咸過其味的海老騎士─拉麵食評:「一幻拉麵」(尖沙咀)    月前,與妻子往吃尖沙咀的一幻拉麵。慶幸,熱潮已過,人龍不及此前一半,等了十數分鐘便已能入內。一幻以蝦為主題,就連其門都以紅紋相間為特色,仿如蝦身的現代感,讓人感到一份活力。廚房屬開放式設計,能看到大廚的身手及嗅到最新鮮的香氣。進內後,看到一橫幅的維港海景,無論日夜都能欣賞美景,自然加分不少。    我倆被安排於旁邊的面壁位置。赫然,竟發現有USB插頭,方便客人充電,十分細心。看過餐牌後,我倆點了尖沙咀限定的「特濃蝦汁叉燒拌麵」及「鹽味特濃豚骨幼麵」。諸君放心,一幻既以蝦為題,任何拉麵的湯底都以蝦湯為主,然後再視乎客人口味,選擇添入不同濃度的豚湯及「鹽味」、「味噌」或「醬油」口味。    十數分鐘後,兩名海老騎士便已踏浪而來。但無論是特濃蝦汁或豚骨湯麵,相對年前,於「拉麵來」首見的海老騎士,這兩位便像剛剛訓練完畢的年青騎士,欠缺年月的累積和成熟的韻味。雖有明顯的蝦香和甜,卻較「拉麵來」的淡,令人有點失望。至於湯麵的湯底,雖添有特濃豚骨湯,但蝦與豚的較勁,讓兩者消磨了不少。結果,蝦香稍勝,豚甜卻消失天地之間。再加上,「鹽味」口味,

    麵條方面,拌麵亦是幼麵。兩碗麵都有蛋香及麵香,且掛湯度及吸湯度均不俗,但礙於湯底及拌汁,以致味道稍遜。而且,拌麵配有大量油份,以致吃到最後,亦是令人有點難受。慶幸,拌麵配有香脆的櫻花蝦乾及青蔥,抵銷了部分油膩感。

    肉食方面,拌麵的叉燒類似豚角,肉味濃,調味能突出肉的甜,表現不俗。至於湯麵的叉燒,肥瘦相間,肉與脂的香甜混然天成,加上適量的調味,便已十分好吃。

    玉子向是妻子至愛,但一幻的玉子玉液乾涸,只有核心部分尚有少許玉液。可幸,玉晶晶瑩剔透,十分好看,且調味恰當,味醂酒香不會過重,醬油比例不俗,既不會搶去蛋香,亦能散發醬油香味。

    最後,我倆嘴饞,也點了餃子。餃子一來,賣相已不吸引。先不論,焦了的部分,焦紋與街市小吃店一樣,已令人失望。雖未有期望冰花,但這也太過份了。味道普通,無甚驚喜。
 唉,也許我與最傳統還是較合吧!一燈貴了很多,性價比不高,但若阮囊容許,還是點燈吧!虛幻始終虛幻!
