踏入Casa do Vasco呢間隱世私房菜,本來對帕爾馬火腿意粉冇乜特別期望,點知一碟睇落簡單嘅意粉,竟然可以成為全晚最高潮嘅主角!

一上枱已經成陣咸香撲鼻!師傅手切嘅帕爾馬火腿薄到透光,粉嫩色澤靚到好似藝術品,就咁鋪滿成碟意粉,仲要係室温狀態,完全釋放出火腿嘅堅果同奶香。重點係佢哋堅持食之前先輕輕撈勻,為咗保留火腿兩種截然不同嘅口感——接觸到醬汁嘅部分變得柔軟鹹鮮,鋪喺面頭嘅就保持香脆可口,呢個心思真係無得頂!

意粉本身絕對係神來之筆!煮得啱啱好al dente,咬落去煙韌有彈性。個醬汁更加係精髓所在,用咗火腿油同埋芝士調製,creamy得嚟唔會膩口,每條意粉都掛滿濃郁鹹香,仲帶住淡淡奶香同果仁餘韻。最正係火腿嘅鹹香同醬汁完美融合,唔會死鹹,反而帶出多重層次。

食到最尾一啖,碟底都唔見多餘油份,證明師傅對醬汁比例掌控得幾咁精準。成個配搭簡單中見功力,將最基本嘅食材發揮到極致。以後諗起高質火腿意粉,個腦海一定會浮現呢碟令人念念不忘嘅完美演繹!
