Remove fat and filth of pork tripe and clean thoroughly. Cut a 10cm seam from the edge to turn inside out. Apply 1 tbsp rough salt, 1 tbsp vinegar to scrub until no sticky fluid. Wash clean with water. Put in boiling water to cook 3 minutes and remove. Scrap the white filth and wash the tripe clean. Then slice into pieces.
Pour 6 cups of water into the cooker. Add pork tripe pieces, red dates, lotus seeds, green onion strips, and ginger pieces to cook together until boiling. Switch to low temperature and simmer for about 1 1/2 hours. Then season with salt and cooking wine.
As fresh pork tripe requires more preparation, frozen,ready-to-eat pork tripe are now widely available in frozen food stores, which can be a more convenient option to fresh ones.
