今日嚟到一間具香港代表性的傳統茶樓,帶我回到童年時嘅回憶。除咗點心,佢地嘅懷舊菜式都好值得一試。家鄉煎釀鯪魚我媽好鍾意食魚,但又怕食到魚骨,呢款菜式一早將魚肉與骨分離,再把魚肉做成魚蓉,再重新釀入魚皮,保留完整魚形。每一口都啖啖肉,鮮味又彈牙,滿足埋口感。雞蛋焗魚腸知道呢個工序多,係屋企基本上不會自己整。魚腸處理得好,完全食唔到有腥味,帶有陳皮香,入口甘香滑溜,雞蛋焗到金黃色,厚身又不老。金錢雞原來不是雞。。。平時又係好少見,我覺得口感似叉燒,味道似雞肝。侍應話原來係將雞肝、肥肉、瘦肉串在一起,再用叉燒汁慢火燒制,呢款菜式即將失傳,侍應話有呢款菜式就要叫。西米布甸要提早預留。啖啖奶黃香,西米軟糯,內裏仲有小驚喜-栗蓉,又夠新鮮熱辣,難以抗拒。

雞蛋焗魚腸
知道呢個工序多,係屋企基本上不會自己整。魚腸處理得好,完全食唔到有腥味,帶有陳皮香,入口甘香滑溜,雞蛋焗到金黃色,厚身又不老。
