慶祝老best生日姐係又可以有藉口去食好西!月山原來除左omakase 佢地仲有個set menu叫"守破離", 仲一定係坐房先可以order, 勁神秘咁, 忍唔住就book左食呢個set一入到間房已經feel到唔簡單, 有個小竹林係一邊, 仲有落地玻璃對住中環夜景, 對住個咁靚嘅夜景真係可以一路打卡一路等上菜未正式上菜之前, 會有碟松子仁擺係面前, 但千祈唔可以睇小佢, 炒香左嘅松子仁勁香口好食到我地未開始已經密密地keep住食唔停口第一道前菜- 沖繩水雲配睡蓮花花冧蓮花花冧個口感好有趣好清爽, 同比較酸的水雲係絕配前菜唔係就咁食架, 仲有不同嘅體驗上沖繩水雲的時候, 成間房的地下會充滿煙霧, 好似去左仙境食飯咁煙霧散去後, 會有一本名為"守破離"的書盒放係你面前, 餐廳職員係呢個時間就會開始解釋何為"守破離",而師傅又係點樣將"守破離"融入每道食材, 希望可以體驗非一般的晚餐"守" - 堅守傳統"破" - 突破框架"離" - 超越傳統打開 "守破離", 職員會係白色的紙上點火,火光一完就會出現山口赤貝裙+醬油慢煮石川縣櫻煮八爪魚嚟到刺身環節,師傅真係有突破框架 用日本傅統的食材集合

上沖繩水雲的時候, 成間房的地下會充滿煙霧, 好似去左仙境食飯咁
煙霧散去後, 會有一本名為"守破離"的書盒放係你面前,

嚟到刺身環節,
師傅真係有突破框架 用日本傅統的食材集合中式烹調方法, 
有話梅jelly 係面的珍珠蠔 + 醬油漬長崎中toro +  花雕酒漬北海道赤牡丹蝦
三樣都分別各有特色, 我最中意個花雕牡丹蝦, 
加左花雕令到日本牡丹蝦的鮮味更加特出,唔會比花雕搶左個味道

煮物方面
因為老best唔食北寄貝所以轉左蘇格蘭蟶子, 蟶子師傅用鰹魚湯輕燙, 
加上馬糞海膽&魚子醬 點埋個山椒醬, 所有嘢互相配合得好好, 唔會搶大家fo, 
蟶子的清爽 + 海膽&魚子醬的鮮 , 仲令到整體個味道有唔同層次更加豐富

之後就係燒物
慢煮的法國鵪鶉+鵪鶉山椒汁 放係焦糖化左的京蔥上面, 鵪鶉的肉十分嫰滑juicy

當你諗住成餐飯最好的嘢已經拎哂出嚟,
點知最後鍋物的博多地雞都唔輸得,
加上個水炊鍋味道會比較消淡, 消一消之前的飽, 
同時又突出到博多地雞的美味, 睇落冇咩特別的雞肉原來都唔簡單

最後的御食雞湯雜炊 宮崎赤玉蛋 同甜品哈密瓜 圓滿地完成左整個"守破離" set, 真係大滿足

第一次接觸"守破離"呢個日本武道精神, 
發現原來係可以充分應用到煮嘢食上面, 
突破到傅統思考的框架令到我地有咁多好嘢食!!

嘢食好食之餘,成個過程職員有詳細講解師傅的用心, 
又照顧到我地每個需要(打卡haha),唔同的體驗照顧埋我地的情緒, 
就呢幾點已經覺得性價比一流, 
係月山真係過左一個好難忘的晚上!
