To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 上次點了牛頰肉意粉覺得好好吃,這次又點上一個牛肉菜式。

Beef Cheek & Cheese($92)
真空慢煮牛頰肉芝士多士

多士上有4片牛面肉🐃,牛肉帶少少膠質筋膜,由於經真空低温慢煮48小時,與平日的牛面肉有點分別,肉質結構緊密,與牛𦟌的質地有點相似,但口感軟腍。大廚用上“芝士🧀番茄🍅配牛肉”,這絕配組合本身己難以出錯,味道令草根馬上聯想到番茄豬朳飯(誤😂),十分惹味,加上軟身麵包,好好吃呢!

Sous Vide Iberico Pork Belly “Risotto”($118)
真空慢煮西班牙黑毛豬腩穀物意大利飯

草根姐妹👭曾經留意到蘋果日報的採訪中提及過餐廳的Superfood🌟故這次再訪特意一試。
這是用了白藜麥、生熟薏米代替意大利飯,做成獨家的‘Risotto’。相信大家對這幾款食材都一定很熟悉,但將生熟薏米取代米飯🍚就一定未試過吧!生熟薏米口感各異,造就仿意大利飯的生米口感,但由於是Glutenfree,所以更多人可以享用😌。實在是配服老闆娘活用食材的智慧呢!
菜式另一重點西班牙黑毛豬🐖,經真空慢煮再煎封,雖然脂肪比例較肉多,不過豬肉入口即化,肉質嫩滑,煎封表面令腩肉增添一份焦香。告訴自己黑毛豬油比較健康,所以間中一嚐不怕啦😝!

草根一向很少於餐廳點三文魚菜式,很多時都會遇到煮得過熟的情況,但這次老闆娘卻介紹自家的三文魚有別於外面的菜式,鼓勵草根一試。憑上2次與她的交談,相信她定必很有信心才推介給我們,故最終決定一試。

真空慢煮挪威三文魚配冬蔭清湯

草根看到餐牌上寫上「冬蔭清湯」,覺得好有趣🤔,冬蔭湯也有清湯選擇的嗎?抱著好奇嚐新的態度一試👀,原來冬蔭‘清湯’是沒有加任何椰奶的湯底,味道比一般的冬蔭湯清爽,帶點微辣和酸,清湯不會霸道地蓋過三文魚的味道,用作帶起海鮮的鮮味🐟。平日最怕餐廳把三文魚煮得過熟,這個嫁慢煮方式去做,外面再輕輕燒過,中間仍然保持肉質細嫩,不錯!

吃完主菜後,草根姐妹👭決定多點一客甜品,為整餐劃上完美句號。這次選擇了自家制的義大利雪糕🍦Gelato,白松露、椰子及Espresso即磨咖啡☕三款口味。三球雪糕的味道都十分突出,尤其
