To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 此舖聽聞已久,只係訂座要一兩個月之遙,一直搵唔到機會,終於尋晚一家七口(六大一細)去晚餐,星期日晚七點去到都仲有幾多位,八點後先陸續坐滿。一眾侍應招呼十分周到,服務態度極好。坐低等餸嘅時候,略略睇過wine list,入面選紅白酒非常有心,每一支都各有特色,質素頗高,又有恆溫酒櫃安放之外,價錢只係等同街外零售加少少開瓶費!除非有特別原因,否則好應該開呢度嘅酒,而唔會自己拎支搖成粒鐘嘅失魂酒。以下係叫咗嘅:1. 子薑皮蛋 - 一流。子薑嫩、爽、甜/酸剛剛好。皮蛋糖心而無絲毫"羅"味,非常難得。2. 茶燻bb鴿 - 好到不得了,鴿肉嫩軟、入口又香又濃。3. 酥炸獅頭魚配意大利陳醋 - 酥炸而不油膩,魚肉仲好嫩滑,加陳醋一流。4. 山楂糖醋排骨 - 排骨有好新鮮肉味,而且好彈牙,用上極少粉先去炸,再撞上一個極薄、又香又甜嘅糖醋汁,結果亦係完美。連一向唔食有醋味嘅外父都讚不絕口!5. 3隻大蝦兩味:龍井蝦仁拼酥炸蝦頭 ($280) - 用上大虎蝦開邊,包括蝦頭。龍井蝦仁有一種講不出香味,而且彈牙又嫩滑。酥炸蝦頭香到不得了,真係成個蝦頭都可以食晒!6. 瑤柱鹹魚醬炒通菜 - 呢個係全晚最普通嘅一

6. 瑤柱鹹魚醬炒通菜 - 呢個係全晚最普通嘅一味,只係通菜天生同蝦醬比較夾,真係無辦法。

7. 豉油皇牛柳邊炒陳村粉 - 已經好多年無食到唔落鬆肉粉嘅炒牛肉!肉質依然嫩滑但不失咬口,非常難得!陳村粉亦都沾滿豉油,非常好味。之不過…

8. 中型雞油花雕蒸大花蟹配陳村粉 ($780) - 正到痴線!用上成半枝大枝裝靚花雕,一d苦澀味都無,雞油又香而不膩,1斤6両嘅花蟹好肉到連腳趾都滿晒,d陳村粉係上枱前至放入,吸味得黎唔會過火…無言!

9. 蛋白杏仁茶 - 做得好靚,蛋白好滑,但係欠甜

10. 薑汁雪糕 - 好似薑汁撞汁少甜,ok

11. 杞子雪糕 - 無食到,聽講怪怪地…

其實聽聞天哥重出江湖,一心做好中菜,已經對佢好大期望。

今次食過,何止滿足,直情超乎想像!就好似碟蒸蟹咁,街市一隻咁靚嘅花蟹都要差不多$200,個半支花雕又起碼$200,但係碟餸只係賣$780…完全惘顧"材料係收費1/3"嘅餐飲黃金定律!

好睇得出,佢除咗真係好有心要做好中菜之外,佢真係傻架!

為佢呢份心意,一定會回頭!
