最近友人試了一間新開的日本料理「大藏季節料理」,評價不俗,特意介紹筆者造訪。星期五晚本是上佳的時機,筆者早已預訂了壽司吧枱位置與太太「撐枱腳」,只可惜家中的細周生在知道我們的行程後突然發難,最後唯有來一個三人行。壽司吧枱的位置也變成普通的餐桌雅座。 因細周生胃納不大,我們最終也只是點了兩份 Omakase 分享吃。先來的前菜是一份賣相別緻的小籃,內含三款時令美饌。首先品嚐的是香箱蟹青瓜沙律,香箱蟹是雌性松葉蟹,體積比雄蟹少得多,因其蟹身內藏大量蟹羔蟹籽,揭開蟹蓋尤如揭開香箱寶盒而得名。小小一份青瓜沙律,當中混入了蟹羔蟹籽及蟹肉,在酸爽的味道襯托下,香箱蟹的甘香鮮味更為突出。車海老是秋冬名物,雪白的蝦身,味道十分清甜鮮香,口感甚為結實爽口。海老面上放置了一小份產自金山寺的麵豉醬,並以少許芥末調味,空口吃或許味道濃烈了一點,但夾上海老吃則味道剛好。晶瑩大粒的三文魚筋籽,味道鹹香,其口感比平日吃到的三文魚魚籽來得更彈口。為了增加菜式的清新度,大廚特意引入少量柚子絲及蘿蔔蓉,令食感變得更平衡。前菜過後是白身魚薄切及三點季節刺身。薄切魚的選材是平目魚,魚片賣相通透,放在色碟上碟花可見,而刺身面上
