剛渡過一趟麻辣週末回來,本來胃口還未完全恢復,但帝苑軒x杭州名店張生記的杭州美饌實在太精彩,而且只限5/17--6/6供應,不得不搶先記錄一下!  話說當年讀U時,曾於上海交流了一個學期,當時也兩度到訪杭州。那真是一個美麗而且慢活的地方,食物也很精緻,吃的是鮮味為主,可說是上海的美麗後花園,其角色有點似澳門之於香港呢! 最近帝苑軒就由張生記請了多位名廚來親自主理一系列特色菜,正好餐廳又有小橋流水,氣質十分相襯,令人未食先心境舒爽。 當日我有事遲到,幸得店方細心留起菜式,又有CEO幫忙拍照,完全沒有錯過精彩的頭盤陣容。首先必推西湖桂花糯米藕($78),這是杭州甚至上海都很常見的前菜,不過卻易做難精,這裡就做到軟糯而不糜爛,入口帶清幽桂花香氣,口味微甜十分對辦,好吃!  紅梅含瑞($88)也是個人極愛的前菜,紅棗的獨有的香甜與糯米糰子超夾,成品香甜不膩,有種令人吃個不停的魔力,是日我也吞下很多粒! 招牌醬蘿蔔($78)也奇爽鮮脆,微酸口味甚為開胃,讓不愛蘿蔔的我也吃清光了! 還有干拌牛肚($88)煮至軟稔度適中,一點沒有異味,入口只覺入味可口非常,水準很高,也很喜歡。 最後是糖醋小排($

大概食物水準太高,大家吃完有點意猶未盡,結果公關又點兩份
精品糟拼($138)一起分享。成品酒香不會很濃,只是清清的很易接受,當中特別愛毛豆及牛舌,風味一流呢。

曾到訪張生記的都會知道,該店最馳名就是
張生記老鴨煲了,此菜在2012年被杭州市政府質易局選選「杭州市民最喜愛的十佳精品杭菜之一」,可見其魅力。還記得十多年前在上海吃一鍋都要200多元,現來到帝苑也才賣$480,其實是超值價! 事隔多年,再度回味那濃而不膩、咸香吸引的鮮湯,心中只覺幸福無比。

特別一提江南與廣東不同,湯水固然重要,但湯渣也是寶來的,不可錯過;尤其那筍既脆爽又鮮嫩,我忍不住淨吃了好多條;而老鴨更是精華所在,酥軟入味鮮香突出,必吃不可錯過呢。

之後有另一道特別的湯品主菜---
龍井問茶($288),它可以說是龍井蝦仁的茶湯版,侍者會以沖茶的方式,將湯品注入紫砂茶杯中奉客,熱熨的湯中除了鮮味突出,還有著茶葉的清幽,味道十分迷人,屬創意味道都是滿分的推介菜!

接著的
乾炸二樣($108)是由臭豆腐及脆炸響鈴組成,兩者均香脆而丁點不油,炸功十分出色;當然前者味道會濃郁些,後者則入清脆如無物,那口感妙極一絕,也是到訪杭州/張生記的必試特色菜。

還有非常邪惡的
糯米東坡肉($98),單看其有如珠寶吸引的外表,已經口水暴流;再試中間東坡肉,那腩肉的肥瘦比例超靚,炆得又鬆化入味,美味得令人難以忘懷;周邊的燸米在吸收豬肉豬油的香味鮮味後,滋味也即時昇華百倍,結果席間兩份成品都以速度掃光!!

但如說糯米東坡肉是邪惡勢力,那這原版本的
東坡肉($98)更是終極邪魔了! 獨立一件可以看到清楚看到脂肪分佈,竟可做到如此平均而肥瘦相間,我不禁想起意式甜品Tiramisu了! 而無論是甜品或五花腩,敢說這樣的結構是最完美、也最美味的,是日吃到的,確是珍品,美味得甚麼脂肪、膽固醇都通通拋諸腦後,吃飽再算!
