曾聽過一位識飲識食的友人對點心的闡釋,闡釋以英語進行。Dim Sum 中的Dim『 點』 means touch , Sum 『心』means heart. 提筆準備點菜之際,看到筆上印有美心中菜四字,心中涼了一半,美心集團旗下的中菜酒家,悉數點心來自中央工場,意味着這裏的點心都入過冰箱,並非清晨出品,點心進過冰箱,水份會被抽走部份,口感會變得較乾,因此龜龜會儘量避免到集團式食肆,吃他們的中央出品。

湯頭香甜鮮味,饀料有大量瑤柱及桃膠,另有整顆鮑魚切片,異常豐富,餃皮的韌性甚好,很有彈性,不會因為泡在湯中久了而變得鬆散。

炸得香脆乾身,撒上大量金蒜,椒鹽份量剛好,做到惹味而不過鹹,最值得欣賞之處是魚的脊骨已起,吃在嘴中只感到香脆軟滑,沒有半點渣宰的滿分極品。

蝦新鮮爽甜,荀尖肥肉比例剛好,可惜皮太鬆太厚,零嚼勁,觀音頭掃把腳的範例是也。

湯味正宗,有濃郁的麻醬香氣,亦帶有輕輕的麻辣及陳醋酸味,各種調料雖然濃味,但都掩蓋不了湯頭本身帶有的鮮甜,湯底很好,可惜麵的差把湯的好完全抵消,乃毫無嚼勁的劣貨!

上桌時吱吱作響,奢望了一下端上的是生煎包點,可惜夾起包子一看,奢望便破滅了,包底只煎得微黃,又是現成蒸好再煎的行貨,尚幸饀料充滿胡椒香氣,肉帶嚼勁,包皮亦有合格表現,整體不過不失。

又是好壞參半,义燒肉質鬆化,帶肉汁,外皮帶脆有蜜味,但劣鵝又把义燒的高分倒扣得七七八八,鵝肉汁少,皮不脆之餘又韌又嚡,有明顯的凋謝口感。

在陸羽吃過一道外表九成相似的上湯煎粉果,超乎想像的味美,湯頭充滿金華火腿的鹹香,是燴魚翅用的靚頭湯,粉果皮炸得鬆脆而煙韌;不過面前一道只是形似而已,味道口感跟陸羽所賣的有天涯之別,粉果的皮甚為鬆散,湯味異常的淡,連酒樓勾芡用的二湯也不如,表現相當差劣。

 一夾便即散開,根不是不能夾起的狀態。西米完全欠缺黏性,泡水時間過長,奶黃亦有欠香味,連筷子也夾不起的所謂西米盞,又怎能叫盞呢?私下龜龜為它改了一個稱號叫乾撈奶黃西米。

評完食物,到服務。只算得上是一般般,茶喝光了,牽起壺蓋等冲水,侍應從咱們桌邊走過幾趟都視而不見似的,在我們加單時侍應亦察覺不到我們有加水需要,最後還是要舉手要求,才有侍應效勞,在場侍應們都看似頗為生手。

總結來說,點心出品及服務大都欠缺了一個心字,味道好壞各半,令龜龜頗為失望。
