- 湯底鹹香,帶蕃茄清甜及蟹鮮味;金不換、檸檬葉、芫茜、乾蔥、蔥花散落湯中,每口也嚐到不同的香草味;煮至清甜的洋蔥及爽脆的芽菜,為湯底再多添兩種層次
- 蟹膏與豬肉碎,用蛋白協助混合成肉餅狀。肉餅分成數件,吸收清甜的湯,一口咬下去,感到滑溜,能嚐到蛋白香,與此同時,蟹膏的鮮味隨之在口腔爆發,並滲出淡淡的豬肉甘香和黑胡椒的辛香,整體感覺不鬆散亦不死實,恰到好處
- 札肉不過腍亦非死實,感覺札實但未致於彈牙,肉中混入軟骨,添爽脆口感,同時又散發出淡淡黑胡椒辛香
