To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 在牛頭角放工後,就和同事在附近的駟馬拖車潮州飯店吃個晚飯,當晚是平日的晚上,用餐的食客不多。安坐後,侍應就隨即送上功夫茶,果然相當有潮州菜館的特色。荔芋香酥鴨,是當晚的是日推介。用蒸熟壓成蓉的芋泥,包着去骨的鴨肉、香菇絲,然後以高溫油炸烹調而成,非常考廚師的功夫。外皮炸得酥脆可口,內裡的竽泥鴨肉則相當綿密,形成強烈對比,相當美味。另外,再點上酸酸甜甜的桔柚醬,又能解膩。方魚肉碎粥,潮州粥的特色就是粥底似稀飯,搭配其他材料有肉碎、香菇絲、冬菜、香菜等,而最不能錯過的就是這碗粥的靈魂-方魚,炸得香脆,又相當入味。酥炸蠔餅,不但賣相靚,炸得金黃,口感酥脆,而且蠔仔份量多,味道鮮甜。食用的時候再配上用蒜蓉、辣椒特製的魚露醋,就更能發揮提鮮的作用,味道更好。銀杏芋泥,非常經典的潮州菜甜品,芋泥口感綿滑,帶有芋頭的清香,而且調味不會太甜,搭配銀杏的甘香,很符合我個人口味。
