To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 一年前,居於元朗的友人曾與我一起在這裡吃牛肉麵,發現這裡的牛肉麵與其他台式餐館所製作的與別不同。今天單人匹馬經過這裡,時間是十一時左右,店鋪仍未開門做生意,我決定先在附近逛逛,半小時後開鋪再過來。之後我回到食店時,見到店內已被食客佔了一半座位,真誇張!難怪上次午飯時間要等差不多一個小時才有位!其實經過這一年,牛肉麵的味道如何已經遺忘,這次再嚐,是想用文字記下味覺。牛肉有三大塊,軟腍得出奇!牛肉比豬軟骨更軟,這有賴牛肉中間呈半透明狀態的軟筋。平心而論,牛肉味不算突出,味道也不太濃郁,但份量和口感已經勝過大部份台灣麵店。麵條爽滑,同樣地麵條的麥香味一般,只以彈牙口感取勝。值得一提的是湯底,顏色啡濃但一點油花也沒有,帶自然的牛骨香味,甚是討喜。店家的餐牌寫牛肉湯底煮開後也要放上三天才可使用,看來所言非虛。要一碗香濃的牛肉麵,市面上有大量選擇,但這裡卻開創了自家獨特的風味。不喜歡的人會嫌它口味偏淡,而我則喜歡它的樸實無華。吃完麵後才十二點,門外已見人龍。常言道「有麝自然香」,真的所言非虛。
