To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 暑假期間與一後輩才俊約吃晚飯,他是食家,出入都是著名食府。當晚飯局訂在美麗華國金軒,餐廳很豪華高貴,典雅幽靜。我們剛坐下,部長立即送上每人一個小前菜,一粒去皮車厘茄,淋上酸酸甜甜的芝麻醬,非常醒胃。主菜方面,我們預先訂了一個北京填鴨二食,另加桂花糖脆鱔球及鮮茄魚腐泡菜苗。填鴨片皮配薄餅 — 師傅推鴨車到檯邊,即埸片皮。師傅手勢純熟,不消五分鐘已切了一碟全皮、一碟皮連肉,香氣四溢,我們立即趁熱打包,五種配菜—紅椒絲、青瓜條、酸蘿蔔條、大蔥及薑片,各適其適。鴨是很好吃,皮烤至微脆焦香,配上特製醬汁,入口甘香,惜薄餅皮粘在一起,又不夠熱,美中不足。生菜包鴨崧 — 大大碟,鴨肉粒配上筍粒、洋蔥粒及蔥花同炒,汁香味濃,以生菜包著吃,清新可口,不帶半點肥膩。桂花糖脆鱔球 — 這是該店主廚的名菜,鱔球肉質豐腴,腍甜香滑,入口溶化,淡淡桂花香,確是味蕾最高享受。鮮茄魚腐泡菜苗 — 紅茄綠菜泡在奶白鮮甜的魚湯裏,以一精美藍花邊湯碟盛載,賣相極美,令本來平凡的一味菜顯得不平凡了。吃完各樣美食,再歎杯熱騰騰清香烏龍茶,心滿意足了。
