朋友知我鐘意食日本野,早前就約我去左呢間特色fusion廚師發辦度食晚餐。一坐底就可以揀個靚杯,準備飲店員為我地準備嘅櫻花茶,好香呢!仲有一杯蘋果清酒開啟我地嘅味蕾。第一道—牛油果他他,入面有唔同嘅刺身,包括劍魚腩、三文魚、吞拿魚嘅角切,混合埋牛油果同芥末嘅醬一齊食好特別啊!芥末嘅加入平衡牛油果嘅creamy,但又唔會太嗆辣。另外仲有蓮花莖增加口感。之後就係噴晒煙嘅煙燻鴨胸伴鵪鶉蛋,造型滿分,鴨胸仲幾嫩口煙燻得剛剛好。接住係由豆腐汁拌入嘅日本桃,幾新奇嘅組合!間場有海草水清下味蕾,繼續品嚐接落嚟嘅料理。刺身拼盤有三款魚刺身,再配上旁邊嘅醬~而更吸引我眼球係caviar盒內嘅魚子,係用左分子料理嘅方法整嘅魚子,酷似三文魚籽同法國魚子醬,咸咸地配上淡味嘅白身魚都幾配啊!食過幾道凍食嘅菜式,更令人期待呢款熱湯—鮮羊肉木魚絲湯用上虹吸壺嘅炮製方法好用心,見住啲水份被吸上去木魚絲嘅部分,吸取精華後再向下排出湯汁。期後店員將熱湯倒入鮮羊肉嘅部分,仲粉嫩嘅羊肉瞬間熟透,把握時間食落仲好鮮嫩,仲飲埋熱湯好暖身。之後就係玩味嘅一道菜—牛肉乾,面頭上用米紙做嘅「牛肉乾」,底下再有真.牛肉乾,配搭住食平衡到

呢道確係為香港人而設嘅咸魚白菜,用獅子山下歌譜作墊,面上有白菜包裹著嘅鹽燒馬友魚壽司,旁邊係清新嘅豆腐醬形成對比~

呢道蟹膏壽司係我最愛,用上軟糯嘅糯米飯用底,可以自行唧上牙膏內嘅濃郁蟹膏醬,棕葉包住更有風味呢!

呢道壽司好有創意,採用鍋巴代替醋飯配上低溫鵝肝,兩者無違和感~
