To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 很多朋友推介佐敦的這家拉麵店, 我就來到這裏點它比較特別的廣島蠔豬骨拉麵, 確實不錯. 先說它的蠔份量和Size也夠, 蠔肉夠Juicy而不會煮得過熟, 當然也沒有縮水. 蠔汁和豬骨湯結合令其帶有海鮮的鮮甜, 比起用魚介味道則較柔和, 豬骨湯底本身鮮香度不錯, 而濃稠度則一般, 沒有黏在口中的感覺. 木耳口感偏稔, 不如Nagi般爽.叉燒的選擇除了肥和瘦叉外, 也有角切叉燒粒, 我還是喜歡脂肪肉層次分明的肥叉, 烤得很香而肉質依然夠嫩滑, 特別是有慢煮和瘦叉愈來愈多的情況下, 這樣的肥叉算是一種Guilty Pleasure. 麵身夠爽, 用上較粗身的令掛湯力更強. 煎餃子用上最基本的粟米和豬肉, 夠多汁也夠鮮甜, 簡單直接. 這家店的叉燒和蠔很不錯, 麵身與湯底和餃子的質素也OK. 至於價錢就是和一般在香港的拉麵店差不多, 不算相當超值, 但絕對對得起其定價.
