早一陣子食咗間高質嘅燒鳥店,不過雞嘅部位都比較大路,內臟嘅選擇都比較少。朋友就帶我去咗銅鑼灣呢間燒鳥店鳥森,供應雞唔同嘅刁鑽稀有部位,啱晒我呢D咀刁之人!朋友果然無介紹錯!燒鳥質素好高,而且今次我哋點咗Mori Set($580pp),每人有8條燒鳥+燒物+食事(惠比壽炭火親子丼/白布烏冬)+雞湯+甜品,性價比好高!好少可以呢個價錢喺居酒屋食得咁豐富咁飽足呢! 先送上前菜侍應會先了解客人有咩唔鍾意食,乜都食嘅我哋就8款燒鳥全交由廚師發辦!是晚安排超驚喜,食到好多刁鑽罕見部位,例如:雞腸、雞心元、雞腳筋、公雞冠、雞掌心等,最估唔到係連日本提燈都有!日本提燈其實即係雞輸卵管、卵巢同未成熟蛋黃,由於要母雞宰殺時剛好形成蛋黃,數量又不多,所以提燈非常稀有!燒日本提燈亦都比較繁複,因為要做到輸卵管表皮焦脆、蛋黃保持半熟流心的效果,少d技術同心機都做不到!所以香港極少燒鳥店有供應,我都係第一次食到呢(上次去另一間想試但售罄)!燈籠燒至半生熟,咬開薄膜之後,蛋黃就立即爆漿,而輸卵管、卵巢則焦香脆口,一次過食到兩種口感!雞腳筋我都係第一次見,比一般雞軟骨更加爽脆有咬口。雞掌心帶d皮又帶d筋,口感好爽脆

雞腳筋我都係第一次見,比一般雞軟骨更加爽脆有咬口。

雞掌心帶d皮又帶d筋,口感好爽脆!雞冠似雞軟骨同雞皮嘅合體,既有皮嘅油香,又有雞軟骨嘅爽脆!雞心元即係雞嘅心臟血管,又係超刁鑽,食落口感爽脆,肉味鮮香。雞腸都係我嘅至愛,油脂香豐腴,口感軟滑!

常見嘅雞皮、雞翼、雞肝、雞胸軟骨、雞胸肉當然都食到,8款燒鳥中仲有我每次食串燒必點嘅自家製免治雞肉,混入咗軟骨,加添口感!梅子醬雞胸肉都唔錯!
