未去過北京, 香港食過一次全聚德既片皮鴨(其實唔知香港果間同北京果間有無關係!?).........um, 香港全聚德唔得, 烤得唔靚. 反而我推介沙田凱悅酒店既沙田18(中菜廳), 我都係第一次有專人指導正確片皮鴨既食法~出面一般都會皮連肉片出黎, 然後就搵番薄餅皮包住大蒜, 青瓜同甜醬一齊食, 但沙田18既師傅會係客面前即席片鴨, 片開3種食法:1. 鴨皮: 烤鴨最表皮果層, 沾糖食, 入口溶化, 好似食緊白糖糕甘, 好好味! 鴨皮烤得岩岩好, 唔燶, 同埋唔覺油膩2&3. 鴨胸肉&皮連肉: 正常食法, 搵番薄餅皮包住大蒜, 青瓜同甜醬一齊食, 出面一般都係皮連肉, 是但片晒個面既皮就上碟, 無諗過一隻片皮鴨, 佢都片得甘徹底, 就算我淨食片皮鴨都夠, 同埋淨鴨胸肉都唔覺得好鞋.除左片皮鴨, 都有叫到其他小菜/點心, 生煎窩貼最好食, 個底煎到脆卜卜, 但裡面舊肉既肉汁都無被煎乾.酒店係遠左少少(大學站隔離), 酒店中菜廳食飯都會貴少少, 不過我覺得值囉~

出面一般都會皮連肉片出黎, 然後就搵番薄餅皮包住大蒜, 青瓜同甜醬一齊食, 但沙田18既師傅會係客面前即席片鴨, 片開3種食法:
