成日有人排隊,究竟是因爲老店,因為裝修擺設夠老式,因為人情味,還是因為產品真的好食?不怕肥的我掃視一吓貼在牆上的文章,選了當中提及到的豬油做波蘿麵包+麥西哥包+蛋達+奶油卷。其實掃貨前,我問「請問有無剛出爐的?」面口很不快樂的阿姐打量了我幾秒個頭都轉咗幾度(但不至於擰咩臉。繼而serve另一位遲入來的客人先。不知是否得罪了什麼還是問正了令她們不快樂的問題?!我耐心等佢收晒錢,再條修飾用詞「請問有無啲仲係熱熱地㗎?」阿姐又給我不快的眼神。我心情ok就點了四樣。心想,很多人真係善慕你們,如此服務態度是又如何?人家的招牌不死的。食評是:蛋達是熱得很燙嘴的,凡熱的焢焙野,我都覺得好味!而那蛋達除了夠熱和不太甜外,真的不特別。其餘三樣的凍的。波蘿包個皮口感係有啲料到,我比6分。太子的8-9分和西貢的我比10分。麥西哥實在太一般,是充饑,完全無欣賞嘅point。奶油筒的奶油是咸的,仲要好咸吓都萛,最難頂係有陣油味(或者係中式餸菜的油味,唔新鮮的油味)我吐了出來,掉了(我好少掉食物)…Read More

好少寫食評的我都要寫

小弟大約第三倆次寫食評。幾個月前在此餐廳午飯後立刻上網至此查看食評,但只見來客稀少;幾個月後的今天,遇然又見到一樣很少食評,心有不甘(如此出色的餐廳不應該隱世)決定百忙抽空寫一吓以示支持。當天星期天中午路過,被底調而有型的店外裝修吸引,因好寄而入坐。客少MENU字少選擇少,很是悠閒。沒有文字,沒有說話,只靠食物,便能感受到廚師對食物的熱誠,貫徹門面底調有型的作風。我們一行二人,習慣一位點湯另一位點沙律;三個主菜之中,一位點了卡邦尼,另一個點牛根意大利飯。我,貴價平價嘗不少,這一間,會是我其中一間至愛......由第一口湯至後一口咖啡,除了滿意還有驚喜。磨菇湯,磨菇跟碟邊香濃OLIVA OIL鬥搶,尾隨忌廉餘香。沙律,跟餐的沙律除了新鮮的什色瓜蔬,還有小魚(比常見的鯷魚軟和少鹽),清新與咸香交替,還有醋油點敍,誰再說沙律都是寡?廚師不安分嗎?把一貫煮法都改一改,但改得出色。卡邦尼不用煙肉,改用了什麼忙記了,記得心裏一句一句的說改得好好,那味道跟卡邦尼的香濃醬汁是平衡的。牛根意大利飯,很香的牛味,但這是牛根嗎?為何有入口溶化的效果?那溶化不明顯的,但比東坡肉少了油膩感,沒探究,一口接一口,吃完。已經吃飽了的我,想嘗盡一點廚師的技,要再來一杯咖啡。這兒咖啡就是咖啡,沒有一選擇的,我倒是要看一下那一款咖啡可以鎮得住店。又是忙記了資料,只記得味道,香濃很香濃,我應為就只賣這一款是正確的。最後持應來問一吓意見,原來那入口會溶化的牛根,煮了幾天(不肯定有否記錯)。洗手間也是美美的,真是很有品味的餐廳。…Read More
