To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 首先第一道菜是 柚子鮮鮑拼醬皇鴨舌 Chilled abalone with Pomelo Marinated duck tongue in XO chili sauce:凍吃的鮑魚鮮味十足,同時配搭新鮮並糖漬柚子,感覺更清新鮮甜;豐腴入味的醬皇鴨舌更是超水準,平日不愛鴨舌的我也很享受與它雙舌交纏!每位更有額外麻醬車厘茄,清新醒胃,吃完胃口全開了!

然後有 明火例湯 Soup of the day,湯料十足、湯身濃甜美味,而且份量挺多,一兜可分出五碗來。特別一提,湯渣也會呈上檯,但絕不建議食用;不是不好吃,而是接下來的菜式數量與份量都極多,千萬要留肚啊!

來到今餐的主角 北京片皮鴨 Roasted duck served with three flavors of pancakes 了!這也是國金軒的名菜之一,兩吃定價就要 $768,但「醉 DUCK 星期二」晚餐中還有額外六道菜及紅酒,所以真的很抵呢。

師傅手起刀落,飛快將鴨皮連肉切好;兩碟都是甜魔媽媽最愛的皮連肉出品,但其中一碟連的肉較少,另一碟連的肉較多,無論你是那款口味的擁戴者,都會滿足。

配料方面,除了京蔥、蘿蔔、青瓜、鴨醬,還有甜椒及子薑絲,後者配搭烤鴨非常滋味!而餅皮也分為原味、薑汁菠菜及蒜蓉甘筍三款,雖然味道吃來差不多,但的確增加了添食的動機,因為份量都幾多,這晚5人分享,我吃了4件烤鴨夾餅,以及兩件淨皮,才剛好完成呢。

然後有 豉味骨香多寶魚 Crispy turbot fish with black bean sauce,多寶魚給起了球、啖啖肉而且嫩滑又入味,配菜的蜜糖豆也脆口美味;吃完別忘經脆炸的魚骨魚身,非常酥脆香口,不吃白不吃呢!

很愛接下來的 紅酒燴牛尾 Braised oxtail with red wine sauce,所用牛尾脂肪不多、膠質比例特高,又炆得特別軟腍,配上味道香甜迷人帶些微醋意的極品紅酒汁,超級美味,亦與當晚的佳釀相互輝映~

還有吃完烤鴨的二食-銀芽炒鴨絲 Sautéed shredded duck with bean sprouts,喜歡這裡的鴨隻富有酥香,烤鴨好吃,鴨肉絲也一樣美妙,稍濃的調味對於配搭紅酒來講是剛好呢!

最後還有 米湯杞子浸鮮菜苗 Poached vegetable with wolf berries in rice broth,近似粥底的米湯,令到菜苗更鮮更滑,加上杞子天然的甜味,好吃得連平時只食肉的劉總也來幫襯!

要講這裡的菜式份量很足,五人吃四人餐都飽到不行,最後再吞下 國金美點 Cuisine Cuisine Chinese petit fours,已經沒有餘額再吃其他甜品糖水了... 也講講這兩款美點,後方的杏仁酥實在很清脆美味,前方是以形狀取名的甘露酥,很富詩情畫意呢~

詩情畫意雖然美麗,我心中只有你~♫ 好吧,容我坦白指出:當夜闌人靜、食客離開,餐廳內的音樂雜亂無章有古怪... 希望餐廳可以改善這點,說不定,來年的米芝蓮榜上,又會回到昔日高位!
