We are massive fans of Paisano's.  Their Wanchai branch is a go to place for us.  We had service issues at the TST branch, but the pizza itself was tasty.  Here, they had got it a little wrong.One of the great things about Paisano's is the crust.  It is thin and charred in the right places with a great texture.  The DB branch made an error in the recipe, because it was not right.  It was bready and thick.  It was doughy in places and under-cooked.  It wasn't raw, but it had no dark crusty bits.

One of the great things about Paisano's is the crust.  It is thin and charred in the right places with a great texture.  The DB branch made an error in the recipe, because it was not right.  It was bready and thick.  It was doughy in places and under-cooked.  It wasn't raw, but it had no dark crusty bits.  It was like eating a cheaper imitation of what we have come to expect at Paisano's.  

The cheese and pepperoni were fine, but on that thick doughy base, they were really lost.  I think that the cross-location standards need to be maintained.  Consistency is the mark of a good brand.  You are only as good as your weakest link and some time needs to be spent ensuring quality at all branches.

The staff were a little distracted, but polite.  It was a strange atmosphere in general and there seemed to be the sleepiness of a distant outpost about the DB branch.
