Background: I work at Lingnan University, which really has no decent lunch options for people who don't want to take the minibus to Tuen Mun town center and fight the enormous crowds in the most poorly laid out 10-block mega mall complex. So I frequently take Subway for lunch.

More background: the lines at the Subway in HK station are redonkulous and the Subway closest to my house off Jervois street systematically cheats its customers.

So, I found a new Subway. I ate there twice this last week. Or, that is, I ate from there at my desk.

I order the same thing every time: turkey, cheese, not toasted, lettuce, tomatoes, onions, lots of jalapenos, a little bit of mayo. The only variation I observe is in the freshness of the bread, the freshness of the veggies, whether they put *lots* of jalapenos on, and whether they put *a little bit* of mayonnaise on.

My first time here I was quite impressed. The bread was very fresh. Subway bread tends not to last too long, and takes on a sort of spongy, mushy texture. This bread had a decent crunch to it-- not a stale crunch, a fresh-baked crunch, with insides that were soft in a good way. The lettuce and tomatoes also seemed reasonably fresh.

I had trouble coaxing the woman making my sandwich into giving me lots of jalapenos. I usually say "lots of jalapenos" and then say "more" up to two times, then give up. I did that and as you can see, I wouldn't call that lots. They were much better with the mayo. Usually I say "a little bit of mayo" and then try to say "that's enough" as soon as I can after they start putting it on. Good results this time.

After my impressive trip, I went back again. This time I had less luck: First of all the bread was soggier. Second, on a whim I decided to try "a little bit of" ranch dressing instead of mayo and (a) they totally drowned the sandwich in it and (b) Subway's ranch dressing is the most unappetizing looking sauce I've ever seen. OK, maybe not ever. But in a while.

So there you go, this place can be great and it can be a fair deal less than great. I'll probably still go here a bazillion times. At least they give you 4 slices of turkey!
