To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 最愛拉麵的小編,今天又再出動,到訪上環的一家叫熊拉麵的分店本來在佐敦有一家店的熊,到了上環能不能保持水準呢? 有 counter席也有普通席,好奇的我當然要坐counter 點了一個魚介豚骨湯麵,可選的全部選了普通,有添香油先呷一口湯底,濃而不稠,稀度適中,豚骨味香濃,可惜魚介味不足。香油的存在令湯底多了一份脂香,不想要還可以走油麵質是我吃過那麼多間拉麵中最彈牙的,尤其我點的是幼麵,非常掛湯,更顯得其細節位掌握得不錯叉燒可以選瘦、炙燒肥,或者切粒我選了炙燒肥,厚度果然十足,一塊就已經等於豬排的事厚度,而且燒過把油迫出,依舊入口即溶,不錯蛋是較弱的一環,雖然做到半溏心,但醃漬功夫沒有做好,沒有甜/咸味 港藉師傅的各種硬度的拉麵的預設烹煮時間 $88沒有加一,非常合理的價錢,個人覺得整體比金田家做得更佳
