To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 媽媽喜歡吃上海菜,經常獨自到「翡翠_ _小籠包」吃午餐,反正今天放工也是閒著,不如帶她到上海婆婆吃頓晚飯吧。這上海婆婆336位於尖沙咀isquare 6樓,這層全都是食肆,但光是這舖也不止二千呎,地方寬敞連座位也特別舒適。餐牌就只有這本,由前菜、小食、冷盤、雞鴨、海鮮類、甜品、飲品均應有盡有。為餐牌簡單拍了幾頁,其實我們也選了很耐,原因不是選無可選,只是款式多樣化,每款也有其獨特之處。最終決定選擇上海小籠包、京蔥手切牛肉包、冰鎮醉雞、炒鱔糊、乾煸四季豆和蜜汁火腿:乾煸四季豆幾乎是上海菜必吃的,要炒得好也不容易,把四季豆先炸後炒才能做出這乾脆而香口的質感,加入經爆炒而帶香濃醬料肉碎,整體變得更惹味。炒鱔糊亦是具標誌性的上海菜式,切條的鱔肉連大量韮黃和鹵汁爆炒,做成此菜,雖然賣相一般,碟不美,但無損味覺享受。鱔肉鮮嫩軟滑,而且味道香濃,鱔肉份量也蠻充足,不錯。上海小籠包當然不能不吃,新鮮蒸煮,皮不厚但也不薄啊,內裡包著熱騰騰的上湯,沾點醋更為鮮香。京蔥手切牛肉包其實就只是把生煎包內的餡料換成牛肉餡料,包煎得蠻香,牛肉餡也足料,唯缺乏肉汁和香口惹味等元素。次序有點亂,醉雞應是頭盤最先來,但卻

次序有點亂,醉雞應是頭盤最先來,但卻是第五道上枱的菜式。這冰鎮醉雞令我非常驚喜,超香濃的花雕酒醃得雞肉十分入味,最重要的是連冰也是酒來的,即使冰溶掉也不會變淡,以冰鎮方式令雞肉非常冰凍爽涼,質感亦極度幼滑,非常美味。

蜜汁火腿被濃郁的密汁緊緊包著,此菜的食法是把以鬆軟的中式包皮包著火腿、炸腐皮、青瓜一起食用,包可吸收多餘的蜜汁減低油膩、炸腐皮增加香脆感、青瓜的爽脆清新也很重要,整體蠻討好的。
