My second stop for my hunt for the best scallion oil noodles brings me to this well-established franchise in HK that’s known for its XLB.

I started off with their complimentary (service charge ahem) Boiled Peanuts and Chestnut which blew my mind. They are unlike any other boiled peanuts I’ve had and I still remember how good these were. The peanut skin disintegrates in your mouth the peanuts themselves have this creamy texture that is very similar to the chestnuts. Both are cooked till very tender but not mushy in this savour and sweet sauce that reminds of me 滷水.

上海媽媽烤麩 Braised gluten in Shanghai moms style $58

I also got this as an appetiser and it is my first time trying wheat gluten and I am hooked! The wheat gluten is very similar to extra firm tofu or the hundred-layer-tofu you sometimes see. It’s chewy and bouncy and has the perfect amount of density. It also absorbs the savoury sauce so well that it explodes in your mouth. The sauce is like 紅燒 but lighter and more mushroomy. Which is due to the assortment of fungi used. Each offers a different texture from crunchy to chewy and I really enjoyed eating it with the wheat gluten.

The portion is quite large so definitely better when sharing.

開陽蔥油拌麵 La Mian with scallion oil $55

The appearance of these noodles did not entice me but the aroma was so strong and definitely opened my appetite. It’s quite obvious they use lard when making these noodles which not only provide this rich and savoury flavour but also enhance the aroma tenfold. They also have sizzled crispy scallions on top which I really enjoyed but the scallion taste is kinda masked by the strong lard. Their focus is truly on the lard as the use of soy sauce is also pretty minimal. I also want to point out the handmade noodles which offer the best bite and texture that dried noodles just don’t have. Despite the fact that there was a chunk of noodles stuck together, that chunk still tasted amazing and the dough was chewy and not undercooked.

They serve this with a very rich and flavourful chicken soup which is on the salty side and I don’t really understand why it was served together because it’s not like I’m supposed to mix them together.

💬 Overall, everything I had was super delicious and very reasonably priced too! I love their La Mian and might return to try their other noodles dishes but I’ll come back just for their braised peanuts.
