喜歡北歐人對大自然的愛護,每樣食材都是按季節,不時不食。而且還不會為一己私利而大量索取,以維持生態平衡。

這道前菜也是以挪威可持續發展的三文魚製成,6款也是不同製法:紅菜頭漬、冷煙燻、輕煎、醃製、慕絲再加煙燻三文魚子。

魚柳本身沒太多調味,與泡沫細滑的刁草汁很匹配。伴碟的椰菜苗很嫩很爽口,海蘆筍齋吃偏鹹,但伴著魚柳一起吃就剛剛好。

魚柳很厚身,肉質結實、魚味濃郁,讓我回想起北歐吃的味道,但略嫌肉質不夠滑溜。

墊底的黃金菜頭也不要忽略,清甜而沒有紅菜頭的澀味,不禁整塊吃掉。

另外也試了些慢烤黃麂柳。
鹿肉是北歐人冬天必吃的,既飽肚又保暖,但我覺得肉質偏鞋口。
可是FINDS的烹調令我鹿肉的印象180度改變。肉味濃厚而且嫩滑,比在芬蘭吃的好吃很多。

DAIM芭菲

吃罷主菜,其實已經飽了9成,但女生總不能錯過甜品吧?


這個芭菲是丹麥忌廉筒的變奏。以杏仁、meringue 碎包裹著幼滑吉士醬,再配瑞典老字號Daim朱古力碎粒,口感很有層次。還伴有焦糖醬和北歐必備的莓,北歐風味更濃。

FINDS的Tasting menu會根據時節改變,反映北歐人不時不食的傳統,讓我們更真正體驗北歐風情。
