滇菜其口味特点是鲜嫩、清香回甜,酸辣适中,偏酸辣微麻。平時好小地方會有得食,我睇中它係因為拒好吸引的燉湯,隨著出去的應酬日子多了,煮飯小了,湯水自然少咗,所以喺出邊就想飲返多啲滋補,冇味精嘅湯水。雲南功夫氣鍋雞,入邊用咗好多唔同嘅菌類去煲,都有雞腳,瘦肉等等好多嘅材料整。一煲大嘅湯只係有4小碗,材料集中,一定好滋潤。叫咗個水煮肥牛片,相對於鮮牛肉來講,我鍾意食肥牛片比較多啲,因為中意有d脂肪。佢呢一個水煮牛肉同四川嘅水煮牛肉有啲唔同,佢個湯底無甘多油,會比較有味。明顯有經時間煮過,而辣度就冇咁辣,麻味都只有小小,啱啲唔係咁鍾意食辣嘅人,可以一嘗水煮牛肉嘅味道。金奬白肉即係川菜嘅蒜泥白肉,但係佢嘅味道會較為淡少少,蒜蓉味會重少少,有自己的一番風味。滇醬肉絲餅,用咗片皮鴨嘅皮包住特製嘅醬汁炒瘦肉絲,仲會有京蔥同埋青瓜,卷埋一齊食更覺滋味。最後想同大家一齊學下字,原來呢個滇字係讀(田)並不是(慎),原來我一直都讀錯,唔知大家又係唔係呢。
